💡 𝐁𝐂 𝐓𝐢𝐩: The extra step of putting them in the air fryer is the game changer if you want to get your potatoes to the perfect crisp consistency.
👨🍳 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
•5 Yukon gold potatoes.
•4 oz pancetta.
•1/4 onion (chopped).
•1 garlic clove (grated).
•1/4 cup pine nuts.
•2 cups spinach.
•Salt and pepper to taste.
•1 tbsp white balsamic.
•8 oz Saint Angel Triple Cream Brie.
•Chives.
•Honey.
•1 lemon (for the zest).
👨🍳 𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
1. boil your potatoes for 12-15 min. They won't be fully cooked but that's OK. Transfer to an ice bath.
2. Cut them in half and hollow them out. Add some olive oil, salt & pepper. Air fry at 400 for like 15 ish min. Check for the desired level of crispiness.
3.-Sautée the pancetta for 3-4 min or until slightly crispy. Add in the onion and sautée 7- 8, min on medium until slightly caramelized and the pancetta is crispy. Grate garlic halfway through.
4.- Add in the pine nuts, balsamic, and let it reduce, about 1 min. Add in spinach and turn the heat off. Season.
5.- Fill the potatoes and top with brie slices.
6.- Bake at 400 for 3-4 min until slightly melty. Add chives, black pepper, lemon zest & honey.

· Tortillas

👨🍳 𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
1. In a roasting dish, add oil and salt to 4 organic plum tomatoes, 2 jalapenos, and half an onion
2. Roast at 400* for 15 minutes
3. Heat some oil in a pan, and toast your dried chilis and 4 cloves of garlic for 5 minutes
4. Add everything to a blender with a large handful of cilantro, a clove of fresh garlic, and some fresh white onion & blend
5. Taste for seasoning
6. Thinly slice your red onions into disks
7. Add to a mason jar
8. Add to a pot – 1 cup of water, 2 cups of red wine vinegar, a big pinch of salt, sugar, dried oregano, chili flakes and peppercorns
9. Bring to a light boil then pour over your onions
10. In a pan, heat up a few tablespoons of oil and fry your corn tortillas for a few minutes
11. Flip tortillas, then crack an egg on each one
12. Add a couple tablespoons of water to the pan then cover with lid
13. Let egg whites cook for a few minutes then add salsa to surround the yolk
14. Let cook for another minute or two then remove
15. Top with diced steak, sliced avocado, pickled onions, crema, cilantro, cotija cheese, and lime

👨🍳 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
· Sourdough baguette
· Genoa Salami
· Hot Soppressata
· Provolone or fontina
· Mixed greens
𝐑𝐨𝐚𝐬𝐭𝐞𝐝 𝐂𝐢𝐩𝐨𝐥𝐢𝐧𝐢
· 1 pound cipolini onions (pearl onions work)
· 1/4 cup olive oil
· 1 tbsp fresh Thyme
· 1 tsp salt
· Fresh cracked black pepper
𝐒𝐩𝐫𝐞𝐚𝐝
· 200g roasted cipolini onions
· 100g sun dried tomatoes
· 3 tbsp extra virgin olive oil
· Salt to taste
𝐃𝐫𝐞𝐬𝐬𝐢𝐧𝐠
· 1 cup loosely packed fresh basil leaves
· 2 tbsp balsamic vinegar
· 1/2 cup extra-virgin olive oil
· 2 tsp oregano
· 1/2 lemon juiced
· Salt to taste
👨🍳 𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
1. Preheat oven to 400F.
2. Toss onions and thyme with olive oil and place in an oven safe dish. Sprinkle with sea salt and cracked black pepper to taste.
3. Roast in oven for about 45 minutes, turning every 15 minutes to brown sides evenly. Remove when tender and golden.
4. To a food processor add the roasted Cipolini, sun dried tomatoes, and oil. Pulse until a paste forms. Season to taste with salt.
5. Dressing: In the bowl of your mortar and pestle (or food processor) combine the basil, and oregano. Mash/pulse until coarsely chopped.
6. While the machine is running, drizzle in the olive oil, balsamic, lemon juice and salt. Season to taste with salt and freshly ground black pepper and blend until smooth.
7. To the bottom half of a toasted baguette, add the sundried tomato and onion spread. Lay down the salami and sopressata then top with cheese. Torch/broil to melt. Add the mixed greens and dressing. Cut in half and enjoy!

