14. VEGETARIAN FOCACCIA SANGA
Focaccia:
- 5 cups of tipo 00 flour
- 1 tsp salt
- 1 sachet (7 grams, 2.5 tsp) instant dried yeast
- 2.5 cups of warm water
- 2 Tbsp honey
- 4 Tbsp of olive oil, extra for oiling tray & forks
- 1 tbsp butter, room temp butter for lining baking dish
Garnish
- 2 tbsp sea salt
- 3-4 sprigs of rosemary
Roasted capsicum
- 1 red capsicum
- 1 tbsp olive oil
- 1 tsp salt & pepper
- 1 tsp chilli flakes
Artichokes
- 1 tin of artichokes, drained & cut in half
- 2 tbsp olive oil
- 1 tsp Salt & pepper
- Juice of half a lemon
Tatar sauce
- 1 tbsp Mayo
- 1 tsp Dijon mustard
- 1 pickle, finely chopped
- 1 tbsp capers, finely chopped
- 1/2 shallot, finely chopped
- 1 tbsp dill finely chopped
- Juice of half a lemon
- 1 tsp salt & pepper
Other ingredients
- Fresh buffalo mozarella
- Rocket
Method
* First make the focaccia by mixing together the water, yeast & honey & let sit for 15 min.
* Mix together the flour & salt then add in the yeast mixture. Mix together using a spatula, then add the olive oil. Mix again. Cover with a wet towel & set aside to prove for 3 hours.
* Once doubled in size, use two oiled forks & gently fold the sides of the dough onto each other.
* Oil & butter a baking tray & place dough on top. Let sit uncovered for an hour to double in size, then using your finger tips, make indents all over. Scatter with salt & rosemary & cook in an 180 degree oven for 40 min until top is golden and crispy. Remove, let cool.
* For the capsicum, char the outsides on the stove then place it into a bowl & cover with clingwrap. Once cooled, peel the skin off, cut into small pieces, season & cook in the oven for 15 min.
* For the artichokes, season & pan fry in olive until golden & finish it off with lemon juice.
* Mix together all ingredients for Tatar sauce.
* Assemble sanga!
