𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
• 1/3 cup / 80ml olive oil
• 3 garlic cloves, minced
• Hand full of parsley, roughly chopped
• 1/4 tsp of Cajun spices
• 1/4 tsp of paprika
• 1 tsp of black pepper
• 1 pinch of salt
• 1 ¼ cups / 300ml Greek yogurt
𝗣𝗿𝗼𝗰𝗲𝗱𝘂𝗿𝗲:
• Heat oil in a small saucepan over low/medium heat until oil reaches 160 degrees (about 3 minutes). Make sure oil does not get hot enough to smoke.
• Meanwhile combine garlic, parsley, and spices into a heat-proof container.
• Once oil is hot enough, pout into a container with the spices and let infuse for 5 minutes
• To plate, swirl the yogurt on a plate and spoon over the garlic oil mix.
Serve with bread.

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
2 1/2 cups flour
3 whole eggs
3 eggs yolks
1/2 tsp lemon juice
1/2 tsp salt
Sauce:
4 tbsp olive oil
6-7 medium cloves garlic
3 mini red sweet peppers
1 Ibs cherry tomatoes
Fresh basil leaves
Salt and black pepper
1/2 cup boiling water
1/2 cup parmesan cheese
𝗣𝗿𝗼𝗰𝗲𝗱𝘂𝗿𝗲:
1. Place the flour on a work surface, add salt and sugar and make a well. Add the eggs and lemon juice to the well.
2. Using a fork, pierce the egg yolks and whisk.
3. Slowly move more flour from the sides to the well by moving your fork around the well and rolling up the dough as in the IG reel.
4. Drizzle the oil on the surface of the dough and keep kneading for 5-6 min until it is elastic and no longer sticky. If the dough seems too dry you can add 1-2 tbsp water.
5. Wrap the dough with plastic wrap and let it rest for 20-30 min at room temp.
Slice the dough into 4-6 equal pieces and run the dough through a pasta roller.
6. On a pasta drying rack, dry out the ready pasta sheets (or hang them over the back of a clean chair) for 5-7 min so that they don’t stick or can be cut easily!
7. Sprinkle the sheets with semolina flour. Using a pasta cutter attachment or chitarra cut the sheets to your ideal shape, sprinkle with a bit of extra semolina flour and let the pasta rest for about 10-15 min to dry out slightly.
8. Meanwhile, preheat the oven to 400F.
9. In a medium tray or iron-cast, place the garlic cloves, peppers, tomatoes, and fresh basil leaves. Add olive oil, salt, and red pepper. Mix to combine.
10. Roast it until the tomatoes are soft.
11. Bring a large pot of salted water to boil.
12. Cook pasta until al dente about 6-7 min. Drain it, reserving 1 cup of the cooking water.
13. Using a fork mash the roasted vegetables, or blend them using a food processor.
Transfer the sauce to a pan and add boiling water and parmesan. Add the drained pasta to the sauce. Toss gently to combine.
14. Transfer to a bowl and serve with burrata cheese and fresh basil.

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
• 2 cups pastry flour
• ⅓ cups almond flour
• ¼ cup icing sugar
• ½ tsp pink salt
• ½ cup plant-based butter, cold
• 1 egg
• 1 tsp beetroot powder (for the light pink hue)
• 2 tsp beetroot powder (for the dark pink hue)
𝗣𝗿𝗼𝗰𝗲𝗱𝘂𝗿𝗲:
1. Divide all the cookie dough ingredients into equal halves.
2. Mix first dry batch with 1 tsp of beetroot powder. And the other batch with 2 tsp of beetroot powder.
3. Chuck batch 1 into the food processor. Add butter and pulse until the mixture reaches a sand-like texture.
4. Add half of the egg into the mixture. Continue pulsing till the breadcrumbs turn into a doughy ball.
5. Repeat steps 3 and 4 with Batch 2 (aka the dark pink dough).
6. Mold your cookie doughs into balls. Plastic wrap each batch and refrigerate. (15 mins)
7. Roll each cookie dough between parchment paper for extra smoothness.
8. Cut the rolled-out dough into 4x4” squares. Cut the colored discs into strips (thickness= ¼-½”). Do not cut all the way from one end to another, but rather start ¼” below the top.
9. Place the dark pink strips on one side and the light pink ones on the other, with the strips pointing upwards. Create a two-toned lattice by laying the dark pink strip over the light pink square.
10. Use a heart-shaped cookie cutter to mold your criss-cross discs. Pull odd the extra dough from the sides and continue creating heart-shaped cookies.
11. Pop them in the freezer. (15 mins)
12. Preheat the oven to 160°C.
13. Bake (20-25 mins)

• 1-2 tsp purple sweet potato powder for color

𝗣𝗿𝗼𝗰𝗲𝗱𝘂𝗿𝗲:
1. In a stand mixer add soften butter and powdered sugar, whisk until pale and fluffy, about for 1-2 mins. Add in coconut cream, vanilla and continue whisking 1 min. Add in flour, cornstarch. Beat on low until just combined.
2. Fill the dough into the piping bag and pipe a swirl or line on the prepared baking sheet. Transfer piped cookies to the freezer and let chill for 30mins.
3. Bake chilled cookies in 170c Preheated oven for 15-18 mins. Allow cookies to cool completely.
4. Combine melted chocolate, sweet potato powder and mix well. Dip cookies into the melted chocolate. Place in fridge to set, then ENJOY!

