2. Bacon Onion Jam Cheeseburger 🥓🧅
Two grilled patty’s topped with white American cheese and bacon onion jam served on a brioche bun with truffle mayonnaise 🔥🍔
BACON ONION JAM🥓🧅:
-1 pound bacon
-2 yellow onions(diced)
-2 teaspoon chili powder
-1 tsp garlic powder
-1 tsp kosher salt
-1/4 cup brown sugar
-1/4 cup maple syrup
-1/4 cup apple cider vinegar
Method:
1. Cook bacon in a large sauté pan until crispy, remove and set aside. Leave about 4-6 tablespoons of bacon grease in the pan then add the diced yellow onion. Sauté the onions for about 15 minutes stirring until lightly caramelized. Add in the kosher salt, chili powder, garlic powder and brown sugar. Stir and cook until the sugar begins to caramelize then pour in the apple cider vinegar and maple syrup. Chop the bacon into pieces and add to the pan. Stir until combined.

3. Episode 15: The Doner Kebab
Meat:
1kg beef mince
1x onion
3/4x cup yoghurt
1/3 cup mik
1x tbsp paprika
1x tbsp dried thyme
Salt & Pepper
Sauce:
3 cups yoghurt
1 & 1/2 cup mayo
1x lemon squeezed
1x handful chopped dill
1x handful chopped parsley
1x clove of garlic
Salt & Pepper
Toppings:
1x onion
2x handfuls of parsley
1x tbsp sumac
3x tbsp olive oil
1x tsp salt
Tomatoes
Pickles
Begin with grating the onion and try to keep as much of the juice as possible. In a bowl, add the mince, onion, yoghurt, milk, paprika, thyme, salt & pepper. Mix thoroughly and then shape into a very large sausage. Wrap tightly in baking paper and cling film and leave in the freezer overnight.
For the sauce, chop the parsley and dill and combine with the yoghurt and mayo. Squeeze in the lemon juice, grate the garlic and season with salt and pepper. Mix well and leave in the fridge whilst you prepare the toppings.
Slice the onions and roughly chop parsley. Mix together in a bowl and add the sumac, salt and olive oil. Stir well.
Slice the tomatoes and pickles.
Then remove the kebab from the freezer and carefully with a very sharp knife, slice the meat off in thin strips. Once you have enough, put the kebab back in the freezer and re-use for whenever you fancy.
Get a pan on a high heat, add butter and cook the strips of meat until nicely charred on both sides. Remove and then throw in your bread to soak up the juices.
Assemble & enjoy!

4. The Po’ Boy
Sauce
1x cup mayonnaise
2x dill pickles finely chopped
1/2x lemon squeezed
1x tbsp hot sauce
3x tsp capers chopped
2x tsp tsp paprika
1x tbsp mustard
1x tbsp Worcestershire sauce
2x garlic cloves minced
Shrimp
2x tsp kosher salt
2x tsp paprika
1x tsp garlic powder
1x tsp cayenne pepper
1x tsp black pepper
1kgx raw medium shrimp peeled
1 1/2x cup all purpose flour
1x cup polenta
1x cup buttermilk
3x tbsp hot sauce
Vegetable oil for frying
Toppings
Dill pickles
Shredded iceberg lettuce
Sliced tomatoes
Method:
Begin with adding all of the ingredients for the sauce in a bowl and mix well.
Then slice the tomatoes, pickles and shred the lettuce. Leave in the fridge whilst you prepare the shrimp.
Add the spices in a bowl and mix well. Pour half over the shrimp and make sure they are evenly coated. Then in a separate bowl, pour in the buttermilk and hot sauce, mix well and add the shrimp.
Finally, add the flour, polenta and the rest of the spices in a bowl and mix until well combined. Throw in the shrimp and shake well until they are coated thoroughly. Leave in the fridge for 20 minutes.

