9. Air Fried Buffalo Chicken Pizza Toast
Sourdough bread toasted in an air fryer with olive oil, mozzarella, red onions, buffalo chicken then finished with a drizzle of more buffalo sauce, ranch + cilantro
For the chicken, add your seasoning of choice then add the whole chicken into a dutch oven and roast until internal temperature reaches 165 degrees (about 18 minutes/pound)
Next, cube the meat and add to a sauce pan bBuffalo Sseasoned Ssnack Sspread and hot sauce mixing to combine then cooking on low while you prep your toast
Using a thick slice of sourdough, drizzle olive oil over the top then add freshly torn mozzarella thinly sliced red onion and the buffalo chicken
Add to a pre-heated air fryer cooking for 5 minutes at 400 degrees (cook time may vary based on air fryers)
Finish with a drizzle of the leftover buffalo sauce, ranch + cilantro and enjoy!

14. Orange Beef Stew, Super tasty and oh so filling
Ingredients:
3-4 lbs whole boneless beef chuck roast, cut into steaks for browning and salted
1lb golden beets, peeled and cut into 1.5 inch chunks
1 large shallot, minced
4 cloves garlic, roughly chopped
4 cups, chicken stock
2 packets of unflavored gelatin
2 oranges, sliced into 1 inch medallions
¼ cup parsley, finely chopped for garnish
3 tbsp avocado oil
2 tbsp gochugaru
½ cup red miso
2 tbsp rice vinegar
2 tbsp cornstarch
Salt and pepper
Steps:
• Preheat oven to 300°F (150°C), rack at the lowest position.
• Whisk together gelatin and chicken stock, set aside.
• Heat avocado oil in a large dutch oven over med/high heat. Add salted beef steaks and brown on each side for around 12 minutes total. Remove steaks and set aside on a plate.
• Add garlic, shallot and golden beets to the dutch oven and stir for several minutes until lightly browned. Add orange medallions in a layer on top, along with the gochugaru, miso and chicken stock. Stir until fully mixed in.
• Slice beef into large chunks, around 2” on each side. Add beef chunks to dutch oven and reduce heat to maintain a gentle simmer. Partially cover with lid and place in oven for about 2 ½ hours. Adjust the temperature to maintain a constant and gentle simmer.
• Remove dutch oven from the oven. Using tongs, fish out the oranges. Stir in vinegar and a slurry made from the cornstarch and a few tablespoons of water. Add salt and pepper to taste. Simmer uncovered on the stovetop until you reach the desired consistency.
• Serve with rice or by itself in a bowl. Garnish with parsley.

19. Slowcooker Pulled Beef, Onions & Gravy 🥩 🧅🥖
This is one of those lazy, can’t be arsed l dump it all in recipe and come back to something so comforting. Perfect if you’re out at work all day. 1KG of brisket will serve 6 people so you can go smaller for 4. It’s a lifesaver recipe because even if you don’t know what to serve it with you’ve so many options - potatoes, in a roll or even some pappardelle pasta.
Ingredients:
- 800g - 1Kg beef brisket 🥩
- 1 tbsp brown sugar 🥄
- 2 x onions sliced 🧅
- 1 tsp thyme / oregano 🌿
- 1-2 bay leaves 🍃
- 1-2 tbsp Worcestershire sauce 🥄
- 100ml white wine
- 400ml beef stock
- Garlic (Optional)
- 1 heaped tbsp cornflour 🥄 (Add more at the end if sauce needs to be thicker)
- Salt and pepper
How to?
1. Brown the beef briefly on the pan, soften the sliced onions
2. Add everything into the slowcooker and cook on high for 7-8 hours. Perfect if you’re out all day working
3. Shred with tongs and serve. I pair with mash or ciabatta rolls with butter, onions and the gravy for pure heaven
Important: If having it in a bread roll (Caked in butter) PLEASE DIP INTO THE GRAVY

I'm not going to lie. When I picked up this A5 japanese ribeye, I wasn't sure what to do with it. I scoured the internet and this sandwich kept coming up. So I made it, and man was it good!
✨ Recipe ✨
✨ A5 Japanese Wagyu ribeye ✨
I measured the steak up to a slice of milk bread and cut it into a square. Then seasoned with salt and pepper. Next dredge in flour then egg then panko. Deep fry it in 365°F oil for 20 seconds. Let rest for 5 minutes.
✨ Katsu sauce ✨ 1st
1/4 cup sake, tsp garlic powder, onion powder, black pepper into a pot. Boil till bubbles become big and shiny. Then shut the heat off.
✨ 2nd ✨
1/4 cup Worcester sauce, 3 tbsp ketchup, 2 tbsp honey, 1 tbsp whole grain mustard and oyster sauce. Bring back to a boil till large bubbles appear. Then remove from heat and let cool.
✨ Milk bread ✨ purchased at H-mart ( your local Asian market should have this bread) only toast the inside of the slices
✨ Cut into 4 pieces and enjoy 🔥

