This flatbread was absolutely amazing! Lots of different flavours and tastes all over. This has to be one of the best flatbreads I’ve had so far! This is also meal prep friendly as it’s rich in protein, carbs and fats! Keep in mind, this is very filling and chances are you’ll likely won’t finish a whole flatbread yourself, unless you’re maybe a professional eater or just crazy lol. This is why this recipe is good sharing with others or even a midnight snack 😉. Give this a try and you and your friends will love it!
Ingredients
Coconut Crema
- 2 tablespoons of coconut yogurt
- 1 1/2 tablespoons of mayonnaise
- 1/2 teaspoons mayonnaise
- 1/2 teaspoons of lime juice
Peanut sauce
- 1 tablespoon soy sauce
- 2 tablespoon water
- 1 tablespoon lime juice
- 1 teaspoon fish sauce
- 2 tablespoons of brown sugar
- 1/2 teaspoons sriracha sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dry basil
- 1/4 teaspoon ground ginger
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/2 cup of peanut butter
Toppings
- 2 cups of mozzarella cheese
- 1/8 red onion sliced
- 1/3 cup of shredded or grated carrot
- Roasted peanuts chopped
- Fresh basil chopped
Main toppings
- Chicken thighs cubed
- Olive oil
- Flatbread
Directions
- To make coconut crema, mix coconut yogurt, mayonnaise, honey and lime juice. Mix and side aside
- To make peanut sauce, combine, soy sauce, lime juice, fish sauce, water, brown sugar, sriracha sauce, dry basil, ground ginger, black pepper and salt. Mix until combined
- Cut your chicken into cubes and sear and brown over high heat. Once browned add sauce and let chicken absorb sauce and then add peanut butter and mix one more time.
- On your flatbread, add your peanut chicken, mozzarella cheese, sliced onions and grated carrots. Broil until cheese is melted and flatbread is crispy
- Finish off with fresh basil and coconut crema and enjoy!

Marinade:
Greek yogurt
Garam masala
Kashmiri chili powder

Black pepper
Juice of 1 lemon
Butter Chicken Sauce:
1 can crushed tomatoes
1 cup chicken stock
1 yellow onion
4 cloves garlic
2 inch knob grated ginger
1/2 cup heavy cream
Salt to taste
Coriander mint Yogurt Sauce:
1.5 cups green yogurt
1/2 cup heavy cream
1/3 cup sour cream
Juice of 1 lemon
A bunch of finely chopped mint and coriander (cilantro)

25. Fermented Passionfruit and Fresno Chili Hot Sauce is really really tasty
For my first attempt at a homemade hot sauce I’d say this one turned out great.
Ingredients:
• 6 passion fruit, pulp and juice only
• 12 - 14 fresno chilis, stemmed
• 1 garlic clove, peeled and smashed
• ½ cup distilled white vinegar
• ½ cup olive oil
• ½ tbsp coriander seeds
• salt, 3% by weight
• water (enough to cover everything)
Steps:
• Combine all of your ingredients in a fermentation vessel and ensure that all of the salt has been dissolved. Consider mixing the water and salt separately, before adding in the other ingredients.
• Cover and let sit at room temperature in a darker area without direct sunlight for 5-7 days.
• During this period, check on the mixture once or twice every day by opening it up to a. release pressure build up and b. more easily detect the presence of bubbles (indicating fermentation is taking place).
• After fermentation is complete, add everything into a blender or food processor and blend thoroughly.
• Strain the mixture through a cheese cloth and add the strained contents back into the blender. Blend thoroughly and then slowly add in the vinegar and the olive oil. Check the mixture with a ph strip, looking for a number under 3.4. Add more vinegar to lower the number. Enjoy!
