Ingredients:

-1/2 cup unsalted butter
-1/2 cup + 2 tbsp dark brown sugar
-1/4 cup white granulated sugar
-1/2 cup bread flour
-3/4 cup all purpose flour
-1/8 tsp baking powder
-1/2 tsp baking soda
-1/2 tsp salt
-1 egg + 1 egg yolk (room temperature)
-1 tsp vanilla extract
-1/2-1 cup chocolate chips (add as many as you want)

Instructions:

Melt butter in saucepan over stovetop on medium heat, let it boil, stir constantly (it start to bubble, foam, and make cracking and popping noises), once the butter has turned deep amber color, take off heat. (roughly takes 8-10 minutes)

Add brown butter to a bowl with your dark brown sugar and granulated sugar and set aside to cool completely. (give it around 10 minutes to cool off)

In a separate bowl, add flour, bread flour, baking powder, baking soda, and salt and whisk until fully combined.

Once the butter and sugars are cool, add your eggs and vanilla and mix with a rubber spatula.

Slowly incorporate your dry ingredients and stir.

Once dough has formed, fold in your chocolate.

Refrigerate dough for 24 hours!

Once time has elapsed, let bowl sit at room temperature before scooping dough into balls.

Preheat oven to 350F and line your baking tray with parchment paper.

1/4 cup sweet rice flour + 3 tbsp room temperature milk (microwave for 30 seconds or until a sticky dough forms and set aside to cool).
mix dry ingredients and wet in separate bowl. sift dry into the wet mixture and add the dough that was set aside and knead for 1 minute. preheat oil to 350F. while oil is heating, add cooking spray to your hands (bc the dough is sticky to touch) and form 8 small dough balls (about 1 tsp each) and form a circle onto a piece of parchment paper. once oil is hot enough, add donuts into the oil (2 at a time is best). fry each side for about 1-2 minutes or until golden brown (remove the parchment paper after 20 seconds). set aside to cool on wire rack. once cool, add toppings!
