1 courgette
110g cooked chickpeas
1 small red onion, diced
1 garlic clove, grated
1 knob of ginger, grated
7 mint leaves, finely chopped
1 small bunch of parsley, finely chopped.
1 tsp garam masala
1/2 tsp chili powder
1/2 tsp turmeric
2 tsp nigella seeds
1 egg (Or 3 tbsp Aquafaba)
salt
1 lemon
3 tbsp Chickpea flour
labneh
olive oil
sumac onions
aleppo pepper

𝗡𝗢𝗧𝗘𝗦
1. Grate, salt and squeeze the excess water out of the courgette. Add to a bowl with the diced onion, chickpeas, grated ginger and garlic, chopped herbs and spices.
2. Add the egg and mix thoroughly. Season with salt, add a squeeze of lemon juice and mix in the chickpea flour.
3. Using two spoons, shape the mix into fritters and shallow fry for 5-6 minutes until golden brown on all sides and cooked through.
4. Serve with a big spoon of labneh, sumac pickled onions and plenty of olive oil

𝗕𝗜𝗥𝗥𝗜𝗔 𝗧𝗔𝗖𝗢𝗦
𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦:
4 lb beef cheeks
4 dried ancho chiles
2 dried guajillo chiles
8 chile de arbol
1 tsp pepper
1 tsp dried thyme
3 bay leaves
1 tsp ground cumin
1/2 cinnamon stick
5 cloves garlic
1 onion
1 ½ tbsp salt
3 cans beer
32 oz beef broth

𝗡𝗢𝗧𝗘𝗦:
1. Remove the seeds and veins from the chiles and simmer for 10 minutes.
2. Remove chiles and add all of your ingredients except the meat to a blender to make the sauce. Add the beer and broth.
3. Season beef cheeks with salt and some BBQ rub. Sear the meat for 90 seconds on each side then add to your pressure cooker. Pour the sauce all over and cook on charcoal or stove for an hour and a half.
4. Remove the meat from the sauce and pull the meat apart by hand. You can use a slow cooker but cook time will be about 4-5 hours.
5. Dip the tortilla into the sauce and fry on a pan with vegetable oil, quickly add cheese, meat, and some chopped red onion with fresh cilantro. Spice level is medium, adjust to taste. Enjoy

2 packs brie
16oz strawberries, sliced or whole
2 tbsp honey
1.5 tbsp white balsamic
black pepper
1 cup walnuts
fresh basil or mint to top

𝗡𝗢𝗧𝗘𝗦
1. Preheat oven to 400F. Add strawberries to a baking dish. Combine honey, white balsamic and black pepper and mix.
2. Bake for 5 minutes. Slice the top off the brie and take the strawberries out of the oven after 5 minutes and add the cheese to the center of the baking dish.
3. Sprinkle the walnuts to the dish before putting it back into the oven. Bake for another 20-25 minutes (or when cheese appears melted and bubbly).
4. Dip a cracker or crostini into the cheese or add the cheese to a piece of toasted bread and top with strawberries and basil/mint for a “toast." Enjoy!
