👩‍🍳 𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬:
• Start by making the tangzhong: add milk and flour to a small pot. Heat up over medium heat while constantly stirring. Once the mixture has thickened, transfer to a bowl and cool to room temp before continuing with the main dough. ⁣⁣
• To make the main dough: add all the ingredients, except butter, into the bowl of your stand mixer. Knead on low speed for 10 minutes until the dough comes together. Add the butter. ⁣⁣⁣⁣⁣
• Knead for 10-20 more minutes at low-med until the dough has a smooth surface and pulls away from the sides of the bowl.⁣⁣⁣⁣⁣
• Place the dough in a lightly oiled bowl, and proof at around 78F/26C for 90 minutes or until doubled in size. ⁣⁣⁣⁣⁣

Meanwhile, make the garlic butter:⁣
• Preheat oven to 355F/180C. ⁣
• Chop off the top of a garlic head (leaving the cloves exposed) and drizzle with oil, flaky salt, and pepper. ⁣
• Wrap the head of garlic in aluminum foil.⁣
• Bake for 45-60 minutes. Cool to room temp. ⁣
•In a bowl, add softened butter, chopped herbs, roasted garlic, and salt. Mix with a fork until smooth. ⁣
⁣⁣⁣⁣⁣
• Once doubled, roll out the dough into a 14x14-inch square. ⁣
• Spread garlic butter on top and add grated mozzarella. ⁣
• Use a pizza cutter to cut the dough into 12 pieces. ⁣
• Arrange the dough pieces in a 9x5-inch bread tin as demonstrated in this video.⁣
• Cover, and proof for 30-45 minutes at around 78F/26C, until the dough is nice and puffy. ⁣
• Bake at 355F/180C for 35-40 minutes. ⁣
• Serve warm

For the chocolate avocado mousse, it’s made with 2 ripe avocados, 1/4 cup plain yogurt, 1/4 cup cacao powder, 1/2 tsp pure vanilla extract, honey and salt to taste (I used about 1/4 cup honey + 1 tsp sea salt) adjust as needed for your preferred sweetness

You can eat immediately or place in an airtight container in the fridge for a healthier sweet treat with whipped cream or on toast like I did! Using Siggi’s yogurt helps make the mousse super creamy almost like a pudding, but packed with protein and lower in sugar — it’s absolutely incredible!

For the strawberries, cut at the base of the stem diagonally bit ways to remove then slice longways to get the appearance of heart shaped strawberries

Finish with chia seeds or sprinkles and a drizzle of honey which makes for the perfect toast!

1. Start by boiling the Indomie ramen, drain, then transfer to a pan. Add all of the seasonings and cook until it reaches a nice “fried” texture.

2. Dip two sheets of rice paper in lukewarm water and wait until it softens enough to fold. Make sure to work quickly because the rice paper will get too sticky and hard to handle if left to sit too long. Add a handful of shredded mozzarella cheese and ramen on top, then fold each side into a rectangle. Try not to overstuff it because you don’t want the cheese to seep out. 1 packet makes about 4 wraps.

3. Heat with a drizzle of oil on the noodle side first, then flip & cook til the cheese is melted. Enjoy!!

This appetizer is SO quick & easy to make and looks insanely impressive. This is the perfect side dish to make if you're looking to explore something new.

Here's how you can make your own at home!

👨‍🍳 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
· sushi-grade ahi tuna
· sesame seeds (white + black)
· sesame oil
· cucumbers
· mayo
· wasabi (fresh, powder or paste)
· rice wine vinegar
· salt, sugar, and chives to garnish

👨‍🍳 𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
1. Slice your cucumbers in rounds. I wanted mine to be a little thicker, but you can cut them to your desired thickness. Set aside.

