90 g spelt flour
1 tbsp cocoa powder (optional to make chocolate waffles*)
1 ripe banana
1 tsp agave syrup* or more to taste
approx. 90 ml plant-based milk
1 tbsp vegan butter (or coconut oil) melted
1 tsp baking powder
a sip of mineral water (optional)
a pinch of vanilla & cinnamon (optional)
coconut oil to grease the waffle iron
any more berries you wish to add (optional)

𝗜𝗡𝗦𝗧𝗥𝗨𝗖𝗧𝗜𝗢𝗡𝗦
1. First purée the banana and blend with plant-based milk, melted vegan butter (or coconut oil) and syrup to taste until foamy.
2. Mix flour, baking powder, (vanilla, cinnamon) and sieve into the banana milk mixture. Add a sip of sparkling water and blend quickly and briefly to get a smooth, creamy and thick dough.
3. Preheat the waffle iron and grease with coconut oil.
4. Bake waffles.
5. Serve your waffles with toppings of choice and enjoy!

1. To make chocolate waffles, simply add 1 tbsp of cocoa powder and a little bit more plant-based milk to the batter.
2. Instead of agave syrup, you can also use another sweetener of choice.
3. If you use full fat coconut milk to make these waffles, it is not necessary to add vegan butter or coconut oil to the batter.

1. Add 2 Tbsp sauce before air frying AND 2 Tbsp after.
2. Freeze and fully defrost tofu before cooking. This texture is unreal and pretty similar to chicken. Make sure to press your tofu after defrosting or buy high protein tofu.
3. Air fry at 390 F for 22-25 minutes. Flip every 7-8 minutes to cook evenly. Bake at 400 F for 25-30 minutes also flipping every 7-8 minutes for best results

1. Cut the ends off a potato and lay down two skewers on a flat surface
2. Thinly slice the potato vertically using skewers to prevent it from cutting all the way through
3. Flip over the potato and cut it diagonally. Carefully fit a skewer into the center
4. Combine 1 tbsp garlic powder, 1 tsp smoked paprika, 1 tsp onion salt, and 2 tbsp olive oil
5. Coat the potatoes in the seasoning mixture and bake in a 400F degree oven for 15 mins, flip and cook for an additional 10 mins
6. Place one potato on a cutting board, cover with shredded cheese. Add bacon, soft scrambled eggs, more cheese, then add the other potato on top. Enjoy!

𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦
Roasted Tomatoes
1 package tricolor cherry tomatoes
1/4 cup olive oil
Whipped Feta Dip
1/3cup oil
1 block feta cheese, crumbled
2 tbsp honey
1-2 bunches thyme
1-2 bunches oregano
1/4 cup cream cheese
1/4 cup water
Lemon zest
Salt + pepper
Grilled Bread
1/2 baguette, sliced
1/4 cup olive oil

𝗜𝗡𝗦𝗧𝗥𝗨𝗖𝗧𝗜𝗢𝗡𝗦
1. preheat oven to 375F degrees. Line a baking sheet with parchment paper. Add cherry tomatoes and top with 1/3 cup olive oil, salt, and pepper. Bake for 20-25 minutes.
2. Add crumbled feta, cream cheese, 1/2 cup EVOO to a food processor. Process for 2-3 minutes. Add lemon zest, black pepper, and honey to the mixture and process for 2 minutes.
3. Add feta dip to a bowl and remove roasted tomatoes from the oven. Add roasted tomatoes and olive oil on top of the dip. Garnish with thyme, oregano, and black pepper. For the bread - slice the baguette and brush each slice with olive oil. Place on lined baking sheet and Bake at 350F degrees for 8-10 minutes. Remove from oven & Serve with whipped feta dip. Enjoy

𝗕𝗔𝗞𝗘𝗗 𝗠𝗜𝗦𝗢 𝗔𝗨𝗕𝗘𝗥𝗚𝗜𝗡𝗘
2 aubergines
2 tbsp brown rice miso paste
2 tbsp honey
3 tbsp toasted sesame oil
1 tbsp mirin (or ½ tbsp more honey)
toasted cashews
sesame seeds
roughly chopped spring onions

𝗡𝗢𝗧𝗘𝗦
1. Preheat oven to 200 degrees fan. Line a baking tray with parchment or foil.
2. Cut aubergines in half lengthways and score them in a criss-cross manner (about 1/3 deep) with a sharp knife.
3. Place the aubergines onto the tray and bake for about 30 mins until they are browned in areas and cooked through. They should be soft to the touch when you squeeze them.
4. In a small bowl whisk together miso paste, honey, toasted sesame oil, and mirin.
5. When the aubergines have cooked remove them from the oven and spoon over the miso glaze. Return to the oven for 10 mins. Garnish with toasted sesame seeds, roasted cashews, and chopped spring onions
