3. CHICKEN & CHORIZO PIE😍

🍗To an ovenproof dish add 1 leek thinly sliced, 2 cooked chicken breasts cubed, 130g chopped chorizo and 2 cloves of minced garlic
🥧Pour over 100ml chicken stock, 200g cream cheese and 75g of parmesan
🍗Add 1tsp each of oregano, basil, black pepper and ½ tsp of thyme and stir.
🥧Pop in the oven at 180c-190c for 20 mins to cook the veg
🍗Bring out of the oven, mix and cover the top of the filling with a puff pastry sheet
(if the mixture isn’t as thick as you would like, you can add some cornflour)
🥧Poke some air holes with a knife and then pop it back in the oven for 20 mins to cook the top

Ingredients
3 medium sized beetroot
500g spaghetti
250g ricotta + extra for topping
1 juiced lemon
Handful of chopped pistachio nuts
Salt + Pepper to taste
Half a cup of pasta water
Handful of mint leaves
Olive oil

Method
Steam beetroot for 30-40 minutes or until soft
Place beetroots, ricotta, lemon, salt, pepper & PASTA WATER into blender
Blend that shiiiiit until silky smooth
Boil water and make it salty like the ocean
Cook pasta until al dente
Mix beetroot sauce with pasta
Top with pistachio, ricotta, mint and more olive oil and enjoy the sexiest pasta dish you’ve had in a long time

This recipe takes about 15 minutes to prepare.

❂ Ingredients:

1 large Eggplant, sliced thinly lengthwise 1 pack of Philadelphia cream cheese 2 cloves garlic, minced ⅔ cup of walnuts, finely chopped Salt/Pepper 1 bunch fresh Parsley, finely chopped
1/3 bunch Cilantro

❂ Cooking process:

⁃ Heat grill pan over medium and drizzle with olive oil.
⁃ Grill eggplants about 1 to 2 minutes on each side. Make sure not to burn the eggplant.
⁃ Put all the ingredients for the filling in a bowl cream cheese, greens, garlic, chopped walnuts and salt.
⁃ Mix together until well blended.
⁃ Evenly spread filling on 1 side of eggplant. Roll eggplant making sure not to squeeze so the filling does not ooze out of the side. Repeat procedure for the rest of the eggplant slices.

Welcome to ep. 4 of my ✨one pot meals✨ series, where I share delicious vegan meals, made in one pot!

INGREDIENTS: (for 400g pasta)
- 1 onion, chopped
- 3 garlic cloves, minced
- 1/3 cup tomato paste
- 1 heaping tbsp harissa (optional but highly recommended)
- 1 can coconut cream
- 3 cups boiling water
- Handful of vegan cheese
- Salt & Pepper to taste

INSTRUCTIONS:
Heat oil in a large pot over medium high heat, add chopped onion and garlic and fry until the onions are translucent.
Add tomato paste and harissa and fry for a couple of minutes.
Add coconut cream, boiling water, salt, pepper and uncooked pasta. Mix, cover with a lid and lower the heat to low.
Mix every couple of minutes to make sure the pasta doesn’t stick to the bottom. Add more water if needed.
Once the pasta is almost cooked add vegan cheese, mix and cook until ready. ENJOY!❤️

30. CRISPY ONION STEAK SANDWICH! 🥩 🥪

Ciabatta Bread, Filet Slices, Caramelized Onions, Crispy Buttermilk Onions, and a French Onion Aioli. This sandwich is so good I can’t 😫😍 Find the recipe below and tag someone who is ready for a cheat day!

Recipe:

Caramelized onions: In a skillet on medium/low heat, sauté 1 large diced white onion in olive oil. Stir frequently and allow to reduce for 45-50 mins. About half way through, add some sherry and Worcestershire sauce and mix in.

Steak: in a cast iron skillet on high heat and oil, butter, rosemary, and garlic. Then add your seasoned steak (with salad and pepper) and cook 2 minutes each side. Then put it in the oven at 400F for 6-7 minutes for medium rare. Allow to rest for 10 mins once you take it out and then slice it up!

French Onion Dip: In a bowl, mix together 4tbsp unsweetened yogurt , 2 tbsp chopped Caramelized onions, 1/2 tbsp chopped dill, 1 tsp minced onion, 1 tsp garlic powder, 2 tsp Worcestershire, 2 tsp honey.

Crispy Onions: slice 1/2 white onion into thin strips (they can be short strips). Dredge the onions in 1/2 cup buttermilk mixed with salt, pepper, 1 tsp garlic powder, 1 tsp paprika, and 1 tsp cayenne pepper. Then add the onion strings to 1 cup of flour mixed with the same spices. Once covered, add the onions to a out of hot oil and allow to crisp until brown
