𝗦𝗛𝗔𝗟𝗟𝗢𝗧 𝗧𝗔𝗥𝗧𝗘 𝗧𝗔𝗧𝗜𝗡
𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦
350g shallots, peeled and halved
4 tbsp sugar
4 tbsp sherry vinegar
2 tbsp butter
2 sprigs of thyme
1 disc of rolled puff pastry
olive oil
salt
black pepper
chopped chives
parmesan, shaved/grated

𝗡𝗢𝗧𝗘𝗦
1. Preheat oven to 200°C or 392°F. In an oven proof pan, caramelize the shallots in the olive oil over a medium-high heat. Once coloured, remove from the pan.
2. Add the sugar and cook over a medium heat to a deep, amber caramel. Deglaze with the sherry vinegar and stir in the butter.
3. Add the shallots back to the pan, cut side down. Add the thyme and season with salt and black pepper. Cook everything together over a medium heat for 5 minutes. 4. Cover the shallots and caramel with the disc of pastry and tuck the sides in with a spoon. Use a knife to stab a few holes in the top and then transfer to the oven for 25-30 minutes or until puffed and golden.
5. Allow to cool for 2-3 minutes and then carefully turn the tart out onto a plate. Top with chopped chives and parmesan. Great served with a green salad on the side

650 grams water
400 grams base broth (adjust to preference)
15 grams kombu (dried kelp)
4 dried shiitake mushrooms
1 teaspoon mushroom bouillon
1/4 teaspoon MSG (optional)
1 tablespoon vegetable oil
1 teaspoon toasted sesame oil
2 tablespoons gochugaru (red pepper flakes)
2 cloves garlic, minced
1/4 yellow onion, roughly chopped
1 scallion, finely chopped
1/2 cup vegan kimchi, chopped
1 tablespoon light soy sauce
1 tube (350 g) extra-soft silken tofu

1. The amount of base broth determines the consistency of the stew. If you prefer to have a thicker consistency, add less base broth.
2. The rice flour slurry in the kimchi brine also helps thicken the stew. Adding an additional slurry of 2 tablespoons of cornstarch and 2 tablespoons of water can also help thicken your broth

1. Add oil to your pan and sear meat over high heat for 1 min.
2. Add butter, rosemary, and garlic. Melt for 2-3 mins. Baste the meat with the sauce, set aside.
3. On the same pan, add the white wine and cook the mushrooms for at least 8 mins. Season to taste and combine with the steak. Enjoy

1/2 cup blanched almond flour
1/2 tsp baking soda
1/2 tsp sea salt
1/2 cup chopped dark chocolate
1 tsp flakey sea salt (optional)

𝗡𝗢𝗧𝗘𝗦
1. Preheat your oven to 350ºF and line a cookie sheet with parchment paper.
2. Add the butter to a small saucepan over medium heat. Simmer until the butter turns brown (this might take around 10 minutes), remove from heat and let cool.
3. Pour the coconut unto a pan over medium heat and cook, stirring constantly, until it’s all browned. Keep stirring then remove from heat.
4. Combine the cooled browned butter with the coconut sugar, egg, and vanilla in a large bowl. Whisk to combine. Add in the coconut, almond flour, baking soda, and sea salt and stir just until mixed. Stir in the chocolate chunks.
5. Scoop the dough into 12 cookies using a cookie scoop. Flatten out halfway with your palm.
6. Bake for about 8-10 minutes, or until golden-brown and crispy around the edges. Cool for about a minute, then sprinkle with flakey salt. Enjoy
