Ingredients (makes 5 🍫):
* 150g Greek yogurt
* 1 tablespoon peanut butter
* 1 tablespoon cocoa powder
* Sweetener of choice to taste (I used maple syrup)
* Coating: dark chocolate
Instructions:
Mix the Greek yogurt, peanut butter, cocoa powder, and sweetener of your choice. Shape however you like and freeze for at least 4 hours. Dip in melted chocolate and they’re ready. Give them a try and let me know what you think 🫶🏼

2. Wonton Noodle Soup✨
Wontons (or sub frozen wontons):
▪️1 lb. 96/4 Ground Chicken or Ground Pork
▪️4 Small Dried Shiitake Mushrooms, soaked until tender and diced small (or sub with fresh shiitakes)
▪️ 2 Tbsp Fresh Ginger, minced
▪️8 oz. Can Water Chestnuts, drained and diced small
▪️3 Scallions, sliced
▪️1 Egg
▪️1 Tbsp Soy Sauce
▪️1 Tbsp Sesame Oil
▪️1 tsp Kosher Salt
▪️1/2 tsp Sugar
▪️1/2 tsp Black Pepper
▪️2 Tbsp Cornstarch (mixed with 1/4 cup water)
▪️2 Packages Wonton Skins
Noodle Soup:
▪️1 tsp Olive Oil
▪️1 Tbsp Ginger, minced
▪️2 Cloves Garlic, minced
▪️3 Scallions, sliced
▪️8 Cups Chicken Broth
▪️5 Shiitake Mushrooms, sliced
▪️1 x 8 oz. Can Sliced Water Chestnuts, drained
▪️2 Tbsp Soy Sauce
▪️1 Tbsp Sesame Oil
▪️1+1/2 tsp Kosher Salt (to taste)
▪️1/4 tsp Pepper
▪️2-3 Baby Bok Choy, cut in quarters then chopped in large pieces
▪️2 Tbsp Cornstarch (mixed with 1/4 cup water)
▪️8 oz. Shrimp, peeled and tail removed, cut in half
▪️8 oz. Thin Wonton Noodles or Ramen Noodles
1️⃣ If you are making your wontons, mix all the ingredients listed for the wontons except for the wonton skins (NOTE: This amount of wonton filling will yield 3x what you need for the soup; you can freeze extra wontons raw on a cookie sheet then transfer into a freezer bag and boil from frozen)
2️⃣ Fill a small bowl with water; orient the wonton skin in your palm in a diamond shape, and place ~1 tsp of the meat mixture in the bottom corner of the skin; roll the corner up and over the meat mixture about half way and then wet the skin to the right of the meat; holding the skin on both sides of the meat between your thumbs and pointer fingers (fingers facing towards you), pinch your fingers together and tuck the damp skin on the left onto the right to seal shut (the water will act as an adhesive); repeat until you have ~20 wontons made for the soup
3️⃣ Bring a medium pot of water to a boil for the wontons + noodles (wait to cook them until later)
4️⃣ In a separate large pot, sauté the ginger, garlic, and scallions in olive oil until fragrant (2-3 min)
5️⃣Add the chicken broth, shiitake mushrooms, water chestnuts, soy sauce, sesame oil, salt, and pepper; bring to a boil and then turn heat to low and simmer for 2-3 mins
6️⃣ Turn heat up to medium and add the bok choy; cook 2-3 min, then add the shrimp and cornstarch mixed with water (this will thicken the broth slightly); bring to a boil over medium high and cook until the shrimp are pink (2-3 mins) then cover and turn off the heat
7️⃣ Boil wontons in the water for 3-4 mins until internal temp reaches 165F and then remove with a slotted spoon and add them to the soup; boil noodles in the water according to package directions and then drain and add to the soup (or keep separate and place in the bowls before serving to keep the noodles more al dente) - enjoy!
⏲10 minute prep time + 20 minute cook time
Soup recipe serves 4 people (plus extra wontons; freeze extra or boil + eat w/ dumpling sauce)

✨2 kiwis, with skin on (vitamin C + natural sweetness + fiber + antioxidants)
✨1 tbsp lime juice (electrolytes + refreshing citrus flavor)
✨¼ tsp salt (helps replenish sodium lost through sweat)
✨1 tbsp honey or maple syrup (natural sweetener)
✨Ice
✨Lime or kiwi wedge (for garnish)
Instructions:
1. Add the coconut water, aloe vera juice, kiwis (skin on), lime juice, salt, and honey or maple syrup to a blender.
2. Blend until smooth, then strain through a fine mesh sieve to remove pulp.

METHOD:
▪️Preheat oven to 180c
▪️In a large bowl, place the dates in the warm milk. Leave aside for 20 minutes to soften, and then blend

▪️Pour into a prepared loaf tin
▪️Top with more chocolate (optional)
▪️Bake for 30-35 minutes or until a tooth comes out clean

Chicken Directions:
After the first initial sear, flip the chicken and then place it in a 365 F. oven for 10 min or until the chicken reaches 165 F internal. I recommend a 5-10 min rest and a fresh squeeze of lemon before slicing. Enjoy! 💙
Sauce Directions:
I just reuse the chicken drippings in the pan to start the sauce. Use low heat and stir everything the whole time. Add more cheese slowly if it needs to thicken more (it thickens as it cools a bit, too).

