Divine Delight: Gluten-Free and Dairy-Free Carrot Cake with Cream Cheese Frosting

Ingredients

Cake  
  • 1 ripe banana
  • 1 egg
  • 60g oats
  • 80g carrots
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 30-40g raisins
  • 3-5 vanilla flavor drops (or vanilla extract/sweetener of your choice)
Frosting
  • 4 tbsp dairy-free cream cheese
  • 4 tbsp plant milk (e.g., almond milk)
  • 2 tbsp low-fat dairy-free curd (or additional cream cheese if preferred)
  • 3 tbsp vanilla protein powder
  • 2 vanilla flavor drops

Baking Instructions:

  1. Preheat the oven to 180 degrees Celsius (top and bottom heat).
  2. In a blender, combine banana, egg, oats, cinnamon, baking powder, and vanilla. Blend until a creamy texture is achieved.
  3. Grate the carrots into small pieces and mix them into the batter.
  4. Add your preferred mix-ins; in this case, raisins were used. Consider options like walnuts, chia seeds, or dates.
  5. The batter is sufficient for two cake molds. Fill the molds and bake in the preheated oven for 15-20 minutes. Adjust baking time based on desired firmness.
  6. Allow the cake to cool slightly before generously spreading the cream cheese frosting on top (optional for added sweetness).
  7. Enjoy the delicious cake on its own or with the delightful cream cheese frosting.
