1. Bit of white sauce?

2. Crispy Rice & Spicy Pan Seared Salmon & Marinated Peppers...

Ingredients:
•8 oz king salmon (sliced).
•2 thin cucumber slices per crispy rice bite.
•1 avocado (1 slice per bite).
•Sesame seeds.
•Scallions.
•8 squares crispy rice.
•Sautéed pepper topping.
•Spicy Mayo.

Rice:
•1 cup calrose rice (wash it really well, 3-4 times until the water is no longer white. Soak it for about 20-30 min and cook for 2 cups water, season it with 2 tbsp rice vin, 1.5 tbsp cane sugar, pinch of salt).

Marinated Peppers for Topping:
•2 caribe peppers (sliced).
•2 serrano peppers (sliced).
•4 scallions (the white part, sliced a bit thick).
•2 tbsp tamari.
•1 lime (the juice).

Spicy Mayo:
•2 tbsp japanese mayo.
•1 tsp mirin.
•1 tsp sesame oil.
•2 tbsp sriracha.

Directions:
1.- press the sushi rice onto a container over parchment paper and put in the freezer for 1 hr. Cut into 8 squares and fry in a preheated cast iron with about 1 inch of oil. Cook for 4-5 min per side or until golden brown.
2.- Season the salmon (salt and pepper) and cook in the same pan as the rice, give it a hard sear only on one side if you want it pink. About 1 min.
3.- Add the thin cucumber on the rice, follow with avocado, salmon, spicy mayo, pepper topping, scallions and sesame seeds.

3. An easy healthy snack 👏🏼

𝘿𝙚𝙩𝙖𝙞𝙡𝙨:
- 2 cups yogurt
- 2-3 tbsp sweetener depending how sweet you like it
- 1 tbsp vanilla extract

*sub vanilla yogurt

𝙏𝙤𝙥𝙥𝙚𝙙 𝙬𝙞𝙩𝙝:
- strawberries
- blueberries
- chocolate chips
- biscoff crumbles

𝘿𝙞𝙧𝙚𝙘𝙩𝙞𝙤𝙣𝙨:
1) mix yogurt ingredients together
2) Place on a silicon mat or parchment paper
3) Add toppings of choice and place in freezer for 3 hours

10. Hazelnut Pesto, Ricotta & Mushrooms 🍄 🍝

It’s the perfect sauce to be enjoyed just on its own with pasta, or in my case I added mushrooms for an extra umami punch 🤜

Ingredients for 2 people:
✨100gr of mushrooms
✨2 onions
✨50gr of hazelnut (or walnuts)
✨80gr of ricotta
✨100ml of wine
✨150gr of pasta
✨50ml of milk

⚡️clean and slice the mushrooms
⚡️chop your onions and sauté them in a pan until soften and brown, then add the mushrooms
⚡️pour the wine and simmer for 5 min on low heat
⚡️start preparing the pesto: crush your hazelnuts and blend them into a mixer with the ricotta, salt & pepper. Adjust with milk to make it creamier
⚡️cook the pasta until “al dente”. 2 minutes before the end of cooking time add it to the mushrooms sauce, turn off the heat and add the pesto
⚡️stir until very creamy

Ingredients
Heaps of Basil, like too much & 1 bunch mint leaves
Bread crumbs
4 Garlic cloves
Salt & Pepper
Parmigiano reggiano
Olive oil & Lemon
Burrata & your pasta of choice ❤️‍🔥
Two hot danish boys

Method
Boil and salt your water
Submerge and confit garlic on low heat for 15-20 mins or until soft
Cut & blend bread then toast in pan until golden
Cook pasta until al dente
Add basil, mint, lemon, S&P, olive oil, confit garlic, lemon juice, parmigiano and bread crumbs to blender and go to town until smooth and silky
Hot tip - add iced water to help with the texture
Mix pesto with pasta and top with more bread crumbs, parmigiano, buratta and olive oil 🥵
Finally watch the two hot danish guys enjoy the meal

16. Home Cooking Sessions: Confit Potato, topped with wagyu tartare

1. Chop 300g of beef tenderloin into small cubes - I used some A4 wagyu tenderloin - freeze it for 30 mins so it’s easier to cut!
2. Finely chop: half a shallot, 1tsp capers, 2 anchovy fillets, 4 cornichons, bunch of parsley, chives
3. Add this to a plate along with the beef + 1tbsp Dijon, olive oil, 1 egg yolk, Worcestershire, hot sauce, sea salt and black pepper
4. Mix together throughly and adjust seasoning to taste, then cover and refrigerate
5. For the potatoes: peel and thinly slice on a mandolin
6. Add to a bowl with sea salt, black pepper and 250ml of duck fat - mix thoroughly
7. Layer a parchment lined baking tray with the potatoes till you form a thick square, then cover fully with more parchment and bake at low heat - 115c for 3 hours
8. Allow to cool, then place in the fridge with some weight on the top to compress overnight - I used tomato cans
9. Remove from fridge, flip onto a flat surface and cut into even rectangular cubes with a sharp knife
10. Fry these 2 at a time in vegetable oil heated to 325f ~3-4 mins
11. Remove once golden and crispy, then season with sea salt and allow to cool slightly
12. Top the potatoes with your beef tartare and a generous dollop of oscietra caviar. I’ve tried and tested so many caviar varieties and found that Exmoor is one of the best around

An incredible bite. The potatoes are soft and fluffy in the middle with an insane crunch. The beef is buttery soft and tangy. The caviar is just bursting with umami and salty, earthy flavours. Uffff 🙅🏽‍♂️

17. GARLIC BREAD BAGEL BITES😍

🥯Slice 2 bagels into ‘chips’
🧄Add your chopped bagels to a bowl with 2 tsp each garlic granules and parsley, 1 tsp oregano and 75g parmesan
🥯Drizzle with olive oil - or even better, garlic oil - and toss together to coat
🧄Airfry at 170C for 5 mins until crispy (you may need to do in batches depending on the size of your airfryer)
🥯We served ours with a delicious garlic dip!
