64 @lotusbiscoffus cookies⁣⁣ (finely crushed - about 2 packs)⁣⁣
10 tbsp butter (melted)⁣⁣
5 cups heavy cream⁣⁣
2 tbsp vanilla extract⁣⁣
1/2 can condensed milk⁣⁣
4 tbsp cookie butter
⁣⁣⁣⁣
𝗡𝗢𝗧𝗘𝗦:
1. Mix your cookie crumbs with butter until well combined⁣⁣. Separate the mix in half⁣⁣.

2. Using the bottom of a 9-inch cake pan, press half of your cookie mix until compact and freeze! (this will make your top crust)⁣⁣. Repeat the process now on a 9-inch springform cake pan (this will be your bottom crust and you’ll add the ice cream mix right on top⁣⁣.

3. Prepare the ice cream by whipping together your heavy cream, cookie butter, condensed milk and vanilla extract (make sure it’s extra creamy!)⁣ Add the mix to your cake pan and top with your previously frozen crust⁣⁣. Freeze overnight, serve and enjoy

6 lobster tails
5 tablespoons of butter
cajun spice blend
1/4 cup garlic cloves
200ml coconut water or coconut soda
salt to taste
chives (optional)
1 tablespoon paprika
1 tablespoon cajun seasoning
1/2 tablespoon lemon pepper
1/2 tablespoon old bay
2 tablespoon sugar
1/2 teaspoon cayenne chili powder
1/8 teaspoon msg (optional)

𝗡𝗢𝗧𝗘𝗦
1. For the blended garlic coconut water, combine 200ml of coconut water and 1/4 cup of garlic clove blend until smooth

2. For the cajun spice blend, combine paprika, cajun seasoning, lemon pepper, old bay, sugar, cayenne chili powder, and msg (optional).

3. Melt the butter in a sauce pan, add the cajun spice blend, whisk to combine, then pour the blended coconut water. Reduce by a quarter Season with salt to taste.

4. Prep the lobster, season with salt, and brush with the sauce. Bake at 400F for 15-20 minutes. Finish the dish by brushing more sauces and garnishing with chives. Enjoy

2. Cook the sauce for about 5-6 minutes on a low flame by combining the soy sauce, water, honey, and sesame until it thickens.

2 courgettes, cut into 1 inch rounds
2 red peppers, cut into 1 inch strips
2 red onions, cut into wedges
1 small cauliflower, broken into florets
2 tbsp olive oil, plus extra for drizzling
2 tsp dried oregano
2 tsp Turkish pepper flakes
300g Greek yogurt
2 tbsp rose harissa
6 tbsp tahini
2 tbsp pomegranate seeds
10g toasted pine nuts
handful of finely chopped mint leaves
sea salt

𝗡𝗢𝗧𝗘𝗦
1. Preheat the oven to 200 fan. Place all the vegetables into a large roasting dish and add the cauliflower leaves. Form a single layer so the veggies roast properly.

2. Add the olive oil, oregano, Turkish pepper flakes and a good pinch of salt. Toss together and roast for 35- 40 minutes until charred and tender. Swirl the yogurt onto a large serving plate. Add the harissa and swirl into the yogurt.

3. Pile the veggies onto the yogurt and drizzle over the tahini. Add the pomegranate seeds, pine nuts, and mint. Add an extra pinch of Turkish pepper flakes to taste. Finally, drizzle over a little olive oil and serve immediately. Enjoy

1. Split white cake batter into five colors, and place them into piping bags. Use one drop of each gel color of your choice in each bowl of color.

2. Next, pipe the colors into a cookie sheet prepped with shortening and flour. This is key to getting the cake to flip out evenly. Bake for 325 for 17 minutes. Let cool for 2-3 minutes.

3. Wrap it up carefully in a floured cloth napkin under and over the cake. Let cool. Unwrap carefully, then add on an even layer of buttercream. Wrap it up and freeze. Slice with a hot sharp knife

There is something beautiful about cooking food for your family at home, most especially during these unique times ahead of us. Whether it’s an experimental take on a classic or just literally whatever is inside your pantry—it’s always the moments shared over food that counts

𝗖𝗥𝗘𝗔𝗠𝗬 𝗠𝗨𝗦𝗛𝗥𝗢𝗢𝗠 𝗣𝗔𝗦𝗧𝗔

𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦:
10 oz shitake mushrooms, thinly sliced
1 shallot, roughly chopped
5-6 garlic cloves, minced
1/2 cup dry white wine, (e.g. chardonnay)
5-6 sprigs thyme, stems discarded, only use leaves
1 cup chicken stock (microwave for 1 min)
1 1/2 cup heavy cream (microwave for 1 min)
1 box pasta of your choosing
add the following according to your taste:
salt & pepper
freshly grated parm
vinegar or lemon zest/juice

𝗡𝗢𝗧𝗘𝗦:
1. Heat pan over medium-high heat. Once hot, add a generous amount of oil to the pan, then add mushrooms. Do not move them for at least 4 minutes.

2. After 4 minutes, move them around (adding more oil if you need to - mushrooms drink up fat) and cook for 3-4 more minutes or until browning occurs. Add shallots and stir with mushrooms for 1 minute. Then add garlic and stir until fragrant, about 30 seconds.

3. Deglaze the pan with white wine—meaning add the white wine to the pan and stir the mushrooms around, releasing any brown bits from the bottom of the pan to release the flavors.

4. Once nearly all of the wine is evaporated, add chicken stock, heavy cream, and pasta. Stir until everything is well incorporated and cook on medium heat for 10 minutes or until the sauce has thickened and pasta is cooked.

5. Season to taste with salt, pepper, parmesan, and sherry vinegar or lemon juice and zest.
