Ingredients
10oz sushi grade salmon minced
2-3 corn tortillas
1/2 avocado sliced
2-3 scallions chopped
1 tbsp soy sauce
1/2 tbsp rice vinegar
1/2 tbsp smoked tuna extract
1/2 tbsp sesame oil
1 tbsp @momofukugoods extra spicy chili crisp
1.5 tbsp kewpie Mayo
Pinch @momofukugoods savory salt
Fresh cracked black pepper
Masago (fish roe)
Optional
1/2 tomato finely diced
1 tbsp cilantro chopped
1 tbsp red pepper finely minced
Recipe
1. Freeze your sashimi about ten min before dicing up as it makes life really easy!
2. Mix in mayo, half scallion (whites), soy sauce, tuna extract.
3. Mix well and adjust seasonings . I added sesame oil, rice vinegar, black pepper and savory salt.
(Feel free to add diced tomato, cilantro and red pepper for some additional texture, I just didn’t have any at the moment)
4. Slice avocado, fry corn tortilla and top with masago and roasted sesame seeds!

3. Loco Moco Burger 🍔
I burgerfied the Hawaiian classic cuz why not. Sure it’s a little messy, but who doesn’t love a sloppy burger here and there?
Make sure to use high quality beef. I like to use prime grass fed beef, and a good quality brioche bun. Pair with fries and you’re golden
-Caramelized onions
sweet onions - 2
salt - pinch
-Gravy
beef stock - 2 cups
butter - 2 tbsp
flour - 4 tbsp
soy sauce - 2 tbsp
Worcestershire - 1 tbsp
ketchup - 2 tbsp
dark soy sauce - 1 tbsp
Sugar - 1 tbsp
-Patties
Grass-fed ground beef 80/20 - 2 lbs
Shallots - 2 diced
Soy sauce - 1 tbsp
Worcestershire - 2 tsp
Salt and pepper - pinch
Monterey Jack - 2 slices
-Lemon chive aioli
Mayo - 3/4 cup
Chives - half cup
Lemon zest - 1 tbsp
Lemon juice - 1 tbsp
Salt and pepper - to taste
Brioche bun - 1
Fried egg - 1
1. Make the aioli. Combine all ingredients in mixing bowl and cover and set in fridge
2. Caramelize onions. In a pan over med-high heat add 2 tbsp butter and the onions. Sprinkle with salt and lower heat. Don’t mix too often, and cook about an hour until deep dark color. Set aside after
3. Make the gravy. In a pan, heat up butter, once melted add flour and whisk. Cook until blonde color, consistency should be like wet sand. Add the beef stock, soy sauce, Worcestershire, ketchup, dark soy, and sugar. Bring to simmer and cook until desired consistency. Adjust seasoning with salt and pepper
4. Make Patties. In a mixing bowl combine beef, shallots, soy sauce, Worcestershire, salt and pepper. Mix but don’t overwork, and form Patties. Refrigerate about 30 mins. Heat up a cast iron or carbon steel pan with some oil, and cook Pattie’s about 2-3 mins a side, adding cheese once you flip and cover.
5. Butter and toast brioche buns. Fry a sunny side up egg
6. Assemble burger. Brioche, aioli, Patties, caramelized onion, gravy, followed by egg. Enjoy

INGREDIENTS
Roast beef
* 2 ½ to 3 ½ pound eye of round roast
* 1 large sheet of fat (optional but highly recommended to keep meat moist)
* 1 tsp kosher salt
* 1 rosemary minced
* 1 tsp thyme minced
* 1 tsp garlic powder
* 1 teaspoon paprika
Caramelized onions
* 2 large onions thinly sliced
* 2 tbsp butter
* Water as needed

-8oz diced ny strip steak
-1/2 cup Kimchup

Recipe:
1. Cut 12 oz wagyu steak into tiny cubes (while still cold)
2. Mix with 2-3 thinly sliced green onions, 1-2 cloves of garlic, 1/2 tsp ginger, splash of soy sauce, 1/2 tsp rice vinegar, 1 tsp sesame oil.
3. Place a small amount evenly into a gyoza wrapper.
4. Wet edges with water and fold
5. Steam/fry for 5-10mins depending on desired internal temp.

28. Kinder Bueno Spread
This homemade, healthier version of the kinder bueno filling only requires 2 ingredients and is completely addictive! It is delicious on porridge, in smoothies or eaten straight out of the jar!
250g hazelnuts, skins removed
90g white chocolate, roughly chopped
Pinch of salt
1. Roast hazelnuts at 170C for 10-12 minutes.
2. Let the hazelnuts cool slightly before adding to your blender. Blend for 2-3 minutes (scraping down as needed) to form a hazelnut butter.
3. Add the white chocolate and blend for another 1-2 minutes until smooth.
Note: if you have hazelnuts with skins on them, roast the hazelnuts at 180C for 15-18 minutes. Leave to cool slightly before putting them in a tea towel and rubbing them together to remove their skins.
