1. At first glance, it may look like pasta these are potato stacks

Made from close-to-paper thin potato slices, these stacks are crispy, with almost like a puff-pastry bite to them. Curious about how to make them? We simplified the recipe just for you!

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
Potatoes
Cooking oil
Salt
Pepper
Garlic Parmesan topping (optional)

𝗥𝗲𝗰𝗶𝗽𝗲:
1. Peel your potatoes.
2. Slice them at your preferred thickness using a kitchen mandoline.
3. Toss them gently but thoroughly in a bowl with oil or your chosen fat.
4. Arrange them on a parchment-lined pan and bake at 250°F oven for three hours.
5. Once done baking, let them cool overnight in the fridge and put cans on them to compress the layers.
6. Take out the potato block and trim the edges.
7. Slice into planks and cook at 325°F oil until golden brown.
8. Drain excess oil on a paper towel after frying.
9. Season with salt and pepper or have a garlic parmesan topping or dip.

2. How about a delicious steaming bowl of hot and sour soup

This tangy, yet savory dish is perfect when it gets a little chilly!

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
- 80 g lean pork strips marinated in water, oil and cornstarch
- 100 gsoft or medium firm tofu, julienned
- 1 egg
- 5 pieces dried shiitake mushroom
- 5 g dried wood ear mushroom
- 20 strands dried lily buds
- 40 g carrots
- 50 g bamboo shoots
- 1000 ml unsalted chicken/vegetable stock
- 4 tablespoon cornstarch
- 3 tablespoon black rice vinegar
- 1 tablespoon light soy sauce
- ½ teaspoon ground white pepper
- ½ teaspoon sesame oil
- coriander or scallions, finely chopped

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀:
1. Rehydrate the dried ingredients. Soak dried shiitake mushroom, wood ear mushroom and lily buds in plenty of warm water until they enlarge and become soft. It takes at least 1 hour (soak overnight if you plan ahead).
2. Slice the mushrooms into thin strips. Tear lily buds lengthways into thinner strands.
3. Marinate the pork. Cut pork, against its grain, into thin strips. Mix with cornstarch and water, then coat with oil. Set aside.
4. Slice carrot, bamboo shoots and tofu into thin strips. Lightly beat the egg.
5. In a wok or large pot, bring the stock (or water) to a full boil. Add the marinated pork. Quickly stir with chopsticks to separate the strands. Use a spoon to skim off the froth appearing on the surface.
6. Add shiitake mushroom, wood ear, lily buds, carrot, bamboo shoots. Leave to cook for 2 mins or so.
7. Turn down the heat and keep the soup at a gentle simmer. Mix cornstarch and water very well then slowly pour the slurry into the soup. Stir with a spoon/ladle.
8. Once the soup becomes thick, gently slide in the tofu. Slowly pour in the egg in a circular motion.
9. When the soup starts bubbling again, turn off the heat. Add black rice vinegar, soy sauce, white pepper and sesame oil.
10. Give everything a gentle stir. Garnish with coriander or scallions. Serve warm

This perfect to end a savory meal! Here's a recipe you can save when you want to try it out for yourself:

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
2 cups plain flour
¾ cup cane sugar
3 tsp baking powder
Pinch of any good-quality salt
(𝘁𝗼 𝗯𝗹𝗲𝗻𝗱)
1 cup pistachios
1 medium GreenSkin® GMax™ Avocado, flesh only (~250g)
⅔ cup plant-based milk
⅓ cup sunflower oil
¼ cup lemon zest and juice
1 tsp vanilla extract
1 cup icing sugar
1-2 tbsp lemon juice
1 tbsp vegan butter or margarine, optional (for a firmer icing)

𝗣𝗿𝗼𝗰𝗲𝗱𝘂𝗿𝗲:
1. Preheat oven to 180°C. Line a 20 cm (or larger) loaf tin with baking paper.
2. Mix all dry ingredients in a large bowl until combined. Set aside.
3. Add the pistachios to a food processor and blitz until it forms fine crumbs. Add the avocado, milk, oil, lemon juice/zest, and vanilla. Blitz until there are no more chunks of avocado.
4. Add the pistachio mixture to the bowl of flour and mix until combined. The batter will be quite thick.
5. Scoop the cake batter into your loaf tin.
6. Bake the cake for 60-70 minutes OR until a skewer can be inserted into the middle and there is no wet batter on it. The cake is very moist and there might be some crumbs on your skewer which is fine.
7. Allow the cake to rest in the tin for 10 minutes then cool on a wire rack.
8. Icing: Add all icing ingredients to a bowl and mix until combined. Add more sugar for a firmer frosting or more lemon juice for a runnier frosting.
9. When the cake has fully cooled, drizzle the icing on top of the cake. Sprinkle with pistachios if desired