2. Make your wasabi mayo. Mix together mayo, wasabi, rice wine vinegar, salt, and sugar until all combined. Set aside.

3. Next, take your ahi tuna and add to a plate with sesame oil, and then coat it in a plate of ​your assorted ​sesame seeds. Sear in a skillet or on a grill 20-30 seconds on each side until the outsides of the ahi are a lighter brown color while keeping the ahi medium-rare inside. Remove from the skillet, cool, and slice​ to your desired thickness for the bites.​

4. Assemble! Take your cucumbers, add on your sliced seared ahi tuna, top with a dollop of wasabi mayo, and finish with chives and edible flowers. Serve!

👨‍🍳 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
· Sushi rice 436g / 2 cups
· Water 480g / 2 cups
· Rice seasoning
· Salmon 500g - finely diced
· Mayonaise 3 tbsp (preferably kewpie)
· Sriracha 2 tbsp (personal preference on how spicy I want it)
· Salt (to taste)

👨‍🍳 𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
1. Start by rinsing the sushi rice in water. Repeat 3 or 4 times until the water runs clear. This helps remove any excess starch on the outside of the rice.
2. Once soaked, cook the rice in a rice cooker, or if using a pan (with lid on) bring to a simmer then reduce heat to medium-low and leave to cook for roughly 15 minutes.
3. When the rice has cooked, season with the rice seasoning and gently mix. Use a cutting motion with a spatula to mix so you don't break the grains of rice (breaking would make the rice too sticky).
4. Tip the rice out onto a cling film-lined tray, flatten the surface (spreading rice to the sides, not pushing down), and refrigerate for a few hours until cooled.
5. Meanwhile, mix the salmon, mayonnaise, sriracha, and salt to taste in a bowl.
6. Once cooled, tip the rice out of the tray and slice it into bite-size pieces. Heat some oil in a pan and fry for 4-5 minutes until golden and crispy. Season with salt once removed from oil and top with the spicy salmon. Garnish with sesame seeds and a grating of lime zest (the tang of the zest goes well with the rich flavors from the rice and salmon). Enjoy!

• 4 zucchinis
• olive oil (or any oil)
• 1/2 cup ricotta
• 1 small egg (optional)
• 1/4 cup Parmigiano
• basil
• pinch of salt & pepper
• marinara sauce (1 cup)
• 1/3 cup mozzarella

👩‍🍳 𝗣𝗿𝗼𝗰𝗲𝗱𝘂𝗿𝗲:
1. Pre-heat oven to 400F. Wash the zucchini, pat dry, and cut the ends. Cut each one into 4 slices. The two end pieces we also cut from the back of each one so that they lay flat and are easy to roll.
2. Set them on a baking sheet and drizzle each side with olive oil plus a dash of salt. Bake until they are soft which will take you 15-20 min.
3. Take them out and let them cool a touch. In a separate bowl add the ricotta, parm, egg, dash of salt and basil, and mix. Take a small pan and add marinara sauce to cover the bottom.
4. Take each zucchini with the wider side facing you and add about a teaspoon of ricotta to each one and roll them up. Add them all to your baking dish, top with more marinara and some mozzarella.
5. Bake at 400F for 20 minutes or until nice and melted. ENJOY

· 400g (whole wheat) pasta of choice
· 4 red peppers
· 1 onion
· 1 small garlic bulb (or 4 cloves)
· 80g cashews
· 1 cup (240 ml) plant milk
· 35g sun-dried tomatoes
· juice of half a lemon
· 3 tbsp nutritional yeast
· 1 tsp chili flakes
· salt & pepper
· fresh basil
· toasted cashews

👨‍🍳 𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
1. Soak cashews and sundried tomatoes in hot water.
2. Cut peppers, remove the seeds then place them on a baking tray together with the onion and garlic. Drizzle with a little bit of olive oil and roast for 20-30 minutes until everything starts to brown.
3. Remove the peel of the garlic, then add the roasted veggies to a blender together with the rest of the ingredients. Blend until completely smooth.
4. Cook the pasta. Heat sauce in a pan and add the pasta together with some pasta water. Add fresh basil and freshly cracked black pepper, stir to combine.
5. Serve with toasted cashews, vegan parmesan, or however you prefer.

