2. These tarts aren't just visually enthralling, they're delicious too
A tart is a baked dish consisting of a filling over a pastry base with an open top. The pastry is usually shortcrust pastry; the filling may be sweet or savory, though modern tarts are usually fruit-based, sometimes with custard. Originating in France, this dessert, which is named for the Hôtel Tatin in Lamotte-Beuvron that first served it.
💡 BC Trivia: According to legend, the tart was invented by the unmarried French sisters who ran the hotel in the 1880s, so in France, the actual name of the tart is "𝘛𝘢𝘳𝘵𝘦 𝘥𝘦𝘴 𝘋𝘦𝘮𝘰𝘪𝘴𝘦𝘭𝘭𝘦𝘴 𝘛𝘢𝘵𝘪𝘯" (the tart of two unmarried women named Tatin.) It actually didn't become famous until a Parisian restaurant called Maxim's put it on the menu. Nowadays, though the apple tart is still the version served in France (with tons of caramel to hold it together). The tarte Tatin can be made with any fruit, but to be strictly traditional, it must be served warm with cream on the side

- Cocoa powder (10g)
- Soda (1/2 tsp.)

2. Spread the dough out on a baking tray - about 35-40 grams of raw dough per half (tip: it is much more convenient to work with raw hands).
3. Place cookies in a preheated 180°C oven for about 10-15 minutes. Bake until they are slightly crumbly and the tops are crumbly. Afterwards, give the cookies time to cool.
4. For the cream, whip the cream and powder until the mass increases in volume, then add the cottage cheese. Transfer the cream to a piping bag and put in the fridge for half an hour.
5. Match each half with a second one of the right size, smear the first with the cream and cover with the second one. In addition to the cream, you can add something else to the filling. For example, nuts, chocolate paste, berries. So the choice is yours.