· 150g coconut whipping cream
· 1 tsp instant coffee powder
· 150g dark chocolate
· pinch of sea salt
👨🍳 𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
Heat the coconut cream in a saucepan. Pour the hot cream over the dark chocolate, add in vanilla, instant coffee powder and mix until smooth. Place plastic wrap over it so it is touching the surface of the ganache or place it directly into a disposable piping bag. Place ganache in the fridge until needed.
𝐂𝐨𝐨𝐤𝐢𝐞𝐬
1. In a large bowl add flour, powdered sugar, salt, and butter, mixing until combined. Add in milk and mix until the dough comes together. Wrap cookie dough with cling wrap and refrigerate for 20 mins.
2. Preheat oven to 170c. Roll dough out onto a piece of parchment paper and cut out the dough using a cookie cutter. Bake cookies for 10 mins. Allow cookies to cool completely.

👨🍳 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
· 6 tomatoes, quartered
· 1 onion, quartered
· 1 capsicum/ bell pepper, chopped
· 1 whole garlic bulb
· Chilli flakes (optional)
· 1/2-1 cup unsalted vegetable stock
· 1/2-1 cup cream
· 3-4 basil leaves
· Salt and pepper
· Slices of your favorite bread
· Mozzarella cheese
· Cheddar cheese
· Butter
👨🍳 𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
1. Chop off the top of your garlic bulb, leaving the cloves exposed. With your garlic, place all your other chopped vegetables into a large baking dish, drizzle generously with olive oil, chili flakes, salt, and pepper and bake at 200C for 50-60 mins until the vegetables are slightly charred and soft.
2. Optional: Use a blow torch and lightly torch your roasted vegetable to add extra char if you like your soup smokey. Careful not to burn it.
3. Transfer your vegetables into a pot or a blender with your stock, cream, and basil (adjust how much stock/ cream to add to how thick/thin you like your soup). With a stick blender or a normal blender, blend your soup until smooth. Salt and pepper to taste.
4. For your grilled cheese, cut up 2 slices of bread. You can use any cheese you want or have on hand. I used mozzarella for the stretch and cheddar for the bitey taste. Butter your bread and grate as much cheese as your heart can take. Grill in a pan over medium heat until golden brown and cheese melted. Serve with tomato soup.

· 340g ground pork
· 1/4 of a package of tofu
· 5-6 shiitake mushrooms (minced)
· 4 garlic cloves (minced)
· 1 large shallot (minced)
· 1 tsp fresh ginger (minced)
· 1/4 cup dangmyeon (sweet potato starch noodles) (cooked, drained and cut into pieces)
· 1 cup kimchi (chopped)
· 3/4 cup asian chives or green onion (chopped)
· 1 tsp salt
· 1 tsp sesame oil
· 1/2 tsp ground black pepper
𝐃𝐮𝐦𝐩𝐥𝐢𝐧𝐠𝐬:
· Large mandu wrappers (thawed in the refrigerator)
· A little flour (for dusting)
· A little water (for sticking)
𝐃𝐢𝐩𝐩𝐢𝐧𝐠 𝐬𝐚𝐮𝐜𝐞:
· 2 tbsp soy sauce
· 1 tbsp white vinegar
· 1/8 tsp gochugaru
· 1 small red chilli (chopped)
👨🍳 𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
1. Mix all the filling ingredients together in a large bowl with your hands or a wooden spoon. Cover and refrigerate for 30 mins to let the flavours incorporate together.
2. Remove filling mixture from the fridge and let it sit for 10 mins before wrapping.
3. Dust a little flour on your fingers and place a wrapper on your palm. Add 2-3 spoons of the filling to the center. Dab a little water along the edges of the wrapper. Seal tightly into a half-moon shape. Dab a bit more water on the two ends, and stick them together to create a round shape. PRESS TIGHTLY. Repeat this process for the rest.(You can also freeze the mandu in a plastic bag/container for use later)
4. Place mandu in a steamer and steam over high heat for 10-15 mins.
5. Mix the dipping sauce ingredients together. Dip mandu in the sauce and enjoy!
