1. PIZZA MUFFINS 😮💨
Is it pizza? Is it a muffin? It’s a PIZZA MUFFIN 🤤
MUFFIN INGREDIENTS:
👽1 pizza dough ball
👽4oz low moisture mozarella cubes, about 1/4 in
👽6 large slices of pepperoni, cut into 1/8 in squares
👽1/2 cup red sauce, frozen into cubes (YES, FROZEN!!)
👽2 tbsp butter, melted
PIZZA DOUGH INGREDIENTS:
👽2 cups bread flour
👽1/2 tsp sugar
👽1 1/8 tsp (1/2 packet) instant dry yeast
👽1 tsp kosher salt
👽3/4 cup water
👽2 tbsp olive oil, divided
I used Bobby Flay’s pizza dough recipe here and just cut it in half.
Place your muffin tin in the oven and preheat it to 450F. We’re intentionally heating the muffin tin first to help the edges and bottom of the muffins crisp up. 👏🏻
Divide your dough into 6 pieces. If you can use a scale that would be preferred. Roll into balls then roll out into 6-8in rounds, thinning it out around the edges.
If you want to be crazy you can divide your mozzarella and pepperoni cubes in 6 so you have the exact amount in each muffin. Add 2-3 cubes of sauce - my cubes were approx 1/2in x 1in.
The frozen cubes are important because we need to assemble the muffins PRIOR to putting them in the muffin tin and if it’s liquid sauce it’s just messy and doesn’t hold together, ok? Ok. 🔥
Fold up the muffins after filling them, sealing the bottoms and laying them flat on their butts/seams to rest.
Your oven should be preheated by now so remove your muffin tin and put it on a rimmed baking sheet. Use a pastry brush to coat the tins with some melted butter. Carefully add a muffin to each lil hole, brush over more butter, and bake for 15-20 minutes or until deeply golden. Wait 5-10 minutes until diving in because these suckers are basically lava. 🥵
Some of your muffins will probably explode out the sides and leak saucey cheesy goodness so just don’t sweat it. They’re delish regardless.
Dip in extra red sauce and ENJOY. 😎

6. Creamy Salmon Pasta
📕Recipe here:
❂ Ingredients:
2 steaks of Salmon
50g. Butter
1 Shallot Onion
2 Fresh garlic cloves
1 1/2 Cup Cream. Heavy cream/whipping cream.
Fresh Dill or Parsley
1/2 TspLemon zest
1/3 cup Dry white Wine
Salt and black pepper
200g. Pasta Penne
❂ Cooking process:
⁃ Cut the skin off the salmon fillets and dry with paper towels.
⁃ Heat a nonstick frying pan or large skillet then sear the salmon, for 4-5 minutes until the crisp.
⁃ Turn over the steaks and add butter to the pan. Fry in butter for a few more minutes.
⁃ Remove salmon from the pan and set aside while you make the sauce.
⁃ In the same pan add an onion that you’ve diced finely. Cook for a few minutes until softened then add the crushed garlic. Allow to cook for 30 seconds until fragrant.
⁃ Then add white wine and fry until it evaporates.
⁃ Add a lemon zest.
⁃ Pour in the cream and add the fresh dill.
⁃ Season with salt and plenty of freshly cracked black pepper.
⁃ Simmer gently for a few minutes until the sauce coats the back of a spoon.
⁃ Then pour the cooked pasta into the sauce and mix.
⁃ Add the fried salmon on top, mix lightly and you’re done.
⁃ Cook the pasta: Bring a pot of salted water to the boil. Add the pasta and cook until al dente then drain and reserve a cup of cooking water.

Recipe:
1. Cut 12 oz wagyu steak into tiny cubes (while still cold)
2. Mix with 2-3 thinly sliced green onions, 1-2 cloves of garlic, 1/2 tsp ginger, splash of soy sauce, 1/2 tsp rice vinegar, 1 tsp sesame oil.
3. Place a small amount evenly into a gyoza wrapper.
4. Wet edges with water and fold
5. Steam/fry for 5-10mins depending on desired internal temp.

Pretzels, or „Brezeln“ how we call them, are are the perfect snack and super easy to make!

RECIPE (8 pretzels)
- 500 g all purpose flour
- 260 g cold (!) water
- 10 g salt
- 21 g fresh yeast (or 7 g dry yeast)
- 25g softened vegan butter
- 1 tbsp sugar
- pretzel salt (or flaky salt)
- seeds (optional)

- 1 liter 3-4% food grade lye solution (CAUTION: Read packaging instructions!)

Baking soda alternative:
- 1000 g water
- 60 g baking soda

❶ In a bowl mix all ingredients. Knead for 15 minutes by hand or with a stand mixer until you have a very smooth and elastic dough. Rest for 10-15 minutes.
❷ Divide into 8 pieces, shape into balls, then rest for another 10 minutes. Preshape into slightly elongated shape.
❸ To shape the pretzels, roll into an (about 60 cm) long sausage with a thick middle and thin ends. Take the two ends, bring them together, cross over each other, twist once and press the thin ends into the dough.
❹ Proof at room temperature for 20 minutes, then move to the fridge end let them rest for at least 1 hour or overnight.
❺ Dip in the lye solution for 5 seconds (CAUTION: use gloves and goggles! Do not touch or drink!), then place on a piece of parchment paper. Alternatively you can boil 1 l of water with 60 g baking soda to dip the pretzels in.
❻ Sprinkle with salt or other optional toppings.
❼ Transfer the pretzels to a preheated baking tray and bake at 240° for 11-14 minutes.

23. CHEESY STUFFED FRIED POTATO DUMPLINGS IN CHILLI OIL
Dumplings
- 2 large red washed potatoes
- 1 cup corn starch
- Pinch of salt
- Cheddar cheese, cut into 1cm cubes
- 1 cup neutral oil for frying
Chilli oil
- 1 spring onion, finely sliced
- 2 garlic cloves, finely chopped
- 1 tbsp white sesame seeds
- 1/2 tsp sugar
- 1/2 tsp ground chilli
- 2 tbsp coriander leaves, finely chopped
- 1/2 tsp Gochujang paste
- 1 tbsp soy sauce
- 1/2 tbsp black vinegar
- 1/4 cup neutral oil
Method
* Peel, chop & boil the potatoes until soft. Drain & mash them until smooth. Add in the corn starch & salt. Mix until a smooth dough forms.
* Take a spoonful of the mixture & roll into a ball. Flatten & place the cheese in the centre. Fold the dough back on itself to cover the cheese, then roll back into a ball. Using the top of a bottle, press gently into the centre.
* Boil the dumplings in a pot of boiling water until they float.
* Carefully transfer them into a non stick pan with the oil on medium heat & fry both sides until golden.
* Place the dumplings in a bowl along with all the chilli oil aromatics & seasonings. Heat the oil until very hot then pour over the dumplings. Mix until it’s all coated & enjoy!
