1. PSA: tater tots can become potato salad 😏 and I made this one pickle potato salad! 🥒🥔 recipe below‼️

Ingredients:
-1 (28 ounce) bag frozen tater tots
-1/2 cup plain Greek yogurt
-2 tbsp mayonnaise
-1 tbsp Dijon or whole grain mustard
-juice of 1 lemon
-2 tbsp pickle juice
-1/4 cup fresh dill, roughly chopped
-3 cloves garlic, minced
-2 tsp kosher salt
-1 tsp black pepper
-1 tsp garlic powder
-1 tsp onion powder
-1/2 tsp crushed red pepper flakes
-1/2 Persian cucumber, peeled and finely diced
-2 large kosher dill pickles, finely diced
-2 scallions, finely chopped

Directions:
-Preheat oven to 425F. Place the tater tots on a large parchment-lined baking sheet. Bake for 15 minutes, then remove from the oven. Use a cup to smash the tater tots into flat discs. Bake for another 20 minutes, or until deep golden brown and crispy. Remove from oven and set aside.
-In a large bowl, combine the rest of the ingredients except for the cucumber, dill pickles, and scallions. Whisk to evenly mix the wet mixture.
-Add the cooked crispy tater tots into the wet mixture. Add in the cucumbers, dill pickles, and scallions. Gently toss to evenly coat with the wet mixture. Serve and enjoy!

3. Viral Cottage Cheese Sweet Potato Beef Bowl 🍠

You know a recipe is next level when it’s loaded with protein, packed with flavor and everyone on social media can’t stop talking about it.

At first glance this combo might sound a little questionable, but it’s trust me, this is the bowl you didn’t know you needed!

INGREDIENTS -
(Makes 4 bowls)
400g lean ground beef
1 package taco seasoning
2 medium sweet potatoes
2 cups cottage cheese
1 avocado
1-2 tbsp hot honey
Optional - hot sauce, salt, black pepper

DIRECTIONS -
1) In a skillet, brown the lean ground beef over medium heat, breaking it up as you go. Add taco seasoning and mix well. Set aside.
2) Roast or air fry sweet potatoes until fork-tender. I cooked mine in the air fryer at 400 degrees F for 13 minutes with avocado oil spray and seasonings.
3) Start with a base of cooked sweet potatoes, then add a generous scoop of cottage cheese.
4) Top with the taco-seasoned beef and sliced avocado.
5) Finish it off with hot honey and hot sauce for that sweet-spicy kick. Mix it all together for the ultimate flavor explosion!

Serves 10-12

Ingredients:
3-4 tbsp Extra virgin olive oil
1kg beef or lamb mince
2 large or 3 medium onions
2 medium sized carrots
2 sticks of celery
15-20 cloves of garlic
1 tbsp tomato purée
2 tins plum tomatoes
500g passata
1 large or 2 small bay leaves
1 tbsp dried Italian herbs
1.5 tsp sea salt
1 teaspoon freshly cracked black pepper
1.5 tsp chilli flakes
2 tsp coriander powder
1.5 tsp cumin powder
1/2 tsp chilli powder or to taste
200g freshly shredded cheese
1 ball fresh mozzarella
Large handful of Fresh parsley and coriander
Bechamel:
100g butter
4 tbsp plain flour
4-5 cups whole milk
Salt & pepper to taste
Tiny pinch of nutmeg

📌 Recipe Continuation:

Directions:
* Add olive oil to your hot pan then add the mince, spread it out, turn the heat up on high and let the meat sear off for about 5 minutes. Once it has developed a crust start to mix and break it up. Keep it on a high heat and let the mince sear with the lid off until the moisture has evaporated.
• Add the tomato puree, bay leaves, salt and garlic. Sautee on a medium high heat for about 5 minutes then add the onions, celery & carrots, chilli flakes and dried herbs. Close the lid and turn the heat down to a medium flame.
* Let this cook down for 15-20 minutes or until the onions are soft and translucent
* Add the cumin, coriander and chilli powder and cook these spices out for about 5 minutes, sautéing on a medium heat.
* Add in the tinned tomatoes and passata, add 1 cans worth of water in alongside this, close the lid and let it simmer on a low heat for 1-2 hrs, stirring every 20 mins.