22. Nashville Hot Chicken and Waffles 🔥🧇
Buttermilk fried chicken thighs coated in Nashville hot seasoning sandwiched between two cheddar & chive yeasted waffles 🧀
YEASTED WAFFLES 🧇:
-3 1/2 cups AP flour
-2 tsp kosher salt
-1 cup warm whole milk(90-100F)
-2 tsp active dry yeast
-2 eggs
-3 Tbsp granulated sugar
-5 Tbsp unsalted butter melted
-1/2 cup chopped chives
-1/2 cup shredded white cheddar
Method:
1. Combine yeast and warm milk in a liquid measuring cup. Stir together and set aside to let bloom for 5-7 minutes. Combine eggs and sugar in a mixing bowl and whisk together. While whisking stream in melted butter. Set aside. In a separate large mixing bowl combine flour and salt. Pour in the yeast and milk mixture followed by the egg and butter mixture. Begin to mix with your hands and once a wet dough is formed begin to knead in the bowl for 5-7 minutes. It’ll be very sticky so just do your best to work the dough by pinching and folding it or slapping it against the side of the bowl. Transfer dough to a clean greased bowl. Cover and let proof until doubled in size.
2. Once proofed punch down the dough and turn out onto a work surface. Spread out the dough and top with shredded white cheddar and chopped chives. Fold and work the toppings into the dough by hand. Once incorporated divide dough into 8-10 pieces and let rest covered for 10 minutes before placing into a pre heated & greased waffle iron.
NASHVILLE HOT CHICKEN SEASONING🔥:
-1/4 cup cayenne pepper
-1 Tbsp kosher salt
-1 Tbsp smoked paprika
-1 Tbsp dark brown sugar
-1 Tbsp maple sugar
-2 tsp garlic powder
-2 tsp dried mustard powder
-1 1/2 cup hot fry oil
Method:
1. Combine all the spices, sugar and salt in a heat safe bowl. Carefully pour in the hot fry oil and whisk together. Immediately coat your fried chicken by either submerging it in the seasoned oil or brushing it on.

Ingredients:
• 1 tbsp avocado oil
• 3 tbsp unsalted butter
• 1 shallot, finely chopped
• 2 cloves garlic, smashed and minced
• 2 tbsp, minced sesame leaf
• salt and pepper
Steps:
• Pat steak down with paper towels to dry. Season all sides liberally with salt and pepper. Let the steak rest for 30-45 minutes. If refrigerating, make sure to let steak come to room temperature before cooking.
• Heat oil in a skillet over medium-high heat. Add steak with its fat edge down first, allowing the fat to sear and add to your pan. After a minute, lay the steak down in the pan, flipping every 30 seconds or so to help keep it cooking evenly.
• After 4 or 5 minutes a decent crust should be forming. Remove the steak and add the butter, shallot, garlic and sesame leaf to the pan. Once the butter is melted add the steak back in. Tilt the pan up, raising the handle so that its surface faces away from you and towards the back of your oven. Baste your steak with the butter, still turning every 30 seconds or so.
• Remove the steak from the pan once the thickest part registers 120°F (49°C). Rest the steak on a wire rack for 5 to 10 minutes.
• Serve as you like it :)

One of my favorite things on any Chinese food menu is the general Tso's chicken. When I thought about this sandwich, I got really excited. I knew I wanted to bring a flavor explosion to your mouth, but also keep it simple and easy to create. The spicy sweet from the general Tso's and the acid from the pickled cucumber slices, compliment each other. Like it was just meant to be.
✨ Recipe ✨
✨ Fried Chicken thigh ✨ boneless chicken thigh dredged in egg then in a flour panko mix. Then deep fry at 300°F to 350°F for 6 minutes. take it out and rest. Put it back in at the same temp till golden brown.
✨ Pickles ✨ cut cucumber slices thick. Mix 1 to 1 ratio water to white vinegar. Add 1/4 cup sugar and 3 tbsp salt. Heat till it is all melted ( do not boil). Add all seasoning to the jar with cucumber slices and add vinegar mix. ( I add crushed red pepper and black pepper corns)
✨ Mayo mixed with old style mustard ✨
✨ General Tso's sauce ✨ in a mixing bowl add 1/4 cup soy sauce, 1tbsp rice vinegar, 3 tbsp hoisin sauce, 3 tbsp brown sugar, 1/2 cup water, 2tsp sesame oil, tbsp crushed red pepper, 2garlick cloves minced and 1tbsp corn starch. Mix it well and then fry it on high heat stirring constantly till thickened.

✨ Bread ✨ ciabatta (as usual)
