Steak marinade: marinate 2 pieces of skirt steak (or steak of choice) in 1 squeezed lime, 1 squeezed Orange, 1/2 onion sliced thin, handful of chopped cilantro and Paprika, Onion powder, Garlic powder, Chili powder, Cumin, 2 tsp Worcester, 3 Garlic Cloves, Salt, Black Pepper. Marinate for at least 2 hours
Cooking steak: cook steak on high in a cast iron skillet on both sides for roughly 6 minutes each side. Allow to rest before slicing
Sauce: roast in oven at 375 for 30 mins: 1 Green Tomato, 2 Jalapeño, 1 whole garlic, 1/2 white Onion. Then blend all together with 1/2 avocado, 1/2 lemon squeezed, salt, pepper, and cilantro

Sole Ingredients:
- Sole filets
- Flour
- Zest of 1/2 lemon
- Olive oil
- Butter
- 2 tablespoons capers
- 1 lemon,
- Chopped dill
- Sea salt and black pepper
Tartare Sauce:
- Mayonnaise
- Dijon mustard
- Minced dill
- Minced capers
- Diced dill pickles
- Zest of one lemon
- Lemon juice
- Minced garlic
- Salt / Pepper
Recipe:
Add the flour and lemon zest to a plate, and season well with sea salt and cracked black pepper. Dust the fish with the flour mixture, coat well.
Heat a large skillet, and melt the oil and butter together. When melted, add the fish and fry for 2 – 3 minutes, until golden. Flip and continue cooking for 2 – 3 minutes until golden all over. transfer to a serving platter.
Keep your pan hot, add butter and melt. Cook until starting to brown and then add in your capers and the lemon juice. Spoon the sauce over your fish, then top with dill leaves.

17. The yummiest fried chicken ever
CHICKEN BRINE
3lbs chicken thighs/legs (bone in)
4c dill pickle juice
1tbs sugar
1/2tbs salt
FLOUR DREDGE:
2.5c all purpose flour
1c cornstarch
1tbs salt
2tbs paprika
1tbs garlic powder
1tbs onion powder
1tbs cayenne
1tbs fine black pepper
BATTER:
2c cake flour (all purpose is fine)
2c cold water
PICKLE POWDER:
- drain dill pickles and dehydrate in the oven at 170 overnight.
- Once they are fully dehydrated, grind into a powder
- brine the chicken overnight (up to 2 days)
- Drain and pat dry
- Dip into the batter, then the dredge
- Fry at 300 for 4-6 minutes depending on size
(3-4 minutes for boneless)
- drain and cool for 30 minutes
- Fry at 325 for 3-4 more minutes (2-3 for boneless)

Big Mac Sauce: mix together 1/2 cup mayonnaise, 2 tbsp sweet pickle relish, 2 tbsp grated sweet onion (with juices), 2 tsp yellow mustard, 1/2 tsp white vinegar, 1/2 tsp paprika, 1/2 tsp onion powder, 1/4 tsp fine sea salt, 1/4 tsp garlic powder, 1 tsp white sugar
Tacos:
- flatten hamburger meat all the way to the edges of a flour tortilla. Season the patty with salt and pepper.
- Place the tortilla hamburger side down on a flat top on high heat and sear for about 6 minutes. Flip over and add a slice of American cheese and allow to melt. Remove from heat and add lettuce, pickles, diced onion, and your Big Mac sauce!

22. Crispy rice & spicy salmon sushi burger
𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦:
𝗦𝗽𝗶𝗰𝘆 𝗦𝗮𝗹𝗺𝗼𝗻:
- 400g sushi grade salmon sashimi cut into small pieces
- 1/4 cup Japanese mayo
- Sriracha (to taste depending on how spicy you want)
- 1 tbsp sesame oil
- 1 tbsp toasted sesame seeds
- 2 tbsp soy sauce
- 1/4 cup spring onions
𝗦𝘂𝘀𝗵𝗶 𝗿𝗶𝗰𝗲/𝘃𝗶𝗻𝗲𝗴𝗮𝗿:
- 1/2 cup Rice vinegar
- 1/4 sheet kombu kelp
- 1/4 cup Mirin
- 4 tbsp Sugar
- 1 tsp Salt
- 2 cups Japanese short grain rice
- Vegetable oil for deep frying
𝗧𝗼𝗽𝗽𝗶𝗻𝗴𝘀:
- Japanese “Wakame” seaweed salad
- 1 sliced avocado
- Salmon Roe (Ikura)
𝗜𝗡𝗦𝗧𝗥𝗨𝗖𝗧𝗜𝗢𝗡𝗦:
- Prepare sushi vinegar by combining vinegar, kombu, mirin, sugar and salt in a saucepan. Bring to a gentle simmer for around 10 mins, strain and set aside.
- To make sushi rice, first prepare your Japanese sushi rice using a ratio of 1:1 rice and water. Make sure to wash your rice until the water runs clear and soak for at least 30 mins to an hour. Transfer cooked rice into a bowl and add your prepared sushi vinegar. Mix well to combine.
- Transfer sushi rice into a sheet pan lined with cling wrap. Press to an even layer and weigh down with another sheet pan and any sort of heavy item. Let set in fridge for at least 2 hours. Once set cut into circles.
- To make spicy salmon, combine chopped salmon, mayo, sesame oil, soy sauce, sriracha, sesame seeds and spring onions. Mix well to combine.
- Deep fry your rice buns on medium heat until golden and crispy. Transfer to wire rack to cool
- Layer your crispy rice along with spicy salmon, wakame salad, Avocado and ikura. Serve and enjoy

27. Happy Cinco de Mayo
In a large pan brown 2lbs of chuck roast and 2lbs of beef short ribs. Remove once brown and sit to the side. Doesn’t need to be cooked. In the same pan add a diced onion. Cook until soft and then add 5 Guajillo chilis, 5 Ancho chilis-stem removed, 2 Chipotle peppers, and 5 cloves of garlic. Toast until garlic is fragrant and add one quart of beef stock. Add 3 quartered tomatoes and simmer for around 10 minutes to hydrate the peppers.
Next add all the contents of the pot to a blender and blend until smooth. Add back to the pot along with with 1 more quart of beef stock. Add your meat back and add 1tbs pepper corns and 2 small cinnamon sticks tied up in a cheese cloth. Simmer on low for about 2 hours. Once the time is up you should be able to shred your beef with ease.
Heat up a dry pan on medium heat and dip a corn tortilla in your broth. Lay it down in the pan and add some Oaxaca cheese and some of your beef. Add some of your broth(consomé) over the top of the meat and fold over. Toast both sides and serve with some of your consomé! If you liked this video share with a friend.

HOW TO MAKE IT
1. Roast garlic cloves in olive oil and set aside.
2. Blanche zucchini, spinach, and basil in salt water and immediately cook in ice water.
3. Blend the blanched veggies, roasted garlic, olive oil you cooked the garlic in, and salt to taste.
4. Add the sauce to cooked and cooled spaghetti and when you plate you can top it with trout roe if you desire.