For the bechamel:
* melt down the butter then add in the flour, cook this out for 3-4 minutes constantly stirring to prevent burning.
* Turn the heat down, Add 1 cup of milk and whisk, breaking up any lumps. Add another cup and whisk and once lump free add the remaining milk.
* Turn the heat up to medium, constantly whisking to prevent lumps. Cook until thick, similar consistency to hot custard. Make sure not to over cook as it will thicken up in the oven
* Season to taste with salt, pepper and a tiny pinch of nutmeg (optional)

* Assemble the lasagne and cook in a preheated oven at 180c for 20-25 minutes uncovered if using fresh lasagne sheets.
* If using dry lasagne sheets, once layered cover the dish with foil, ensuring that the foil doesn’t touch the cheese. Bake for 25 mins with the foil on and another 10-15 minutes with the foil off.
* Let the lasagna rest for 15-20 minutes to keep the layers intact when serving.

5. How to make a delicious Steak with Mushroom Sauce 🔥

Ingredients:
2 ribeye steaks - room temp
300ml cream
100g mozzarella cheese - grated
400g brown mushrooms - sliced
1 heaped tablespoon of Dijon mustard
1/2 brown onion 1 diced
2 potatoes - peeled and diced
Chives - finely sliced
Butter

Directions:
1. Bring a pot of water to the boil then add the potatoes. Once cooked, drain then add back to the pot along with a knob of butter, mozzarella cheese, white pepper and salt. Mash until smooth. Set aside.
2. Place a pan over a high heat and add a knob of butter then add the seasoned steaks into the hot pan. Cook until medium rare. Set aside to rest.
3. In the same pan you cooked the steak in, add onions and stir for a couple of minutes then add the mushrooms. Once the mushrooms have softened it’s time to add the Dijon mustard. Stir for a minute then add the cream along with plenty of black pepper and salt. Let it simmer away for a few minutes. The sauce should reduce and thicken.
4. Add a dollop of cheesy mashed potatoes to a plate then top with steak, creamy mushroom sauce and a good sprinkle of fresh chives.

Ingredients:
* Salt
* Garlic powder
* Creole seasoning
* Paprika
* Olive oil
* Chicken breasts
* 2 tbsp tomato paste
* 1 shallot, diced
* ¼ cup sun-dried tomatoes, diced
* 1 tbsp minced garlic
* ⅓ cup pasta water
* 2 cups heavy whipping cream
* Cayenne pepper
* Red pepper flakes
* Black pepper
* ⅓ cup grated Parmesan cheese
* Handful of spinach
* Cooked pasta

Instructions:
1. Season the chicken with salt, garlic powder, Creole seasoning, and paprika.
2. Heat olive oil in a pan and cook the seasoned chicken until fully cooked. Remove from the pan and set aside.
3. In the same pan, add tomato paste, diced shallots, sun-dried tomatoes, and minced garlic. Cook for 2-3 minutes.
4. Pour in the pasta water and heavy whipping cream. Season with garlic powder, cayenne pepper, red pepper flakes, and black pepper.
5. Stir in the grated Parmesan cheese and let the sauce thicken.
6. Add spinach, cooked pasta, and the chicken back into the pan. Stir everything together until well combined.

Pollo asado recipe:

Chicken Marinade: (I used about 3 pounds of chicken for reference)
- 1/4 cup of olive oil
- 3 tbs of soy sauce
- 1/3 cup of fresh squeezed orange juice
- 1 small lime squeezed
- 1/3 cup of chopped cilantro or to your liking
- 3-4 garlic cloves
- chopped yellow onion (about 1/4 cup)
- 1/2 TPS of, paprika, cumin, dried oregano
- Salt, black pepper to taste
- Little sprinkle of garlic, and chipotle chili pepper seasoning (can add little more for spice, careful not too add too much)
* mix all the ingredients and add marinade to chicken, let it sit while prepping other ingredients

- cooked 4 cups of rice in rice cooker for meal prepping

Baked golden potatoes seasoning:
- 2 tbs of olive oil
- Salt, black pepper, garlic powder, little sprinkle of paprika, basil, dried or fresh parsley

