2. KOREAN SWEET CHILI SALMON

| INGREDIENTS |
• 3 salmon filets (7oz each)
• 1/4 cup gochujang
• 1 tbsp red pepper flakes
• 1/4 cup sugar
• 1 tbsp light sodium soy sauce
• 1 tsp fish sauce
• 1 tbsp sesame oil
• 1/2 cup red onion, thinly sliced
• 2 cloves garlic
• 1/4 cup apricot jam
• 2 tsp rice wine vinegar
• 1 tsp black pepper

| THE DETAILS |
• mix all the ingredients together and add salmon.
• marinate for at least 2 hours.
• airfry or bake 400° for about 12 mins
• add chopped green scallions
• serve with rice or on top of fresh salad

6. Gochujang banh mi

I know This isn't your traditional banh mi sandwich but I always loved gojuchang and I also always loved banh mi sandwiches. It just felt right to put these two together.

✨✨Recipe ✨✨

✨(Bottom sauce)✨ mayonnaise mixed with whole grain old style mustard.)

✨ (Chicken breast)✨ lightly pounded, I keep it about a half inch thick or more. Dredge it in flour and bread crumbs. Then in beaten eggs. Then back in the flour and bread crumbs. (Make sure you press the flour mix into the chicken. This ensures a crispy crust.)

✨ Gochujang ✨ Gochujang chilli paste, regular chilli paste, honey, sesame oil, fish sauce, sugar water, mirin. (I don't measure any of this I just constantly taste it till I'm satisfied.)

✨ pickled carrots, daikon and Jalapeno's ✨ 1 to 1 ratio of white vinegar and water, 1/4 cup of sugar. Bring this to a simmer but don't boil it. Put all your chopped veggies in your container and add whole black pepper corns, mustard seeds, crushed red pepper and dried rosemary. (This is just what I do for seasoning. You can do whatever you like !)

✨ Bread ✨ I use ciabatta bread but you can use a banquet or whatever you want.

Recipe:

1x egg
1x cup olive oil
3x cloves garlic
1x half lemon squeezed
1x pinch of salt
3x spanish peppers
1x tomato
4x slices serrano ham
4x slices pork loin
1x crusty baguette

Begin with cracking an egg into a jar and pouring in the olive oil, lemon juice and adding a pinch of salt. With a hand blender, hold firm and blend for 20 seconds without moving. Then slowly move around until you have a nice thick aioli. Pro tip - room temperature egg works best.

Remove the tops of the peppers and slice into strips - remove the seeds. Slice the tomatoes and then thinly slice the pork loin.

Get a pan on a medium high-heat and sear the loin on both sides until golden brown and cooked through. Remove and add the peppers. Once nicely charred, its time to assemble.

Open up your baguette, spread on the alioli and top with the pork loin, peppers, serrano ham and tomatoes. Season the tomatoes with salt and pepper, slice in half and enjoy!

Ingredients
8oz ground beef
Roll or sub, I only had sliced bread 😢
2-3 sweet bell peppers
2 mini jalapeños
1/2 white onion, chopped
American cheese
Garlic powder
New Mexico chili powder
Chicken bouillon
Lettuce
Tomato
Mustard + kewpie
Ketchup optional
Butter

Recipe
1. Begin by adding EVOO and salt to your whole peppers, + roast/broil until charred.
2. Let rest for a few min, meanwhile chop your topping ingredients (lettuce, tomato, jalapeño, onion)
3. Chop your peppers, + get a pan super hot with EVOO.
4. Sear your ground beef, chop up loosely, then add onion and jalapeño, and cook for 3 min.
5. Top with cheese, add ice cube and cover to let steam and melt cheese.
6. Toast your bread in butter, and assemble your chopped 🧀

13. Chocolate Lava Cake 😍

Ingredients
6 oz 170g chocolate semisweet chocolate
6 tbsp 85g butter
2 eggs
2 egg yolks
4 tbsp sugar
1/2 tsp vanilla extract
2 tbsp flour
1 tsp instant coffee (alternatively, 1 tsp orange zest)
Pinch of salt

For the dust:
2 tbsp flour
1/2 tbsp cacao powder
Instructions

Preheat the oven to 450F.

Preparing the dust:
In a small bowl, mix the flour and cacao powder. Butter 4 six-ounce ramekins and dust the inside with the flour mixture. Set aside.

Preparing the lava cakes:
In a medium bowl, mix the flour, salt, and instant coffee.
In another medium bowl, add chopped chocolate and butter and microwave until melted and stir until smooth. (You can also melt the chocolate using the bain-marie method as shown in the Reel). Set aside.

In a large bowl, beat the eggs and sugar, using an electric mixer until pale and fluffy for 3-4 min. Add the vanilla.
Pour the warm chocolate mixture into the egg mixture and mix until combined.
Add flour mixture into the batter and fold just until combined.
Divide the batter among the prepared ramekins and place them on a baking sheet.
Bake for 5 min at 450F, then reduce the heat to 400F, and bake for an additional 4-5 min. Remove from the oven immediately.
Using a kitchen cloth or oven gloves turn each cake onto small plates.
Dust with powdered sugar and serve with fresh berries and ice cream.
Serve immediately.

‼️Your cakes should look like the ones in the Reel, firm on the outside, but the center should be soft and jiggly with flowing chocolate.
‼️If you don’t like the bitter-sweet taste you can use 3 oz semisweet chocolate and 3 oz milk chocolate. But if you are going to use milk chocolate, you can reduce the amount of sugar a bit.

