INGREDIENTS:
-1 pound sushi grade salmon
-2 tbsp srirachia (to taste)
-2 tbsp Japanese mayo
-3/4 tbsp soy sauce
-2 tsp sesame oil (1 tsp for rice and 1 tsp for salmon mixture)
-2 cups short grain (sushi) rice
-2 1/2 cups water
-1 1/4 tbsp seasoned rice Vinegar
-1/2 tbsp White Sugar
-Pinch of sea salt
(—optional—)
-Hot pepper(s) of choice (I used jalapeno and bhut jolokia)
-Thinly sliced green onion
RECIPE:
1. Wash rice until water runs clear and then cook using rice cooker (or preferred method), then season with rice vinegar, sugar, sesame oil, and a pinch of salt.
2. Allow to chill for 2 hours to overnight.
3. Cut rice in preferred shape and fry at 375F until golden brown. Immediately sprinkle with a little sea salt after frying.
4. Cube salmon while cold and combine with sriracha, mayo, soy sauce and sesame oil.
5. Top crispy rice with salmon mixture as well as desired toppings (hot peppers, green onion, ect.)

4. GREEK STEAK SANDWICH | tzatziki sauce
| INGREDIENTS | - tzatziki sauce
• 1 cup greek yogurt 0% fat
• 1 cup cucumber, grated and strained
• 2 garlic cloves, grated
• 1/2 lemon
• 2 tbsp extra virgin olive oil
• 1 tsp paprika
• 1 tsp cumin
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp cayenne
• 1/4 cup dill, chopped
• mix all ingredients together and leave it in the fridge until ready to be used
| INGREDIENTS | steak
• 1 ribeye steak
• 1 tsp paprika
• 1 tsp turmeric
• 1 tsp cayenne
• 1 tsp onion powder
• 1 tsp garlic powder
• 1 tsp salt
• 1 tsp black pepper
• 1 tbsp extra virgin olive oil
• mix all together and pan fry with butter until medium rare to medium
| FINAL TOUCH |
• two sliced breads, I used levain bread
• mayo on bread
• tzatziki on the other bread
• add arugula
• steak
• feta cheese
• red onions, optional

9. A simple zucchini, smoked mozzarella and ham torte 😋
4 or 5 zucchini’s cut thin (I used the mandolin)
3/4 cup breadcrumbs
1/2 cup grated Parmesan
1 tsp dried Italian seasoning
Pinch chili flakes
1/2 lb ham (I used Black Forest, but you can use wherever you want)
1 ball of smoked mozzarella sliced thin (My Grandmother always used scamorza, but I love the taste of the smoked cheese…provolone works well too)
Olive oil for drizzling
Combine breadcrumbs, Parmesan, Italian seasoning and chili flakes in a bowl. Dip the zucchini slices in and press the mixture to stay on as best you could. Now it’s time to layer. Spray the bottom of a casserole with cooking stay and lay down a layer of zucchini. Drizzle with a little olive oil. Lay down a layer of ham, and then cheese. Place another layer of zucchini down, drizzle lightly with olive oil and then another layer of ham and cheese. Finish with a layer of zucchini and sprinkle with some extra crumbs. Drizzle with olive oil and bake for 30-40 minutes or until tender, golden and bubbly.

10. Onion Bahjis 🧅
Serves 4
2 cups gram flour / chickpea flour (can use plain flour if you don’t have this)
1/4 tsp turmeric
2 tsp ground coriander
4 tsp ground cumin
2 tsp chilli powder
Few pinches of salt
1.5 cups water
250g onions - 2 small or 1 large (julienned - chopped into strips)
2 small green chillis (finely chopped)
Big bunch of coriander (finely chopped)
1. Mix together dry batter ingredients in a bowl. Add the water and mix together (don’t want it to be too thick). Add the onions, chillis and coriander and combine.
2. Heat a pot of vegetable oil to around 175 C / 350 F - test with some batter and if it sizzles it is ready to go.
3. Spoon in small portions of the onion mixture and cook for a couple of minutes, turning them halfway through. Cook in batches, don’t overcrowd the pan.
4. Remove from oil once cooked, set onto some paper towel to dry and sprinkle immediately with sea salt.
Yoghurt Dip:
4 heaped tbsps of thick greek yoghurt
Bunch of mint
Bunch of coriander
Small squeeze of lemon juice
Pinch of salt to season
1. Add all ingredients into a blender and blitz until smooth.

