𝗖𝗛𝗘𝗥𝗥𝗬 𝗣𝗜𝗘 𝗟𝗢𝗩𝗘 𝗡𝗢𝗧𝗘

𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦
2 pie crusts (either homemade or store-bought)
1/2 cup strawberry jam
Canned cherry pie filling (optional)
Egg wash (1 beaten egg mixed with 1 tbs water)
Sugar for sprinkling

𝗜𝗡𝗦𝗧𝗥𝗨𝗖𝗧𝗜𝗢𝗡𝗦
1. Preheat oven to 375F. Line a large baking sheet with parchment paper. On a lightly floured surface, roll out 1 pie crust. Using a paring knife, cut out long diamond shapes, about 4" on each side. Transfer diamonds to the baking sheet. Reroll extra dough to make more diamonds.
2. Fill the center of each diamond with a very small dollop of strawberry filling. Fold three of the corners into the center so that the dough looks like an open envelope. Press down lightly on dough to seal. Use a small heart cookie cutter to stamp out remaining dough into hearts, and place a heart in the center of each.
3. Brush envelopes with egg wash and sprinkle with sugar. Bake until envelopes are golden, about 15 minutes.
4. Optional: put a few cherries on the envelope before baking

2 cans (15 oz cans) of organic chickpeas (drain one can and reserve water from the second can)
1/2 to 1 cup good quality tahini (add 1 cup for extra creamy and less for a thicker consistency)
Juice from one large lemon
Chickpea juice from the can
3-4 cloves of garlic
1-2 tsp salt (adjust to your taste)
1 tsp pepper

1. Blend everything in a blender until smooth and creamy.
2. Plate the hummus in a shallow bowl, decorate with chopped purple onions, roasted chickpeas, cherry tomatoes, parsley, lemon wedges, and crushed red pepper.

1 tub of vegan vanilla cashew ice cream
2 tbsp (14g) chia seeds, ground
6 tbsp water (90g) water
1/4 cup (65g) vegan butter
3/4 cup (130g) brown sugar
1/2 cup (125g / 125ml) almond or soy milk
1 tsp pure vanilla extract
1 cup (132g) plain flour
1 tsp baking powder
1/2 cup (60g) dutch pressed cacao
1/4 tsp salt
1 1/2 cups raspberries, divided

1. Preheat oven to 180, and grease a 20cm square tin. Sprinkle half the berries and set aside.
2. In a large bowl, make chia eggs. Melt butter, milk, and sugar in a saucepan, then cool to room temp. Pour into chia egg with vanilla, and combine well.
3. Sift in dry ingredients and add salt. Fold together, add remaining berries and fold through

𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦
𝘓𝘢𝘴𝘢𝘨𝘯𝘢
1 package oven ready lasagna noodles
1/4 cup extra virgin olive oil
1 container ricotta cheese
1/4 cup Italian parsley, chopped
1 egg, beaten
1 package shredded mozzarella
1 cup Parmesan cheese, freshly grated
1 cup grana padano, freshly grated

𝘔𝘦𝘢𝘵 𝘚𝘢𝘶𝘤𝘦
1 package lean ground beef
Splash of dry red wine
1 tsp sugar
1 can tomato sauce (or crushed tomatoes)
1 clove garlic, chopped
Salt + pepper

𝗜𝗡𝗦𝗧𝗥𝗨𝗖𝗧𝗜𝗢𝗡𝗦
1. Preheat oven to 350F degrees. Add 2 tbsp olive oil to a large baking dish.
2. Heat 2 tbsp olive oil & chopped garlic in a medium sauce pan over medium heat. Add in ground beef and tomato sauce. Add in sugar, salt & pepper and a splash of dry wine. Turn the heat to a low simmer and let simmer for 1 hour.
3. In a medium bowl, mix together ricotta, 1 beaten egg, 1/4 cup grated Parmesan, salt & pepper and parsley.
4. Cover the bottom of a large baking dish with a thin layer of the meat sauce. Cover with 3 noodles placed side-by-side. Top with 1/4 cup of the ricotta cheese mixture, and 1/2 cup of tomato sauce. Top with shredded mozzarella cheese, Parmesan & grana padano. Repeat to make 2 more layers. For the last layer, add parsley on top.
5. Bake covered for 35-40 minutes. For the last minutes uncover lasagna and bake. Remove from oven and let sit for 10 minutes before serving. Enjoy!

1. Prepare the glutinous rice (3/4 kilo) as if you are cooking regular rice. Add pandan leaves and a pinch of salt to taste.
2. While waiting for the glutinous rice to cook, prepare the next step. Pour 1 cup of coconut milk (fresh or in tetra pack) in a cooking pan. Add preferred amount of white sugar (1/2 cup-1 cup). Transfer the cooked glutinous rice from the rice cooker to the pan. Mix and stir over low fire until your preferred consistency.
3. Once desired consistency is achieved, transfer to a container with banana leaves as base and then flatten the mixture using a spatula.
4. The next step is to make the toppings. Pour 1 cup of coconut milk in the pan. Add preferred amount of brown sugar (we used 1/2 kg). Stir for 10-15 minutes until mixture is caramelized.
5. After preferred consistency is achieved, pour caramel mixture onto the sticky rice and flatten the mixture. Heat in oven for 20 minutes (240 F).
6. Remove from oven, slice, and serve. Enjoy!

(can be air-fried or pan-fried):
1 block (14 oz / 400 g) extra firm tofu, pressed and drained
1/3 cup (0.8 dl) all-purpose flour mixed with 1/2 tsp white pepper & 1/2 tsp salt
2/3 cup (1.6 dl) panko bread crumbs (substitute with other bread crumbs if you don’t have panko)
1/3 cup (0.8 dl) plant based cooking cream or milk
+ high smoke point veg. oil for brushing or shallow-frying

𝗜𝗡𝗦𝗧𝗥𝗨𝗖𝗧𝗜𝗢𝗡𝗦
1. Pat dry tofu with clean kitchen towel and cut in 1 cm slices, pat dry the slices.
2. Place flour mixture, panko bread crumbs and cream/milk in three separate shallow bowls.
3. First coat tofu well in flour, then dip in the cream/milk and finally cover with bread crumbs. If air-frying: place in freezer safe container, make sure they don’t touch each other and freeze for 2 hours or overnight. (Skip freezer step if you are pan-frying them, just shallow-fry in pan at once.)
4. Remove from freezer, brush all sides with oil and air-fry at 390 F / 200 C for 25-30 minutes, check on them halfway and flip.
