1. Mediterranean Inspired Shawarma Bowl 🥙🍲
I’ve been obsessed with Shawarma for a while now! This Mediterranean inspired bowl topped with Shawarma spiced meat is perfect for a weeknight meal and crushes my constant craving for good Shawarma.
Ingredients:
Hummus
1 can of chickpeas, washed and drained
1/3 cup tahini
2 tablespoons olive oil
3 cloves garlic
Juice of 1 lemon
1 teaspoon ground coriander
½ to ¾ cup of water or reserved chickpea water
Salt and pepper to taste
Shawarma Spiced Meat
1 pound ground chicken (or ground beef, ground turkey, or even impossible meat)
1 medium white onion, chopped
4 cloves garlic, minced
1 tablespoon ground coriander
1 teaspoon ground cumin
½ teaspoon ground cinnamon
½ teaspoon ground allspice
½ teaspoon cayenne pepper
¼ teaspoon ground ginger
¼ teaspoon ground turmeric
Salt and pepper to taste
Directions:
Hummus
1. Combine all the ingredients into a food processor and blend until smooth. Adjust the smoothness by adding a tablespoon of water at a time.
You want to avoid the hummus being runny
Shawarma Meat
1. In a large skillet, heat up 2 tablespoons of oil and then brown off your ground meat.
2. When your meat is half way cooked, add your chopped onions and garlic and let everything cook down
3. Once your meat is about 75% cooked, add your spice blend and stir to coat all the meat
Bowl Assembly
1. Prepare basmati or long grain rice and fork the rice so it’s fluffy.
2. Top your rice with warm Shawarma spiced meat.
4. Optional but recommended - Top the entire bowl with pickled red onions, diced cherry tomatoes and thinly sliced cucumber.

13. Home Cooking Sessions: Butter Chicken. The most luscious chicken curry in a creamy tomato sauce
1. Slice chicken into bite-sized pieces. I used breast + thigh, about 550g
2. Add to a bowl with 150g full fat yogurt, 1tsp sea salt, 1tsp black pepp, 1tsp red chilli powder, 1tsp ground cumin, 1tsp garam masala, 1tsp turmeric, 2 cloves grated garlic, 2tsp grated ginger, juice of 1 lemon, 1tbsp melted ghee
3. Mix to combine and marinate for 4-24h
4. Remove chicken from fridge an hour before cooking, then lace with ghee and place under hot grill to char. You can use a pan too - just par cook till nicely golden brown
5. Add 2tbsp ghee to med-high pan + 1 diced red onion, 1tsp cumin seeds, 1tsp red chilli powder, 1tsp turmeric, 1tsp garam masala, 1 green chilli, 2tsp ginger garlic paste - sauté 5 mins
6. Add in a handful of cashews and toast ~1 min, then add 500g fresh diced tomatoes + 2tbsp tomato paste + chicken resting juices and fold together - cover & simmer on low heat for 45 mins till softened
7. Blitz this all together till smooth, the strain and add back to pan, checking for seasoning (salt, pepp)
8. Add in your chicken and let simmer on low till cooked through, then add 150ml heavy cream + a few knobs of unsalted butter
9. Once combined, finish by folding in 1tsp fenugreek leaves and topping with chopped coriander
10. Serve with warm white basmati rice + buttered garlic naan

serves about 4 people but i can’t believe how delicious this turned out and all in under 1 hour.
Start with 2 cups all purpose flour and 3 whole eggs. open a space in the middle of the flour and crack 3 eggs in, then add a little oil and mix until it’s all combined. then start kneading until you can form a ball then wrap with plastic wrap and let it rest for 20 minutes.
cut the dough in 4 pieces and run through the smooth side of the pasta maker. if you don’t have one don’t sweat it just roll it out and cut into noodles but the machine is super inexpensive. after rolling it through the smooth side fold and do it again two more times and keep them well floured so they don’t stick to each other, then roll it through the pasta cutting side to your desired thickness (these probably have actual names i just don’t know them).
salt a pot of boiling water and add the noodles for no more than 1-1.5 minutes.
in a separate pan add a little bit of olive oil and butter, add sliced sundried tomato’s from oil, chopped green olives, top with truffle oil or eat as is. this was absolutely 🔥 enjoy!
