2. Spicy Morel & Shiso Toast ⬇️
For the Morels:
• 2 cups of morel mushrooms, trimmed & cut in half lengthwise
• 1 small shallot, minced
• 2 Thai chilis, minced
• 4 tbsp unsalted butter
• 3 tbsp shiso, minced
• 3 tbsp sake
• 1 tbsp soy sauce
• 1 tbsp lemon juice (approx from half a lemon)
• salt & pepper to taste
For Serving:
• 2 slices of hearts bread
• 2 tbsp extra virgin olive oil
• 1 tbsp red pepper flakes
• 1 tbsp minced shiso
• 1 tbsp meyer lemon zest
• fleur du sel
Steps:
• Heat a cast iron skillet over med-high heat and add morels, stirring occasionally until moisture has evaporated and they are well browned (10-15 minutes). Add shallots & chilis, stirring until fragrant (about 1 minute). Reduce heat and add in sake, butter, soy sauce, lemon juice & shiso (stirring well to emulsify into a sauce). Salt to taste.
• Brush toast with olive oil and toast. Add morels and pan sauce on top of your toast and garnish with red pepper flakes, lemon zest, more shiso & a finishing salt

3. Beef Wellington Dip
Ingredients:
- Beef tenderloin roast
- Dijon mustard
- Cremini mushrooms
- Shallots
- Prosciutto
- Ciabatta baguette
- Chives
- Salt
- Pepper
- Olive oil
- Butter
For the dip:
- White onion, sliced
- Carrot, sliced
- Celery, sliced
- Garlic blub
- Rosemary
- Thyme
- Red wine
- Beef broth
Directions:
- Start out by making your au jus by slicing all your vegetables and cooking them down in a pot of olive oil until all soft. Season with salt and pepper and add in your garlic, rosemary and thyme. Add in red wine and beef broth and bring pot to a boil, cover and let all the ingredients cook for at least a hour
- Once done, strain your liquid and leave to the side.
- Season your tenderloin with salt and pepper and sear over high heat until browned on all sides. Place tenderloin in the oven and cook until desire doneness (I cooked mine to medium rare)
- As your tenderloin is cooking, add your mushrooms and shallots to a food processor and blend until they’re “chopped” and minced. Add to a skillet with olive oil and cook down until there is no more moisture. Add in thyme springs and add butter and red wine to caramelize. Cook down until butter and red wine is no more
- Fry your prosciutto in a skillet of olive oil on high heat and cook until crispy. Chop down into bite size pieces
- To assemble, add Dijon mustard to toasted baguette, mushroom filling, tenderloin slices, more Dijon mustard on the beef, chives and fried prosciutto
- Cut in half, dip sandwich into broth and enjoy

Mix together:
1 cup Sour cream
8 oz Cream cheese, softened
1/2 cup chopped green olives
1/2 tbsp Garlic powder
1-2 tbsp Olive juice
1/4 cup Blue cheese
Caramelized onion and shallot mixture
1/2 white onion
1 shallot
1 tbsp butter
1/2 tbsp Worcestershire
1 tbsp vodka
Caramelized Onions: In a skillet on medium/low heat, sauté onions and shallots in butter. Stir frequently and allow to reduce for 20 mins. About half way through, add Worcestershire and vodka and mix in. Cook for another 10 mins.

25. Mac & Cheese Recipe
1. Grate up 250g mature cheddar, 250g Red Leicester, 200g Gruyère and 300g low-moisture mozzarella
2. In a pan, go in with 4tbsp unsalted butter, set to med-high then throw in 2 cloves minced garlic. Cook for ~2 mins
3. Add in 2tbsp AP flour, mix till smooth, then slowly add in 300ml whole milk bit by bit till smooth
4. Now add in 300ml double cream and continue to stir
5. Throw 500g pasta into salted boiling water
6. Add in a cup of pasta water to the sauce and stir, then start to incorporate the cheese little by little - make sure the heat is about medium and not too hot
7. Keep adding the cheese until fully incorporated, leaving enough aside to top with
8. Once your cheese sauce is smooth and creamy, season to taste with sea salt, black pepp + a pinch of cayenne and paprika - I go easy on the seasonings here
9. Mix to combine, then add in your cooked pasta and toss till fully covered in the glossy sauce
10. Add half the pasta to a baking dish, then throw in some cubed mozzarella, followed by the other half
11. Top this with all of your reserved cheese and bake at 180c for 15 mins, then grill for 4 mins
12. Top with chopped chives and allow to cool for 20 mins before serving

1 Kilo of cheese is no joke, but man is this good. You can taste all the different flavours by going easy on the seasoning. Rich and delicious. Feeds 6 easy