👨‍🍳 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
• 12 wonton wrappers.
• 14-16 sea scallops (about 1 lb).
• 1/4 cup Japanese mayo.
• 2-3 tbsp sriracha.
• 2 tbsp tamari.
• 1 tsp sesame oil.
• 1/2 tsp cane sugar.
• 2-3 tbsp scallions.
• 1/2 serrano pepper (Chopped).
• 1 avocado (mashed with a drizzle of lemon, salt, and pepper).

Spicy Topping Sauce:
• 1 orange.
• 1/2 lemon.
• 1 serrano (sliced).
• 1 tsp rice vinegar.
• 4 tbsp scallions.

👨‍🍳 𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
1. Add avocado oil spray to a muffin tin. Press the wonton wrappers inside to form the cups. Press it into the sides of the tin so they hold their shape. Spray the wonton wrappers with avocado oil. Bake at 400 for 7-8 min. Watch very close so they don't burn.
2. Pat dry your scallops, salt/pepper, and sear on high for 30 sec per side. You can cook them longer but I wanted them just seared.
3. Mix the Japanese mayo, sriracha, tamari, sesame oil, and sugar.
4. Add in scallops, scallops, and chopped serranos.
5. Mix everything for the topping sauce.
6. Add the mashed avocado to the bottom of the wonton cup, top it with the spicy scallops, black and white sesame seeds.
7. Serve with the sauce.

💡 Pro Tip: sear the scallops on HIGH on a preheated skillet for 30-60 sec max.

· 65 g cream cheese, full fat ⁣⁣⁣⁣

· 40 g unsalted butter
⁣⁣· 180 g mozzarella or string cheese⁣⁣⁣⁣
· 1 egg for egg wash⁣⁣⁣⁣

2. Add cubed, softened butter, one cube at a time. Once all the butter is added, mix for 10-20 minutes until the dough passes the windowpane test. ⁣⁣⁣⁣
3. Transfer to a lightly oiled bowl—proof at 78F/26C for about 90 minutes or until doubled in size. ⁣⁣⁣⁣
4. Once doubled, punch down the dough to deflate. Divide into 9 equal pieces and roll into rounds. ⁣⁣⁣⁣
5. Use a rolling pin to flatten the dough rounds. ⁣⁣⁣⁣
6. Place 20g cheese in the middle and wrap the dough around it to seal. Roll into even balls. ⁣⁣⁣⁣

1. Preheat oven to 350F
2. Add roasted garlic, Nduja, butter, parsley, salt and cheese to a large bowl
3. Use a fork to mash all of the ingredients together to create a delicious paste
4. Spread a thick layer of spicy garlic paste all over the 2 halves of the bread.
5. Place the bread on a baking dish and toast for 10-15 minutes
6. Let it cool down, top with salad, and enjoy!

👨‍🍳 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬 & 𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
• Preheat oven 350F
• 8 oz Cream Cheese, softened
• 1/4 Cup Sour cream
• 1/4 Cup Mayonnaise
• 2 Tsp Minced Garlic
• 2/3 Cup Shredded Parmesan Reggiano Cheese
• 1/2 Cup Shredded Mozzarella Cheese
• 1/2 Cup Sharp White Cheddar
• 1.5 Tsp Black Pepper, or to taste
• 1/2 Tsp Garlic Powder, or to taste
• 1 (13.75 oz) can Quartered Artichoke Heart’s , drain liquid from can
• 6 oz. Frozen Spinach, thawed, squeezed to drain excess liquid
• Parmesan & White Cheddar to sprinkle on top
• Smoked Paprika to sprinkle on top
• Bake for 25-30 minutes

👨‍🍳 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
· 300g brown swiss mushrooms sliced
· Sourdough bread
· 1 white onion diced
· 3 garlic cloves crushed
· 1 tablespoon olive oil
· 100g Westgold unsalted butter
· Salt and pepper
· 50g cheddar cheese grated
· Fresh thyme
· 30g parmesan cheese grated