Confit Garlic:
Cover garlic cloves in a 50/50 mix of olive oil and vegetable oil) and cook in an oven set to 180°C for 30-45 mins or until garlic is soft

Mayo:
1 tbsp mustard
1 tbsp vinegar
1 egg
1 cup oil (use oil from confit garlic)

Fries:
Peel, cut into chip size pieces. Place into a bowl of ice water for 15 minutes. Dryy and season with olive oil, corn flour, Italian herbs, paprika and salt. Cook in air fryer at 190°C for 15 mins, tossing half way.

Season and cook chicken. Cook bacon add water at the beginning and let cook out (water helps to render out the fat before the bacon burns).

Recipe: Peel the apples, cut into rings, roll out the puff pastry (from the store) and cut into long thin strips. Wrap the apples in the dough as in the video, brush with egg white, sprinkle with sugar and cinnamon and bake for about 20 minutes

20. Home Cooking Sessions: Wagyu Beef Wellington. Japanese A5.

1. Get a chateaubriand - I got the most incredible 400g cut of Japanese A5 Wagyu.
2. Season with sea salt, wrap tight in clingfilm, leave in fridge ~1h
3. Sear beef in hot pan ~45secs per side, set aside, brush with Dijon mustard - wrap again, refrigerate
5. Fry 1 diced shallot in 1tbsp butter ~2 mins, add 1tbsp EVOO + 500g finely chopped chestnut mushrooms - fry and cook off ALL their water (can take ~45 mins)
6. Once dark/dry, add 1 clove crushed garlic +
chopped rosemary/thyme, cook ~1min
7. Deglaze with whiskey and set aside - I used Hibiki 17 from @suntorywhisky_hibiki - a special liquor for a special dish
8. Crepes: whisk 4tbsp AP flour, 1 large egg, 140ml wholemilk till smooth, then add ladle to med-heat pan with knob of butter and cook ~1.5 mins per side
9. Once cooled, lay down clingfilm, then two crepes, then the prosciutto, then duxelles
10. Smooth out duxelles to form even layer, then add beef and roll, wrap and set aside
11. Flour some clingfilm, add sheet of puff pastry, then the beef, brush sides with egg wash (2 egg yolks + milk), then carefully roll again till edges meet
13. Fold in sides, then wrap tight in clingfilm, refrigerate
14. After 20 mins, brush with egg wash, optionally place over lattice, season and decorate
15. Place into 185c oven for ~30 mins / until internal hits 125f - then rest for ~30 mins before slicing

28. Roasted Chicken and Vegetable Soup

INGREDIENTS
- 4 large carrots
- 3 russet potatoes
- 1 and a half onions quartered
- 2 leeks
- 1 bunch of garlic
- 1/4 cup olive oil
- 1 tsp numeric
- 1 tsp cumin
- Salt and pepper
- 2 cups stock
- 1 cup coconut cream
- Thyme rosemary parsley
- 4 chicken thighs
- 2 tbsp butter

RECIPE
1. Preheat oven to 400F.
2. Spread the chopped veggies onto a baking tray.
3. Season with turmeric, cumin, salt, pepper, and coat in olive oil.
4. Bake for 35-45 min or until fork tender.
5. Remove 1/4 of the veggies and cut into smaller pieces.
6. Heat 2 tbsp butter in Dutch oven over medium heat.
7. Season chicken with salt and pepper.
8. Once hot, add the thighs skin side down. Cook the for 5-7 min until golden brown color.
9. Flip the chicken and cook for another 5-7 min.
10. Transfer it to a cutting board and cut into pieces.
11. Add 3/4 of the baked veggies to the pot and their juices to a large pot over medium heat and add the stock and coconut milk.
12. Puree until smooth.
13. Add the chicken, remaining veggies, and parsley thyme and rosemary.
14. Bring to a boil and reduce the heat to simmer.
15. Simmer for 20-25 minutes.
16. Taste and adjust for seasonings.
17. Serve with warm toasted bread.

30. Birria Tacos

Recipe:

500g beef chuck
4x beef short rib
1.5 ltrs beef stock
8x guajilo peppers (remove the top and empty the seeds)
1x large onion
3x shallots
8 x cloves garlic
4x large tomatoes
3x bay leaves
1x tbsp mexican oregano
1x tbsp cumin
Salt & Pepper to season

1x red onion
1x cup white vinegar
1x cup water
1x tbsp suagr
2x tsp salt

Corn tortillas (you can use flour if can’t find)
Shredded Quesadilla cheese (Mexicans forgive me but Mozarella works well too..)
Coriander to garnish

Begin with chopping your vegetables and seasoning the beef. Then get a pan on a high and sear the beef on all sides. Remove and put to the side. In the same pan, add the vegetables and cook down for 4-5 minutes.

Then in your largest sauce pan, add the ingredients and cover with the beef stock. Put on to simmer and throw in the bay leaves and cinnamon stick. Foam will bubble to the top (scum) remove this and leave to simmer for an hour.

Then remove the vegatables from the sauce and add to a blender. Pour in 500ml of hot water and blend til smooth. Then add to the sauce and leave to simmer on low for 3 hours.

Meanwhile, slice the red onion, put the vinegar, water, salt & sugar onto boil. Place the onions in a mason jar and pour over the pickle juice. Leave for at least an hour.

Then remove the beef from the sauce and shred with two forks. Keep to the side. Then dunk the tortillas in the sauce and place in a sauce pan on a medium-high heat. Add the cheese, beef and coriander (optional) and flip over once sice. Make sure the cheese is nicely melted before plating.

Then to serve, add some freshly diced onions to the sauce and dunk in the tacos. Serve with the pickles on the side and enjoy!