If you’ve ever craved a McChicken but wished it had more crunch and flavor, then say hello to McChicken Smash Tacos - the ultimate fast food meets taco mashup!!
Perfect for a quick weeknight meal, a fun weekend treat or just a reason to flex your homemade fast food skills.
INGREDIENTS -
For Smash Tacos
500g ground chicken
2 tsp garlic powder
Salt and black pepper, to taste
8 small flour tortillas
1/2 cup breadcrumbs
1 cup shredded iceberg lettuce
For McChicken Sauce -
1/4 cup light mayonnaise
1/4 cup miracle whip
DIRECTIONS -
1) In a small bowl, mix together the light mayo and Miracle Whip until smooth. Set aside.
2) In a medium bowl, mix ground chicken with garlic powder, black pepper, and salt.
3) Press a thin layer of seasoned chicken onto the back of each flour tortilla, making sure it covers the surface evenly. Then sprinkle on the breadcrumbs for that added crunch factor.
4) Heat a large skillet over medium-high heat with a little avocado oil. Place the tortilla chicken-side down and cook for 3-4 minutes until the chicken is golden and fully cooked. Flip and crisp up the tortilla side for another 2-3 minutes.
5) Spread a generous amount of McChicken sauce over the crispy chicken, top with shredded lettuce, and get ready for the best bite of your life.
6) Fold it up like a taco, take a bite, and wonder why you ever settled for drive-thru fast food. Keep in mind this McChicken sauce recipe is the Canadian sauce recipe (sweeter), not the American one.

12. Healthy Shrimp Tacos with Mango Salsa and Chipotle Crema✨
Chipotle Crema:
▪️1/2 Cup Sour Cream
▪️1/2 of a Chipotle Chili in Adobo (from a can), finely chopped (~1 tsp), plus 1 tsp Adobo Sauce from the can (see tip below for storing extra)
▪️1 Tbsp Fresh Lime Juice
▪️1 Pinch Salt
Mango Salsa:
▪️1 Large Ripe Mango, peeled & diced small (~1 Cup)
▪️1/4 of a Red Onion, diced small
▪️1/2 of a Medium Jalapeño, seeds removed and diced small
▪️2 Tbsp Chopped Fresh Cilantro
▪️1 Lime, juice
▪️1/4 tsp Kosher Salt
Tacos:
▪️1 lb. Large Shrimp, peeled and deveined
▪️1+1/2 tsp Chili Powder
▪️1+1/2 tsp Cumin
▪️1/2 tsp Garlic Powder
▪️1 tsp Kosher Salt
▪️1 Tbsp Olive Oil
▪️6-8 Cassava Flour Tortillas
▪️1 Avocado, sliced
1️⃣ Make the crema: In a small bowl, mix together the sour cream, chipotle chili + adobo sauce, lime juice, and salt. Taste and add more chipotle for more heat if you like.
2️⃣ Make the salsa: In a medium bowl, add the mango, red onion, jalapeño, cilantro, lime, and salt. Stir until all ingredients are evenly distributed.
3️⃣ Add the shrimp, chili powder, cumin, garlic powder, and salt to a separate medium bowl. Toss until evenly coated.
4️⃣ In a large skillet over medium-high heat, heat the olive oil until shimmering. Add the shrimp in one layer and cook for 1-2 minutes per side until pink and golden brown around the edges.
5️⃣ In a clean, dry pan over medium-high heat, toast the tortillas one at a time for about 30 seconds per side, until lightly charred with golden brown spots. (I like to toast each tortilla right before serving so they’re warm and fresh!)
6️⃣ Spread a swipe of crema over the tortilla using the back of a spoon, then top with 3–4 shrimp, a spoonful of mango salsa, and a slice of avocado. Enjoy!

Recipe:
1/4th cup almonds
1/4th cup cashews
1/4th cup oats
7-8 seedless dates
1/4th cup dark chocolate
1-2 tbsp coco powder (optional)
Soak these ingredients in 1 1/2 cups hot milk(you can use any milk of your choice or even water)
After 20 minutes, remove the chilkas from the almonds and blend them into a smooth paste
Transfer into a container and sprinkle some chocolate chips
Cover it with cling film wrap by touching the surface of the mixture
And freeze overnight or for 10-12 hours

salmon:
- about 1 lb salmon filet, cut into cubes
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tsp sesame oil
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp salt
- 1 tsp pepper *marinate for at least 10 minutes, then air fry at 400°F for 10 minutes
dressing:
- 1/3 cup soy sauce
- 1 heaping tbsp honey
- 1 heaping tbsp creamy peanut butter
- 1 tbsp fried chili in oil - 2 tbsp white vinegar
- 1 tsp onion powder
- 1 tsp garlic powder *blend

19. Rice cooker salmon & rice 🍚
I was last week years old when I learned that you can cook your protein with your rice in the rice cooker, so excuse me while I start a whole new series on easy recipes via the rice cooker. 😉🍚 You have the option to enjoy this salmon & rice as a sushi bake bowl with cucumbers, avocado and seaweed on the side or make them into onigiris like I did for the girls!
Ingredients:
~.6 lbs of salmon
4 cups of rice, washed (water amount depends on the rice cooker - check your manual!)
2 tbsp of soy sauce
1 tsp of sugar
2 tbsp of furikake
1 tbsp of sesame oil
2 tbsp of green onions, chopped
salt + pepper to taste
Directions:
1. Wash your rice until the water runs clear. Season your salmon pieces with salt + pepper.
2. Add your normal amount of water for cooking rice and top with salmon pieces.
3. Cook your rice on your normal setting.
4. When the rice is done cooking, break apart the salmon pieces and add soy sauce, sugar, furikake, sesame oil, salt, pepper and green onions to the rice cooker. Mix everything together well so the rice is well seasoned.
5. You can serve salmon rice in a bowl like sushi bake with seaweed, avocado, and cucumber on the side or make onigiri for the kids like I did!
