13. Creamy Garlic Lobster Pasta
I’m a big lobster person and I love pasta. So I figured I’d bring them both together! This recipe was creamy, crunchy, tasty and full of flavour! The breadcrumbs made this recipe taste super good! Words almost can’t describe how good this was, I even took leftovers for lunch! You have to make this dish and you will be so glad you did once you have it!
Ingredients
For the lobster:
- 3-6 lobster tails
- Half a stick of melted butter
- 1/4 cup of parsley - Lemon juice
For the breadcrumbs:
- 1 cup of breadcrumbs
- 1/2 cup of parsley
- Lemon zest
- Butter
- Salt
For the sauce:
- 2-3 slices of bacon, sliced
- 1 shallot, sliced
- 2 garlic cloves, crushed
- 1-2 cups of cherry tomatoes
- 1/2 cup of white wine
- 1 cup of cream
- 1/4 cup of parmesan cheese
- Penne pasta (or any pasta of choice)
Directions
- For the lobster, cut down the middle of the shell and “butterfly” the tails open
- Combine butter, garlic powder, parsley, paprika and lemon juice to form a basting butter. Mix and brush butter onto lobster tails. Cook on a high heat grill, cooking flesh side first. After flipping bast lobster with more of the butter sauce and cook until 140 internal. After cooking bast the rest of the butter on the lobster
- For the breadcrumbs, add butter to medium heat pan and then the breadcrumbs and lightly toast, season with salt and add the zest of a lemon. Mix in parsley and set aside
- To make the sauce, add sliced bacon, cook until crispy and set aside. Add in sliced shallot, two crushed garlic cloves and cook until soft. Once soft add in cherry tomatoes and once those are soft, mashed them and add in white wine and then cream. Mix together and add in Parmesan cheese and the cooked bacon
- Once everything is mixed, take lobsters out of the shell and cut them into bite size pieces and add into sauce, along with your cooked pasta.
- To assemble add your lobster pasta, add breadcrumbs on top and then finally fresh parsley and enjoy!