A super simple but delicious treat. Ultra crispy toast, seasoned prawns and toasted sesame seeds
1. Get about 200g of peeled king prawns and finely mince
2. To the prawns, add 1tbsp toasted sesame oil, 1tbsp light soy, pinch of sea salt and black pepp, pinch of MSG, 1tbsp sugar, 1x clove minced garlic, 1 finely chopped spring onion, 1 egg white
3. Mix to combine, then spread over some thick white bread, then lay prawn side down into some black and white sesame seeds
4. Press down gently so they adhere, then get ready to fry
5. Heat up some vegetable oil to 180c, then gently place in the bread sesame side down
6. Fry for about 4-5 mins or until golden brown, flipping and basting along the way
7. Remove the toast and drain on a rack, then slice into quarters and serve with Thai sweet chilli

INGREDIENTS
2 diced onions
1/4 salted butter
1 teaspoon sugar
1 pound shaved ribeye steak
1 tbsp worcestershire sauce
1 tbsp garlic powder

4 slices of provolone cheese
2 cups ap flour
4 eggs
1 cup of water
1 cup of milk
1 tbsp garlic and onion powder (each)
1/4 cup melted butter
1/2 cup grated cheddar cheese divided in half
3 cups of velveeta cheese
1 cup whole milk
1 cup blended rotel

Ingredients:
Field Roast Signature Stadium Dogs
Field Roast Chao Creamy Original Slices
Cornstarch
Water
Panko breadcrumbs
Frying oil (or) air fryer
Skewers
Instructions:
1. Prep by preheating oil to 365F
2. Slice Signature Stadium Dog’s in half
3. Keep the stack of Chao Slices intact out of the package and cut in half, then stack those two halve or until approximately the same height as half a Signature Stadium Dog. Afterwards, cut the Chao Slices into strips using the Signature Stadium Dog’s width as a measuring tool. You should be left with the Chao Slices and Signature Stadium Dog’s roughly the same shape/size.
4. Put both Signature Stadium Dog’s and Chao Slices onto a skewer (preferably Signature Stadium Dog’s first).
5. Make a cornstarch slurry with 1 part cornstarch, 1 part water.
6. Cover the corndog in slurry, and then coat in panko bread crumbs.
7. Fry until golden brown or until the Signature Stadium Dog’s reach 165F.
8. For air fryer, cook at 350F for 4-6 minutes or until golden brown (internal temp of Signature Stadium Dog should read 165F)

- 3 cups frozen fruit
- 1/2 tbsp lemon juice
- 3 tbsp maple syrup
Cook 3c fruit on med heated pan until thawed; blend w/ ½T lemon juice 3T maple; put on silicon mat & bake @ 175°F for 5-6 hours
𝘿𝙞𝙧𝙚𝙘𝙩𝙞𝙤𝙣𝙨:
1) Cook fruit on a medium heated pan until it’s thawed out
2) Blend all the ingredients together
3) Place on a silicon mat and bake @ 175°F for 6-7 hours
4) Take out and enjoy!

1. Grate up 250g mature cheddar, 250g Red Leicester, 200g Gruyère and 300g low-moisture mozzarella
2. In a pan, go in with 4tbsp unsalted butter, set to med-high then throw in 2 cloves minced garlic. Cook for ~2 mins
3. Add in 2tbsp AP flour, mix till smooth, then slowly add in 300ml whole milk bit by bit till smooth
4. Now add in 300ml double cream and continue to stir
5. Throw 500g pasta into salted boiling water
6. Add in a cup of pasta water to the sauce and stir, then start to incorporate the cheese little by little - make sure the heat is about medium and not too hot
7. Keep adding the cheese until fully incorporated, leaving enough aside to top with
8. Once your cheese sauce is smooth and creamy, season to taste with sea salt, black pepp + a pinch of cayenne and paprika - I go easy on the seasonings here
9. Mix to combine, then add in your cooked pasta and toss till fully covered in the glossy sauce
10. Add half the pasta to a baking dish, then throw in some cubed mozzarella, followed by the other half
11. Top this with all of your reserved cheese and bake at 180c for 15 mins, then grill for 4 mins
12. Top with chopped chives and allow to cool for 20 mins before serving