Insanely flavorful salmon bites with a sweet & spicy cucumber salad- healthy, fresh, and so easy to make🍚🥒

I love using dried seaweed snacks to wrap everything up into the perfect bite! Drizzle on some sriracha mayo for an extra punch🌶️

Ingredients:
- skinless salmon filet, cut into cubes
- 1/3 cup soy sauce
- 1/4 cup honey
- 2 tsp sesame oil
- 4-5 cloves garlic, minced

*let marinate for at least 10 minutes. air fry at 400°F for about 8-10 minutes, flipping and adding extra sauce halfway through.

- 2 tsp sesame oil

•1/2 spaghetti squash
•1/2 small block of feta

One pan, air-fried chicken fajitas: mix 1/2 cup sliced orange bell peppers,

1/2 cup sliced green bell peppers,

1/2 cup sliced red onion, 2 chicken breasts sliced thinly,

1/2 tsp of each: garlic powder, cumin, crushed red peppers, paprika, salt, and black pepper to taste,

Rice

Sweet teriyaki sauce
Salt

Prep :
1. Cut the salmon into cubes.
2. In a bowl, add the salmon, 3 tablespoons sweet teriyaki sauce, salt, pepper, garlic powder.
3. Add olive oil to the pan, and cook the salmon over medium heat, to your liking.
4. At the same time, prepare and cook the rice: 2 1/2 cups of water for 1 cup of rice. Add salt to the rice water.
5. Next, chop the cucumber and avocado, and slice the scallions.
6. Serve the rice in a bowl, adding the marinade, 1/2 avocado and cucumber slices.
7. Add a drizzle of sauce, sesame seeds and sliced scallions.
If you wish, add 1/2 mango as a side!

For the meat sauce:
• 4 tbsp extra virgin olive oil
• 1 pound (600 g) ground beef
• 2 onions, blended
• 2 garlic cloves, blended
• 1/4 cup (50 ml) cognac
• 3 tomatoes, blended
• 1/3 cup (80 ml) tomato juice
• 1 cinnamon stick
• 1 bay leaf
• Salt and pepper
• 1 bunch parsley, chopped

For the vegetables:
• 3 potatoes, cut lengthwise into 1/4-inch (6 mm) slices
• 4 eggplants, cut lengthwise into 1/4-inch (6 mm) slices
• Olive oil for frying

For the béchamel sauce:
• 1.5 liters milk
• 6 tbsp cornstarch
• 2 tbsp butter
• 1/2 tsp nutmeg
• Salt and pepper, to taste
• 3 egg yolks
• 1/2 cup (120 g) grated cheese

• 1/4 cup (50 g) breadcrumbs
• 1/2 cup grated cheese

• Heat olive oil in a pan. Sauté the ground beef until browned.
Add the blended onions and garlic, stirring until fragrant.
Pour in the cognac and let it simmer for 1–2 minutes.
Add the blended tomatoes, tomato juice, cinnamon stick, bay leaf, salt, pepper.
Lower the heat and let the sauce cook for 25 minutes.
Stir in the chopped parsley, cook for 1 more minute, and set aside.

• Fry the potato slices until golden
Fry the eggplant slices until softened and lightly golden. Place them on paper towels to absorb excess oil.

• In a saucepan, mix the milk and cornstarch. Stir constantly over medium heat until it thickens.
Add the butter, nutmeg, salt, and pepper. Mix well.
Remove from heat and whisk in the grated cheese and egg yolks.

• Preheat the oven to 350°F (180°C).
Grease a baking dish and sprinkle breadcrumbs evenly on the bottom.
Add a layer of grated cheese, then a layer of fried potatoes.
Add another layer of grated cheese, followed by a layer of fried eggplants. Sprinkle lightly with salt.
Spread the ground beef sauce evenly over the vegetables.
Add another layer of potatoes, followed by a final layer of eggplants.
Pour the béchamel sauce over the top, spreading it evenly. Sprinkle with grated cheese.

• Bake in the preheated oven for 50 minutes, or until the top is golden and bubbly.
