Recipe
300g Bread Flour
225g Water
60g Levain
6g Salt
9g Olive oil
Toppings
Tricolor Tomato Medley
Fresh Sage Leaves
Garlic Confit
FIRST
Mix flour, levain and water and let it sit for 30min.
Add in salt and olive oil and knead by hand or machine until the dough is nice and elastic.
- Do a coil fold every 30min for the next 2 hours.
- Overnight cold fermentation in the refrigerator.
SECOND
The next day, tip the dough out onto baking dish.
Proof until (almost) double. Preheat oven at 230C.
Dimple, add desired toppings and bake for 20min.
Bake at 230 C in a preheated oven for ~
20-25 min.

All you need is banana, oats, egg, cinnamon, salt and yogurt.
INGREDIENTS
1 ripe banana
¾ cup oats
1 egg
1 tablespoon Organic Greek yogurt
1 teaspoon cinnamon
Pinch of salt
INSTRUCTIONS
Place the banana, oats, egg, yogurt, cinnamon and salt in a large bowl and use a fork to mash it all together until well combined.
Heat a large nonstick skillet over medium heat and transfer the oat mixture to the skillet. Spread it out to an even layer and allow to cook undisturbed until it looks set, about 5 minutes.
Use a spatula to scramble the mixture and cook on the other side until browned and toasted, about 5 more minutes.
Transfer to a serving bowl along with greek yogurt, berries and coconut, if desired.

13. Chilli Crisp Mayonnaise
8 thinly sliced garlic cloves
2 thinly sliced shallots
200ml neutral flavoured oil
1 tbsp chilli flakes
1 tbsp smoked paprika
1 tsp chilli powder
1 tsp salt
1 tsp sugar
1 tsp white pepper
2 egg yolks
1 tbsp dijon mustard
1 tbsp Sherry vinegar or white wine vinegar
1 tbsp dark soy sauce
1. Cook the shallots and garlic in the oil over a medium heat until golden and crispy, remove from the oil and set aside
2. Heat the oil to 175-180c and pour over the spices/seasoning - mix well and allow to cool completely
3. Add the egg yolks, mustard, vinegar and soy to a bowl and mix before streaming in the chilli oil constantly whisking to form the mayo, mix in half the crispy bits and taste for seasoning.
4. Serve with the remaining crispy bits on top

18. SPICY SHRIMP TACOS WITH CRISPY RICE PAPER-NORI SHELLS
Next level version of my crispy rice paper tacos! In case you missed my salmon version—Did you know you can make crispy shells in 5 seconds with just some rice paper and some oil? The paper doesn’t even absorb much of the oil—they just get crispy and FABULOUS. This time I added a small bit of nori and it brought it to the next level. The spicy Mayo is lightened up and has the perfect balance of flavors. The slaw is tangy, sweet with sesame notes. So fresh and so good
1️⃣ 1/2 pound cooked shrimp, finely chopped.
2️⃣ Spicy Mayo: 3 tbls Mayo, 2 tbls Greek yogurt, 1-2 tbls sriracha, 1 tbls honey, 1 tsp soy sauce, 1/2 tsp sesame oil.
3️⃣ Slaw: 2 cups shredded purple cabbage, 3 tbls cilantro, 3 tbsp rice vinegar, 1 tsp sesame oil, 2 tsp honey.
4️⃣ Rice Paper Shells:
Heat enough oil in a shallow pan until sizzling, place a rice paper into the oil and press down in the middle, quickly add a small piece of nori and once it crisps up, fold it over and remove.

22. RAINBOW LASAGNE 🌈
Ingredients
Lasagne pasta sheets
2x canned tomatoes
500g ricotta
Quarter pumpkin
Two beetroots
3 cups spinach
Salt, pepper, olive oil
Three garlic bulbs
Mozzarella cheese
Method
Cover the garlic with olive oil and place in oven at 180C let cook for 45 mins. Cube pumpkin and cook in oven simultaneously. Steam beetroots for 45 mins then peel and cube
Blend ricotta, salt, olive oil and confit garlic with either the spinach, pumpkin or beetroot. Prepare lasagne sheets as the pack. In a pan, cook canned tomatoes with confit garlic, salt n pepper. Add any herbs you like!
Start with a layer of toms, then pasta, then your desired sauce and repeat until you have built your rainbow lasagne. Top with mozzarella cheese and cook in the oven at 180C for 45 mins or until golden brown.

Spicy Salmon Seaweed Sandwich
(I love alliteration😩)
0.25 lb cooked salmon (canned is fine or sushi grade if you want to be fancy)
~1 tbsp mayonnaise
1/2 tbsp sriracha
Seaweed sheet
1/2 cup cooked rice (I used left over sushi rice)
1/4 avocado, sliced
Thinly sliced cucumber
Sesame seeds sprinkled on rice (optional)
*if you are using canned I suggest a tad more mayo since it may be a little dry
Start by mixing the salmon, sriracha and mayo in a bowl. Cut the seaweed sheet halfway through the center, as shown. Arrange fillings individually in each quadrant (shown). Carefully fold one bottom section of the sheet up, then fold over and fold down. Cut diagonally and enjoy!

28. TUNISIAN HARISSA🌶️
INGREDIENTS:
- 200 g sweet dried red chiles
- 100 g spicy dried red chiles
- Lukewarm water (not boiling!)
- Garlic cloves from 2 garlic heads
- 1 cup oil
- 2 tbsp paprika
- 1 tbsp salt
INSTRUCTIONS:
Start by putting on some gloves (very important).
Remove the top of the peppers and cut along the side, then remove all the seeds and place in a large bowl.
Pour the warm water on the peppers and place a plate on top to make sure they’re fully covered.
Let sit for 30 minutes to an hour.
Strain the water and place the peppers in a food processor along with the rest of the ingredients. Scrape the sides of the bowl while processing and add more oil and salt if needed. Keep processing until you have a nice creamy paste. Keep in clean jars and ENJOY!
TIP: microwave your glass jars for 2 minutes (without lids) to kill any bacteria and make sure the harissa lasts longer.

INGREDIENTS
Wet
4 eggs
1/3 cup olive oil
1/3 cup maple syrup
1 tsp vanilla
Dry
2 cups almond meal
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 cup desiccated coconut
3/4 cup raisins
1 tsp salt
1/2 cup coconut sugar
3/4 cup chopped walnuts
4 small or 3 large grated carrots
Icing:
500g of cream cheese
2 tsp vanilla essence
1 lemon juiced
METHOD
1. Roast the walnuts for 8 minutes at 180 degrees
2. Mix the wet ingredients together in a bowl
3. Add all the dry ingredients (only 1/2 cup of walnuts) and mix well until combined
4. Pour mixture into a lined cake tin and cook for 45 minutes at 180 degrees
5. To make the icing: using a mix master, combine the icing ingredients until light and fluffy
6. Let the cake cool for 1 hour. Spread the icing evenly around the cake and top with extra walnuts
cut into slices and enjoy
