5. Peri peri Crispy fries

Homemade crispy fries seasoned with a homemade peri peri seasoning..
Simply better & crispier than your takeouts, guaranteed..

You’ll need:
500g of large Potatoes 🥔
1 large bowl of cold water with 2 cups of ice
3 tbsp corn flour
1 tsp flaky salt
1 tbsp Paprika
1 tsp Garlic powder
1 tsp Onion powder

2 to 3 tbsp of peri peri seasoning.

6. This is the CRISPIEST PORK BELLY, madein the airfryer

This one is one you’ll absolutely love, for sure! So easy and SO GOOD

Ingredients:
Large piece of pork belly, preferably not too fatty or too lean
1 tsp Chinese give spice powder
1 tsp white pepper
1 tsp Chinese cooking wine (optional)
1 tsp salt

For the sauce, inspired by Vietnamese nuoc cham:
3 tbsp brown sugar, or palm sugar
3 cloves garlic, minced
2 limes, juiced
3 tbsp fish sauce
50ml warm water (to dissolve the sugar)
1 red chilli
Fresh coriander

Instructions:
1. Pat dry both sides, and score the skin side with a cross cross pattern (you can also stab it with many little holes but I don’t have the apparatus) and also score the other side roughly
2. Season the meat side with salt, white pepper and Chinese five spice (and cooking wine if using)
3. Salt the skin side for 30 mins to draw out extra moisture. Pat dry again.
4. Wrap up in foil (see video) and aside in the fridge for at least 6 hour or preferably overnight.
5. Cook in the airfryer for 30 mins at 160°c and then 12-15 mins at the highest setting (mine was 205°C). Time may vary depending on your airfryer.
6. Prepare the sauce in the meantime, either in a pestle and mortar or in a bowl. You may want to adjust the flavour with some water depending on preference.
7. Serve immediately so that the skin is still crispy. Enjoy!

13. Healthy orange & cashew chicken

If you love sweet and sour chicken, you will adore my orange and cashew chicken. Sticky, salty but much lower in sugar. The sauce is sweetened with fresh orange juice only, it’s really quick to make ready in under 15 minutes. Perfect for prep too and makes fantastic lunch leftovers.

You will need to serve 2
Under 600kcal and 50g protein

Sauce
Juice of one large orange and 1 tsp zest (avoiding the pith as this is bitter)
1 tsp garlic granules
1 small tsp ginger puree
1 tsp toasted sesame oil
4 tbsp light soy sauce (I used reduced salt)
2 tbsp rice vinegar
2 tbsp tomato puree

300g diced chicken breast, cut into chunks
2 spring onions
1 tbsp corn flour
1 tsp garlic granules
Small cupped handful of cashews

To serve
250g pack precooked rice (I used brown)
1/2 medium avocado, sliced
Cucumber and carrot, peeled into ribbons

Dice the chicken, toss in 1 tbsp corn flour, a pinch of salt and pepper and 1 tsp garlic granules.

Mix together the sauce ingredients. Peel the cucumber and carrots into ribbons and toss with 1 tsp rice vinegar.

In a large frying pan, stir fry the chicken on a medium heat until lightly browned for 2 minutes. Add in the diced spring onion and a handful of cashews, toss for 2 minutes more until the cashews are lightly toasted. Pour in the sauce and allow to simmer until thickened for a final minute or 2 until the chicken is cooked through.

Serve with 1/2 pack of microwave rice, 1/4 avocado, a handful of cucumber and carrot ribbons and a portion of cashew chicken.

21. TAKE A DIP - GUACAMOLE 🥑

INGREDIENTS (serves 2)

1x avocado
Handful cherry tomatoes
1/4 red onion
1x lime
Handful of fresh coriander
1x red chilli / chilli flakes (optional)
Salt
Pepper
Olive oil
2x slices sourdough
1x garlic clove

METHOD

1. Mash the avocado up with a fork.
2. Finely dice the tomato, onion & coriander. Mix well.
3. Season generously with salt, good squeeze of lime juice & black pepper. Finish with a touch of olive oil & leave to cool.
4. Slice the sourdough & toast in a pan with 1tbsp olive oil until charred.
5. Rub garlic into crusts, then spoon on guac & enjoy!
