1. Birria Tacos

Recipe:

500g beef chuck
4x beef short rib
1.5 ltrs beef stock
8x guajilo peppers (remove the top and empty the seeds)
1x large onion
3x shallots
8 x cloves garlic
4x large tomatoes
3x bay leaves
1x tbsp mexican oregano
1x tbsp cumin
Salt & Pepper to season

1x red onion
1x cup white vinegar
1x cup water
1x tbsp suagr
2x tsp salt

Corn tortillas (you can use flour if can’t find)
Shredded Quesadilla cheese (Mexicans forgive me but Mozarella works well too..)
Coriander to garnish

Begin with chopping your vegetables and seasoning the beef. Then get a pan on a high and sear the beef on all sides. Remove and put to the side. In the same pan, add the vegetables and cook down for 4-5 minutes.

Then in your largest sauce pan, add the ingredients and cover with the beef stock. Put on to simmer and throw in the bay leaves and cinnamon stick. Foam will bubble to the top (scum) remove this and leave to simmer for an hour.

Then remove the vegatables from the sauce and add to a blender. Pour in 500ml of hot water and blend til smooth. Then add to the sauce and leave to simmer on low for 3 hours.

Meanwhile, slice the red onion, put the vinegar, water, salt & sugar onto boil. Place the onions in a mason jar and pour over the pickle juice. Leave for at least an hour.

Then remove the beef from the sauce and shred with two forks. Keep to the side. Then dunk the tortillas in the sauce and place in a sauce pan on a medium-high heat. Add the cheese, beef and coriander (optional) and flip over once sice. Make sure the cheese is nicely melted before plating.

Then to serve, add some freshly diced onions to the sauce and dunk in the tacos. Serve with the pickles on the side and enjoy!

4. Tri-Tip Chimichurri Melt 🥩🌿

Tri-tip barbecued then thinly sliced and stacked on sourdough with provolone cheese grilled until toasty and topped with fresh chimichurri sauce.

CHIMICHURRI 🌿:
-1 Fresno chile 🌶
-1 shallot
-3 cloves garlic
-1 tsp kosher salt
-1/4 cup red wine vinegar
-1 bunch of parsley
-1 bunch of cilantro
-1 Tbsp dried oregano
-3/4-1 cup extra virgin olive oil
Method:
1. Finely chop your chile, garlic and shallots. Add to a bowl and sprinkle with kosher salt then pour in the red wine vinegar. Let sit for 10 minutes.

2. Chop your fresh parsley and cilantro and add to the bowl along with a tablespoon of dried oregano. Pour in the olive oil and stir to combine. Adjust the amount of olive oil to reach your desired consistency.

7. BBQ Shaved Tofu Sandwich (aka Barbie Cute Sammich)

It’s giving “summer snack” and it’s waiting for your face! Recipe below:

FOR THE BBQ SAUCE
100ml ketchup
4 tbsp dark soy sauce
2 tbsp white wine vinegar
1 tbsp vegan Worcestershire sauce (I use Henderson’s Relish)
1 tbsp maple syrup
2 tbsp hot sauce

FOR THE SANDWICH
200g block extra firm tofu, drained
Olive oil
Salt (I used Mitani chicken salt)
2 sandwich rolls
Vegan mayo 
Lettuce leaves
2 tomatoes, sliced
1/2 an onion, sliced

1. Put all the BBQ sauce ingredients in a jar or bottle and shake up. Set aside.
2. Use a mandoline to shave the tofu into 3mm thick pieces. Spray with olive oil and sprinkle with salt then grill or air fry until brown and crisp on the edges.
3. Slice the sandwich rolls and spread with vegan mayo. Arrange the lettuce, tomatoes (with a little salt) and onion then top with a layer of the tofu.
4. Top the tofu with some bbq sauce then add another layer of tofu followed by more bbq sauce.
5. Close up the sandwiches, slice and serve!

13. Tri-Color Sheet Pan Pizza 🍕

VODKA SAUCE🔥:
-1/2 yellow onion(diced)
-3 cloves garlic(minced)
-fresh basil leaf
-2 Tbsp tomato paste
-3/4 cup vodka
-1 can crushed tomatoes(28oz)
-1/2 cup heavy cream
-olive oil
-salt to taste
Method:
1. Add olive oil to a pan and sauté onions. Once softened add garlic basil and a pinch of salt. Cook until fragrant. Add tomato paste and cook 2-3 minutes. Turn the heat off and add the vodka. Turn the heat back on and let the vodka ignite cooking off the alcohol. Sauté for another 2-3 minutes.

2. Add crushed tomatoes and cook on low for 10-15 minutes until the sauce thickens. Add room temperature cream, stir until combined then blend in a food processor.

