3. STEAK SANDWICH! 🥩🥪

Caramelized onions: In a skillet on medium/low heat, sauté 1 large diced white onion in olive oil. Stir frequently and allow to reduce for 45-50 mins. About half way through, add some sherry and Worcestershire sauce and mix in.

Dijionnaise: mix 1 part mayo and 1 part whole grain mustard

Chimmichurri: To make the Chimichurri: mix together 1 finely diced shallot, 1 diced red chili pepper, 3–4 diced garlic cloves, ½ cup red wine vinegar, 1 tsp salt, 1 tsp red pepper flakes, ½ cup finely chopped cilantro, ¼ cup finely parsley, 2 Tbsp dried oregano, 3/4 cup extra-virgin olive oil

Steak: in a cast iron skillet on high heat and oil, butter, rosemary, and garlic. Then add your seasoned steak (with salad and pepper) and cook 2 minutes each side. Then put it in the oven at 400F for 6-7 minutes for medium rare. Allow to rest for 10 mins once you take it out and then slice it up!

Recipe:
1. Cut 12 oz wagyu steak into tiny cubes (while still cold)
2. Mix with 2-3 thinly sliced green onions, 1-2 cloves of garlic, 1/2 tsp ginger, splash of soy sauce, 1/2 tsp rice vinegar, 1 tsp sesame oil.
3. Place a small amount evenly into a gyoza wrapper.
4. Wet edges with water and fold
5. Steam/fry for 5-10mins depending on desired internal temp.

7. Parmesan Cutlet on Ciabatta 🧄🔥

Fried chicken cutlet coated with garlic and herb butter then topped with burrata cheese and an arugula salad served on fresh baked ciabatta.

I will be coating all my fried cutlets in garlic parmesan butter form here on out! 😮‍💨

GARLIC PARMESAN BUTTER 🧄🧈:
-1/2 cup unsalted butter(1 stick)
-3 cloves garlic(minced)
-1 tsp dried parsley
-1 tsp oregano
-1/2 tsp red pepper flakes
-1/2 tsp kosher salt
-2 Tbsp freshly grated parmesan
Method:
1. Melt down butter in a pan and once hot add minced garlic and sauté until fragrant. Add in salt, spices and cheese then stir until combined.

2. Use the butter to coat chicken cutlets with or as a dip with your favorite bread 🥖

8. Crusted salmon with orzo salad 🍋

Ingredients:
For the salmon:
- 4 pieces of salmon
- 2 tbsp mustard
- 2 tsp honey
- 2 tbsp olive oil
- Juice of 1/2 lemon
- 1 cup roasted pistachios, chopped
For the salad:
- 1 cup orzo
- 2 cucumbers, diced
- 1 pack cherry tomatoes, quartered
- 1 cup herbs of your choice (I like the combination of parsley and mint or coriander)
- 1/2 cup roasted pistachios, chopped
- 2 zucchini, sliced into bite-sized wedges
- Honey mustard dressing: 1 tbsp mustard, 2 tsp honey, 2 tbsp olive oil, juice of 1/2 a lemon, salt and pepper to taste

Instructions:
- Preheat the oven to 190C. Toss your zucchini with olive oil, salt and pepper. Place in the oven for 25-30 minutes or until golden brown. Remove and set aside.
- Slice your cherry tomatoes and cucumber. Salt generously and leave to drain in a colander to remove excess water.
- Cook your orzo according to package instructions. Rinse and drain. Whisk the ingredients for the honey mustard dressing together and season with salt and pepper to taste. Toss the dressing with the orzo, then mix the marinated orzo with the rest of the ingredients, seasoning with additional salt, pepper or dressing if necessary.
- To make the salmon, combine the mustard, olive oil, honey and lemon juice and season with salt and pepper. Brush the mixture over your salmon and top with the chopped pistachios. Place in an oven preheated to 190C for 15 minutes or until cooked through (the internal temperature should reach 145F). Serve with the orzo salad.

I picked up this grass fed ribeye steak. I really wanted to make a sandwich with it and I'm glad I did. It actually took me a minute to figure out what I wanted to put in the sandwich. I came up with what you see here and honestly I loved it. It's got spice, acid, and the compound butter brings it all together. I hope you try this recipe out.

✨ Recipe ✨

✨Grass fed ribeye steak✨ season with salt and pepper, then give it a nice char. Then put it in the oven on broil for 5 to 10 min. Shut of the broil and leave it in there till you reach a temp of 110 to 115 for rare. ( Leave it in longer for a more done cook)

✨ Chimichurri ✨ chopped cilantro, parsley, garlic, red chilli, 1cup olive oil, 1/4 cup red wine vinegar.