5. Blueberry Lemon cake 🍰
Ingredients
1/2 cup butter (1stick-113 g)
1/2 cup coconut oil ( 113 g)
1 1/4 cup granulated sugar (275 g)
3 eggs
1 tbsp lemon zest
1/4 cup lemon juice (60 ml)
Vanilla and lemon extract
3 cups flour (390 g)
2 tsp baking powder
Pinch of salt
1 cup buttermilk
2 1/4 cup fresh blueberry
For the Blueberry Glaze:
2 cups powdered sugar
2-3 tbsp blueberry juice (from 1/2 cup blueberries)
Lemon extract
Instructions
In a medium bowl, add blueberries and 1 tbsp of the flour and toss well to combine.
Preheat the oven to 350F. Butter and flour an 8-inch (20-cm) springform pan.
In a medium bowl, whisk together the dry ingredients (the remaining flour, salt, and baking powder) until combined well.
In a large bowl, add room temperature butter, coconut oil, and sugar and mix until creamy, light, and fluffy.
Add the eggs one by one and mix until combined.
Add vanilla, lemon extract, lemon juice, and lemon zest and mix well until combined.
Add the flour mixture and buttermilk to this mixture, and mix until they are completely combined. (Add them slowly; add a little flour mixture then a little buttermilk and repeat).
Add the flour-dusted blueberries, and using a wooden spoon or spatula gently fold them into the batter.
Pour the batter into the prepared pan and add some fresh blueberries on top.
Bake for about 50-60 min. (Don’t forget to make a toothpick test before removing it from the oven).
Remove from the oven and cool well.
Using a mortar, mash 1/2 cup blueberries, and using a strainer, strain its juice.
In a small bowl, mix the powdered sugar with 3 tbsp blueberry juice (if it is too thick add one more tbsp juice until it is pourable).
Pour the glaze over the cake and serve with tea or coffee.

7. Stuffed Flatbread
To make the dough, mix
-2,5 cups flour
-1 cup water
-1/2 tsp salt
-2 tbsp olive oil
and kneed until you have a soft dough. Cover and set aside for 30 min.
In the meantime, boil
-3 medium sized potatoes
and mash them. Add
-1 tbsp olive oil or vegan butter
And season with
-salt & pepper, to taste
Cut the dough into equal portions, roll it out
and fill with the mashed potatoes,
-vegan pesto of choice
-shredded vegan cheese
Close the dough and cook both sides in a pan on medium heat until golden
Brush with a little
-olive oil or melted butter mixed with fresh herbs of choice
Serve hot and enjoy :)

This is just a simple side dish from my upbringing in south texas called Queso Flameado. There are many variations of the stuff. This is the tamaluipas version.
Queso flameado
Ingredients :
-1/2 lbs queso Oaxaca
-4 oz modelo especial

Beef Stock:
6-8x beef bones
1x white onion
2x shallots
2x carrots
6x cloves garlic
1x tbsp peppercorns
5x rosemary stalks
6x celery stalks
Soup:
5-6x large onions
50g x butter
2x tbsp plain flour
1x cup white wine
2x bay leaves
Salt & Pepper
Emmental/Grueyere Cheese (lots)
1x day old baguette
Place the beef bones on a baking tray and season with salt. Roast at 180c/350f for 30 minutes. Turn them over and roast for another 30.
Then in a big sauce pan, add the bones with the vegetables and fill with water. Put onto boil and leave to simmer for at least 6 hours. The longer the better…
Slice your onions and add to a pan with the butter. Keep stirring until they are nicely caramelised (roughly 30 minutes). Then season with salt and pepper add the flour and stir well. Deglaze the pan with white wine. Make sure you strain your beef stock and then add to the onions. Season to taste and throw in a couple of bay leafs. Leave to simmer.
Slice the baguette and drizzle over olive oil. Bake at 180c /350f until nice and crisp (10-15 mins). Then take a garlic clove and rub on each slice.
In a bowl, add the soup, then some cheese followed by the croutons and then plenty more cheese. Stick under the grill until golden brown and melted.

| INGREDIENTS | - makes 4
• 4 chicken thigh, seasoned with taco seasoning
• 2 fresh corn
• 1 tsp onion powder
• 1 tsp garlic powder
• 1 tsp tajin
• 1 tbsp avo oil
• 1 tbsp mayo
• 1 can of chipotle peppers in adobe sauce, just the peppers (3-4 pieces)
• 3 garlic
• 1 lime
• 1/2 cup cilantro
• 1/2 cup extra virgin olive oil
• 1/2 cup honey
• 1/4 cup red wine vinegar
• if you don’t like it too spicy, add more honey and oil
Per salad:
• 1 cup kale, chopped
• 1 cup arugula chopped
• 1 cup romaine lettuce, chopped
• 1/4 red onions
• 2 red radishes, sliced
• 1/2 avocado
• 1/2 corn mixture
• cotija cheese, optional
1. Airfry the taco chicken thighs
2. Sauté corn with all the seasonings and once it’s cooled off, mix with mayo
3. Dressing: blend chipotle peppers, garlic, lime, cilantro, red wine vinegar, evoo and honey all together.
4. Plating: kale, arugula, romaine, red radishes, red onions, chicken, corn and avocado rose.
5. Drizzle honey chipotle dressing.