100g dairy-free butter

Chocolate ganache
100g dark chocolate
1/4 cup coconut milk
𝗣𝗿𝗼𝗰𝗲𝗱𝘂𝗿𝗲:
Ganache
- Heat the coconut milk in a saucepan. Pour the hot cream over the dark chocolate and mix until smooth. Place plastic wrap over it so it is touching the surface of the ganache or place it directly into a disposable piping bag. Place ganache in the fridge until needed.
Cookie
- In a stand mixer, cream the butter, vanilla, and sugar together. Add in flour, salt and mix into a dough. Cover dough with plastic wrap and chill in the fridge for 15 minutes.
Preheat oven to 170c. Roll dough out onto a piece of parchment paper and cut out the dough using a cookie cutter. Bake cookies for 10 mins or until golden brown at the edges. Allow cookies to cool completely.
Assemble, pop chocolate ganache into each cookie. Add salted caramel and sandwich together. Place cookies into the freezer for 15 mins. Take the cookie and dip it into the melted chocolate. Put in the refrigerator until set and ready to serve.

👨🍳 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
• 3 flank steaks
• 1 white onion (thickly sliced)
• 6 tomatillos (cut in half)
• 4-6 Jalapeños (cut in half lengthwise)
• 5 cloves of garlic
• 1 bunch of cilantro
• 1 avocado
• 3 limes
• olive oil
• 1 cup Mexican spice mix
• salt
👨🍳 𝗣𝗿𝗼𝗰𝗲𝗱𝘂𝗿𝗲:
1. Using paper towel, pat dry flank steaks. With a sharp knife, finely score the flank steak. Rub the Mexican spice mix and salt on both sides and leave in the fridge uncovered for at least 6 hours. On a hot grill, sear 2-3 minutes on each side. Set aside on a tray and rest for 8 minutes. Slice the flank steaks in thin slices against the grain and slice again in small pieces. Add the zest and the juice of one lime, season with salt and mexican spices if necessary. Keep in a warm place.
2. Place onions, tomatillos and jalapeños on a tray. Drizzle with olive oil and season with salt. Grill 2-3 minutes on both sides and transfer to a blender or a food processor. Add garlic, cilantro, avocado, lime juice, olive oil, Mexican spice mix, salt, ice cubes and blend until smooth. Transfer to a bowl.
3. Heat tortillas on a grill or in a pan until nice and warm. Work by batches and keep tortillas warm by stacking them in a clean kitchen towel.
4. Assemble tacos starting with flank steak, salsa verde and garnish with chopped onions and cilantro.

If you'd like to try out this satisfying mochi recipe, here is all you need to know to make your own at home.
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
• kabocha
• potato starch
• butter
• cheese
1. Cut kabocha into 1 1/2 inch chunks. Cover and microwave for 3 minutes on high, until soft. Once cooled, cut off the skin.
2. Mash with a fork. Start with 4 tbsp of potato starch and mix together until well combined. Depending on the moisture content of the kabocha, you may need to add up to 8 tbsp of potato starch. Adding more potato starch will yield a firmer chewy mochi, whereas adding in less will make for a softer mochi.
3. Divide the mixture into 4-5 amounts. Oil your hands and then place one portion of the kabocha mash in your hands. Flatten and stuff with cheese (or another filling of choice). You can also just roll them into a ball and flatten them into a small pancake.
4. Heat vegan butter over medium heat. Once melted, add in the mochi and pan fry each side until golden brown (about 1 1/2-2 minutes per side). If the edges look uncooked, cover and reduce heat to low. Cook for 1-2 minutes or until edges are cooked.

2 Heads Cauliflower (Cut Into Small/Medium Florets)
4 Garlic Cloves (Skin On)
2 Shallots (Cut In 1/2)
30 ml Olive Oil
3 Thyme Sprigs
Sea Salt & Black Pepper
1 litre Chicken Stock (1-1.5 Litres)
1 Squeeze Lemon Juice
👩🍳 𝗣𝗿𝗼𝗰𝗲𝗱𝘂𝗿𝗲:
- In a large roasting pan add cauliflower, shallots, garlic and thyme
- Season with salt and pepper and drizzle with olive oil
- Roast at 190℃ for 30-35 minutes
- Remove from the oven
- Squeeze out roasted garlic into a medium pot and add remaining pan ingredients
- Add 1 of hot chicken stock to the pot, simmer for 10-15 mins until cauliflower is soft.
- Puree using a hand blender, keep blending to get a really velvety soup.
- Add lemon juice and mix to combine
- Ladle into serving bowl and garnish with fresh thyme, a drizzle of truffle oil and fresh ground black pepper, then enjoy!