✨Compound butter✨ butter, roasted garlic, red chilli's, salt and pepper.

✨Fresh red chilli's ✨

✨ Bread ✨ ciabatta (as usual)

Topped with some Cotija cheese skirt steak, set in a carne Asada marinade for 3hrs. SV 130/2hrs. Brushed with some more of that marinade and charred on the grill. Sliced thin and enjoyed in some great tacos

𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦:

𝗕𝗲𝗲𝗳 𝗽𝗮𝘁𝘁𝘆:
- 1/2 kg ground beef
- 1 minced onion
- 1/2 cup breadcrumbs
- 1/2 cup evap milk
- spice blend (garlic powder, onion powder, paprika)
- 1 whole egg
- salt & pepper to taste

𝗠𝘂𝘀𝗵𝗿𝗼𝗼𝗺 𝗴𝗿𝗮𝘃𝘆:
- 2 knobs butter
- 1 tbsp minced garlic
- 3 tbsp flour
- 4 cups beef stock
- 2 pouches Jolly Mushrooms

𝗙𝗿𝗶𝗲𝘀:
- 1 large potato (cut into long strips)
- salt
- aonori powder

𝗢𝘁𝗵𝗲𝗿 𝗶𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
- Sunny side up egg
- rice

𝗜𝗡𝗦𝗧𝗥𝗨𝗖𝗧𝗜𝗢𝗡𝗦:
- Combine ground beef, onions, breadcrumbs, milk, egg and spices. Mix well to combine and shape into patties of your desired size.
- In a pan fry patties on high heat until a nice crust forms. Turn the heat down and baste with butter until burger is cooked through. Set aside.
- In the same pan, add in butter and saute minced garlic and mushrooms until slightly brown, add in all purpose flour to make a roux and add in beef stock. Stir until thickened. Add in pepper/soy sauce/salt to taste.
- Chop potato into long strips. Rinse in cold water to remove excess starch and pat dry with paper towel. In high heat, fry potatoes for around 10-15mins or until golden and crispy. Remove from oil and immediately season with salt and aonori powder.
- Plate burger steak on top of fries, pour over gravy and serve with plain rice and sunny side up egg. Serve and enjoy!

20. Buffalo chicken sandwich

There is something about a buffalo chicken sandwich that gets me excited. Especially when you make everything from scratch. This blue cheese sauce is so good I could drink it ( don't judge me!!) I highly recommend you make this one🔥

✨ Recipe ✨

✨ Chicken thighs ✨ dredge in flour mixed with panko then in two beaten eggs, then back in flour mix. ( Press the flour into the chicken for a nice crispy finish.) Deep fry in oil at 300 to 350°F for 6 minutes then take out and let it rest for 1 to 2 minutes. Then return to the oil for 2 to 4 min or until golden brown.

✨ Buffalo sauce ✨equal parts truff sauce hot sauce and siracha, 1/4 stick of butter, 1Tbls Worcester sauce. Mix well

✨Blue cheese sauce✨ melt 2 Tbls of butter in a pan. Add 1 to 2 cups of heavy cream, add blue cheese of your choice. Mix for 5 to 10 min or until thickened.

✨Fried shallots✨ flour the shallots then dredge in egg. This gives it a blummin onion flavor and texture. Salt and pepper to taste.

✨Shredduce✨ iceberg lettuce shredded

✨Bread✨ ciabatta (my favorite)

21. ROASTED BELL PEPPER PASTA 🍝

| INGREDIENTS |
• 4 red bell peppers
• 1 cup cherry tomatoes
• 1 avocado oil
• S/P
• 1/2 shallot
• 4 garlic
• 1 tbsp Italian seasoning
• 1/2 tsp paprika
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp onion powder
• 1 tsp garlic powder
• 1/4 cup parsley, chopped
• 1/2 cup parmesan cheese, grated
• 1 fresh burrata

| THE DETAILS |
• season the red bell peppers and cherry tomatoes with avocado oil and s/p.
• roast for 30 mins at 350°
• transfer to a blender
• add garlic, shallots, Italian seasoning, onion powder, garlic powder and s/p.
• heat pan on medium high
• sauté the red bell pepper sauce with pasta
• tear burrata into pieces and add it onto the pasta
• sprinkle grated parmesan cheese and parsley.
• enjoy!

