Ingredients
- Lamb shanks
- Fennel Bulbs
- Garlic
- Rosemary
- Onion
- Tomatoes
- Carrots
- Red Wine
- Beef stock
- Corn flour to thicken sauce
Recipe:
- Preheat the oven to 300 Fahrenheit
- Heat oil in a large frying pan
- Season the lamb shanks and sear on all sides. Remove from the pan and set aside.
- Add onion and carrot to the same pan until golden brown. Remove from the pan and add the rest of the vegetables - Add red wine and cook until it has reduced by half.
- Return lamb shanks to the pan, add beef stock. Bring to a boil.
- Cover and bake in the oven for 3 hours.
- Remove lamb shank and set aside.
- Pass the cooking liquid through a sieve and thicken the sauce by using corn flour.
- Serve on mashed potatoes and garnish with some roasted fennel and parsley.