PESTO🌿:
-2 1/2 cups fresh basil
-1/3 cup toasted pine nuts
-3 cloves garlic
-2 Tbsp lemon juice
-3/4 cup freshly grated parmigiana reggiano
-1/2 cup extra virgin olive oil
Method:
1. Add basil, pine nuts, garlic and lemon juice to a food processor. Blend to combine. Add cheese and olive oil then blend until smooth.

MARINARA🥫:
-1 can crushed tomatoes(28oz)
-2 tsp kosher salt
-1 Tbsp granulated sugar
-1 tsp dried oregano
-1 tsp dried basil
-1 tsp dried parsley
-2 tsp red pepper flakes
-2 Tbsp tomato paste
-1/4 cup olive oil
Method:
1. Combine all the ingredients and blend until smooth.

2. Add to a pan and cook over low-medium heat for 10-15 minutes until the sauce thickens and any excess moisture is cooked off.

Ingredients
8oz ground beef
Roll or sub, I only had sliced bread 😢
2-3 sweet bell peppers
2 mini jalapeños
1/2 white onion, chopped
American cheese
Garlic powder
New Mexico chili powder
Chicken bouillon
Lettuce
Tomato
Mustard + kewpie
Ketchup optional
Butter
EVOO

Recipe
1. Begin by adding EVOO and salt to your whole peppers, + roast/broil until charred.
2. Let rest for a few min, meanwhile chop your topping ingredients (lettuce, tomato, jalapeño, onion)
3. Chop your peppers, + get a pan super hot with EVOO.
4. Sear your ground beef, chop up loosely, then add onion and jalapeño, and cook for 3 min.
5. Top with cheese, add ice cube and cover to let steam and melt cheese.
6. Toast your bread in butter, and assemble your chopped 🧀

Make this for your next holiday/potluck/dinner and be the star of the show.

Bacon - 1 cup diced
Andouille - 1 cup diced
Celery - 1/2 cup
Shallots - 1 cup
Garlic - 2 tbsp
Butter - 3 tbsp
White wine - 1 cup
Bay leaves - 2
Thyme - few sprigs
Cream cheese - 8 oz
Heavy cream - 2 cups
Gouda - 1/2 cup
Fontina - 1/2 cup
White cheddar - 1/2 cup
Parmesan cheese - 1/2 cup
Al dente pasta - 1/2 lb
Chives - for garnish

Preheat oven to 400F. Saute bacon and sausage until crispy and golden then remove. Add the butter and saute celery shallots and garlic until soft. Add wine and reduce 80% volume, then add heavy cream, cream cheese, thyme, and bay leaves. Bring it to a simmer and cook 10 mins. Add the cheeses and cook additional 10 mins. Remove bay leaves and blend till smooth and reserve. Boil pasta in salted water till al dente and remove. In a mixing bowl combine pasta, sauce, and cooked meat. Put in baking dish and top with more cheese. Bake for 7-10 mins, then broil top until golden, adding more cheese If needed. Enjoy

27. CRISPY SMASHED POTATOES | garlic basil chili oil + burrata

| INGREDIENTS |
• 8-10 baby potatoes
• water

• 1/4 cup basil, finely chopped
• 1/4 cup pistachio, finely chopped
• 1 garlic, grated
• 1/4 cup parmesan, grated
• 1 tsp red pepper chili flakes
• black pepper
• 1/2 cup extra virgin oil
• 2 tsp freshly squeezed lemon juice

• burrata cheese

1. Boil the potatoes.
2. Spray cooking oil on a parchment paper sheet tray.
3. Lay each potatoes and smash them gently with a flat bottom cup.
4. Spray more cooking oil over the potatoes.
5. Air-fry them for 25 mins or until crispy.
6. In a bowl, put together the basil, pistachio, chili flakes, garlic, parmesan and black pepper.
7. Heat up extra virgin oil.
8. Pour the hot oil over the basil mixture.
9. Add lemon juice.
10. Once the potatoes are done, add burrata and the garlic basil chili oil over the potatoes.

ENJOY!

28. Chicken wings

Chicken: drums or wings, salt/pepper lightly + remove tendons with pliers (optional)
Brine: buttermilk + a splash of pickle juice
Dredge: potato starch + a hefty pinch of salt, lemon pepper seasoning, garlic powder, onion powder, paprika, cayenne pepper (to taste)
Sauce: half stick of butter, 1/2 to a whole lemon, lemon zest(optional), ground black pepper or peppercorn medley (to taste)
Steps:
1. Prepare ingredients as listed above
2. Let chicken brine for several hours (3-4hrs)
3. (Straight out the brine) Coat each piece of chicken with the dredge
4. Cook until internal temp reads 165F and exterior is golden brown / crispy
5. Melt butter in pan while combining ingredients listed for the sauce
6. Toss the chicken with the sauce and garnish with parsley (optional)