22. Zesty like Drake🫦

INGREDIENTS:
-0.15 lb of sushi grade salmon
-0.15 lb of sushi grade tuna
-salmon roe (ikura)
-low sodium soy sauce
-mirin
-sugar
-white sesame seeds
-green onion
-avocado
-Japanese cucumber
-kewpie mayo
-sushi (short-grain) rice
-sushi nori sheet
-star anise
-rice vinegar
-salt
-frying oil

RECIPE:
-Make marinade my mixing 2.5 tbsp soy sauce, 2.5 tbsp mirin, 2 tsp sugar, 1 tsp sesame seeds, and a small handful of green onions.
-Cut both salmon and tuna into cubes and allow to marinate in sauce for 30 mins, or until the rest of the prep is done, (store in fridge).
-To make the caviar, thoroughly rinse the roe and then make a brine with 3 cups of water and 1/2 cup of salt. Allow to brine for 3 minutes and then strain onto a paper towel.
-Wash 1-2 or so cups of rice under cold water until it runs clear, then add to rice cooker (1cup rice : 1.5 cups water). Season slightly with salt and add 1 star anise then cook until fluffy. When done, season with a splash of rice vinegar and a dash of sesame oil.
-Cut cucumber into spears while removing the seeds, (optional: peel skin, or carve a design on the skin as I did).
-Slice avocado into medium-thin slices.
-To assemble, apply warm rice to nori sheet and constantly wet your hand to prevent rice from sticking. Flip the sheet, then on the inside apply a squeeze of kewpie mayo, a couple spears of cucumber and a few slices of avocado. Then add desired amount of poke mixture and salmon caviar (just enough so that you can still close the burrito).
-Close with sushi roller, then wrap tightly in saran wrap then put in freezer for 10 minutes.
-Deep fry at high temperature until golden brown but still raw on the inside. (Another technique that works well is coating it in panko so that it fries much quicker to prevent fish from cooking).
-Cut at a diagonal and enjoy!

23. Katsu 🍛

Ingredients
2 pork chops (any protein works)
2 small potato
1 medium carrot
1 small white onion
1 scallion
Flour
2 beaten eggs
Panko breadcrumbs
White rice
2.5 cups water
Peanut oil for frying

Recipe
1. Peel and chop your carrots, potato and onion, and then slice your scallion for garnish.
2. Add oil to pan, add potato, carrot and onion and stir constantly for 3 min.
3. Cover with water and bring to boil, then lower heat and simmer for 15-20 min.
4. Meanwhile, pound out pork chops and season with salt and pepper, then throw in flour, beaten egg and finally panko.
5. Coat evenly and press firmly, then fry in peanut oil until golden brown.
6. Season cutlets to taste, serve with white rice, curry and top with scallion

27. My take on the classic Eggs En Cocotte, aka Baked Eggs, with mushrooms, tomatoes and smoky paprika butter sauce 🍳

Ingredients
(Makes 2)

Baked eggs:
4 eggs
4-5 button mushrooms, sliced
6 cherry tomatoes, halved
4 tbsp heavy cream
Cheese (Gruyere, Comté or Goat’s cheese, I used Feta), crumbled
Butter
Salt and pepper

Toppings:
4 tbsp butter
1 tbsp smoked paprika
Parsley
Bread (I used Ciabatta), toasted

Method:

1. Preheat oven to 180C / 350F.
2. In a pan over medium heat, sauté the mushrooms and tomatoes until cooked.
3. Butter the ramekins and divide the mushroom/tomato mixture evenly into each ramekin. Crack in 2 eggs each, divide the cream between the 2 ramekins and add as much as your heart can take.
4. Cover the ramekins and bake in a water bath for 12-15 minutes, depending on how cooked you like your eggs.
5. While the eggs are cooking, prepare the paprika butter sauce by combining butter and paprika in a pan and toast until fragrant.
6. To serve, uncover the eggs, drizzle with butter sauce and top with parsley and salt. Serve with toasted bread slices.

29. Caprese Chicken Cutlet Sandwich 🍅🌿

Fried chicken cutlet topped with heirloom tomatoes, fresh mozzarella and balsamic reduction on fresh baked focaccia with a pistachio pesto.

PISTACHIO PESTO 🌿:
-3 cups fresh basil leaves
-1/2 cup roasted pistachios
-1 Tbsp lemon juice
-1/4 cup grated parmesan
-1/4 grated pecorino Romano
-2 cloves garlic(minced)
-1 tsp lemon zest
-1/2 cup extra virgin olive oil
Method:
1. Place basil, pistachios and lemon juice in a food processor and pulse until blended.

2. Add parmesan, pecorino, garlic, lemon zest and extra virgin olive oil then continue to blend until smooth, adding more olive oil if necessary.
