4. Our favorite way to zhoosh up mango is Mango Sago - a refreshing summer dessert

A tip: Use ripe champagne mangoes (the yellow ones, not these) if they’re accessible to you because they’re so much sweeter and tastier!

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬
3 ripe champagne mangoes
2-3 tbsp uncooked small tapioca pearls
1/4 cup sweetened condensed milk
1 cup (1/2 of 12oz can) evaporated milk
3/4 cup (1/2 of 13.5oz can) full fat unsweetened coconut milk

𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬

1. Bring a pot of at least 6 cups of water to boil. Add 2-3 tbsp of uncooked tapioca pearls and simmer until the pearls are almost fully translucent, or about 15 min. They should still have a tiny white dot in the middle.

2. While it’s boiling, slice 3 mangoes into cubes.

3. After 15 min, strain the tapioca pearls and rinse in cold water. Let sit in a bowl of water (this prevents them from hardening).

4. Put 2/3 of the mango cubes into a blender, and blend with sweetened condensed milk and evaporated milk. If you like it sweeter, add more condensed milk. If you want it thinner, add more evaporated milk. This emulsion should be a little on the sweeter side so that when we mix it with coconut milk, the flavors balance out.

5. Drain tapioca pearls and mix with coconut milk.

6. (Optional) Layer into glass cup or jar by adding in blended mango first, then topping with tapioca + coconut milk mixture. Or, just mix everything together.

7. Top with remaining mango cubes, mix, and enjoy!

10. There's a million and one ways to cook eggs but have you tried this baked eggs (AKA oeufs en cocotte)?

It's custardy, creamy, and a bougie step up from your everyday eggs

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
• 2 tablespoons softened butter, divided
• 4 large eggs
• 4 tablespoons heavy cream, divided
• 4 tablespoons goat cheese with herbs, divided
• flaky sea salt, to taste
• freshly cracked black pepper, to taste
• 2 tablespoons chili oil
• 2 tablespoons fresh chives, finely chopped
• 2 tablespoons sun-dried tomatoes, finely chopped
• toasted bread, for serving

𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬:

1. Preheat the oven to 350°F. Spread softened butter all over the bottoms and sides of two ramekins. Crack two eggs into each ramekin. Split the cream and herbed goat cheese in half and add into each ramekin.

2. Place the ramekins into a high-sided baking dish. Pour about 4 cups of boiling water into the baking dish, until it reaches about halfway up the sides of the ramekins. If your ramekins have lids, put them on. If not, cover the entire baking dish with foil.

3. Bake for 15-20 minutes, or until the eggs reach your desired level of doneness. If you want runny yolks, jiggle the ramekins a bit to check the doneness - they should look slightly set but still jiggly.

4. Once eggs are done, remove the lids from the ramekins and season with salt and pepper. Top with chili oil, chives, and sun-dried tomatoes. Dunk your toast into the eggs for a delicious, custardy egg breakfast!

2. In a large bowl pour pickle juice over sliced potatoes. Allow to marinate for 1 hour (overnight is ideal for most pickle flavor), flipping halfway through to ensure all potatoes soak some marinade.

3. Drain potatoes. Sprinkle dried dill and garlic powder over the potato slices and mix well.

4. In an air fryer ~400F, cook potato slices for 16-20min (Shake halfway through). Cook time may be air frier and potato size dependent so cook until crispy!
