It is delicious on porridge, in smoothies or eaten straight out of the jar!
250g hazelnuts, skins removed
90g white chocolate, roughly chopped
Pinch of salt
1. Roast hazelnuts at 170C for 10-12 minutes.
2. Let the hazelnuts cool slightly before adding to your blender. Blend for 2-3 minutes (scraping down as needed) to form a hazelnut butter.
3. Add the white chocolate and blend for another 1-2 minutes until smooth.
Note: if you have hazelnuts with skins on them, roast the hazelnuts at 180C for 15-18 minutes. Leave to cool slightly before putting them in a tea towel and rubbing them together to remove their skins.

2. BBQ chicken sandwich
I've had multiple requests for a BBQ chicken sandwich, so here is my first creation. It's honestly the best bbq sandwich I've ever had. This sandwich is simple, but the flavors will knock it out of the park for you, I guarantee it!
✨ Recipe ✨
✨ Split chicken breast ✨ dragged in egg then in a flour panko mix. Then deep fry at 300°F to 350°F for 6 minutes. take it out and rest. Put it back in at the same temp till golden brown.
✨ BBQ sauce ✨ 2 cups of ketchup, 1/4 cup apple cider vinegar, 1/4 cup Worcester sauce, 1/4 cup firmly packed brown sugar, 2 tbsp molasses, 2 tbsp old style mustard, 1 tbsp Sriracha, 1/2 teaspoon black pepper. Add all ingredients into a pot. Low boil while stirring for 10 to 15 min, till sugar has melted and sauce has thickened to your liking.
✨ Slaw ✨ Finley cut red and green cabbage, slice a carrot into strands, and put it into a bowl. Squeeze a whole lemon onto the slaw. Then refrigerate for about an hour. (This is a simple slaw but it will bring that acid to your sandwich that is sweet and spicy already)
✨ Bottom spread ✨ mayo mixed with old style mustard

3. Spicy Chickencado
Back with another one, this time I replaced tuna with chicken — made on thinly sliced sourdough two heaping tablespoons of whipped chicken (recipe below), 1/2 an avocado, sliced tomato, hot sauce, arugula and a thin pesto vinaigrette (recipe below)
Whipped Chicken:
Add the following to a food processor - 6oz chicken, 1/2 cup avo mayo, 1/2 cup diced red onion, 1/3 cup chopped celery rib, 1/4 cup chopped pickles, 1/2 a squeezed lemon, parsley, salt, pepper, paprika + red pepper flakes - pulse for a few times for about 5 seconds each time until you reach the preferred consistency
Basil Vinaigrette:
Add to a food processor or blender — 2 handfuls basil, 1/2 cup olive oil, 1/4 cup red wine vinegar, 1 garlic clove, red pepper flakes, salt then strain so that it’s a thin pesto - basil sauce

4. Cinnamon buns 🙌🏽
Recipe ⬇️
Dough
1 & 1/4 cup half and half cream
1/2 cup sugar
2 eggs
1/3 cup melted butter
2.5 tsp instant yeast
3.5-4 cups flour
Cinnamon Sugar:
1 cup brown sugar
3 tbsp cinnamon
1 tsp salt
Frosting:
1/2 block cream cheese (room temp)
1/2 stick butter (room temperature)
1 cup icing sugar
1/2 tsp vanilla extract
Splash of milk (optional)
Directions ⬇️
1. Combine wet and dry ingredients to form a dough
2. Knead in stand mixer for 5 minutes
3. Transfer dough to work surface and form into a ball
4. Place dough in oiled large bowl, cover and rise in a warm place for 1-2 hours
5. Roll dough into a long rectangle
6. Add softened butter and cinnamon sugar filling to the dough
7. Roll into dough into cinnamon roll log
8. Cut into pieces using floss
9. Place in buttered baking dish, cover and rise for 1-2 hours
10. Bake cinnamon rolls at 400 degrees for 18-20 minutes

5. Braised chicken with Daikon and Sweet Potato is sooooo good
Ingredients:
• 2 1/2 pounds bone-in, skin-on chicken thighs (6 to 8 thighs)
• 1 tablespoon, avocado oil
• 1 medium yellow onion, roughly chopped
• 3 cloves garlic, minced
• ¼ cup red miso
• 2 tbsp tomato paste
• 1 small/medium sized daikon, cut into half medallions
• 2 sweet potatoes, peeled and cut into chunks
• 2 tbsp gochugaru
• 1 tbsp mushroom powder
• 1 tbsp soy sauce
• 2 bay leaves
• ½ cup scallions, thinly sliced
• 1 quart chicken stock
• 1-2 tbsp of cornflour, for slurry
• rice to serve
Steps:
• Preheat the oven to 450°F (232°C) with the rack in center position.
• Warm a dutch oven over med/high heat along with avocado oil. Place your chicken skin side down and cook for about 6 minutes or until nicely browned, flip and brown the other side for 3ish minutes.
• Remove the chicken and add in your onions for about a minute followed by your garlic. Cook for another minute and mix in miso paste and tomato paste. Add in potatoes and daikon along with stock, gochugaru, mushroom powder and soy sauce. Mix well, scraping the bottom of the dutch oven. Add chicken back on top, trying to keep the skin above the cooking liquid. Place in your oven for about 45 minutes, make sure chicken is fully cooked @165°F.
• Remove the chickens and season the mixture with salt to taste and thicien with a cornstarch slurry to desired consistency.
• Garnish with scallions and enjoy!

7 egg yolks
1 1/2 cups milk
1 cup heavy cream
3/4 cup sugar
2 tsp rum
1/2 tsp salt
1/2 tsp nutmeg
6 croissants, torn into 1-inch pieces
1 cup semi-sweet chocolate chips
1/2 cup broken up Ghirardelli chocolate bar (or just use more chips)
Preheat oven to 375F. Coat a 13x9 baking dish with non-stick spray. Add croissant pieces to dish.
In a large bowl, whisk together the egg yolks, milk, cream, sugar, rum, salt, and nutmeg until combined.
Pour custard and 1 cup chips over croissants making sure all of the bread pieces are moistened.
Cover and refrigerate overnight.
The next morning Sprinkle the top with the remaining chocolate.
Bake for 45-50 minutes or until the pudding has set and a toothpick inserted in the center comes out clean

13. Potato curry
Ingredients:
• 3-5 lbs yukon gold potatoes, peeled and cut into 2 inch chunks
• 1.5” fresh ginger, peeled and sliced thin
• 1 medium shallot, minced
• 5 medium cloves of garlic, minced
• ½ cup cilantro, chopped fine
• 2 tbsp whole dried cumin
• 1 tbsp whole dried coriander
• ½ tbsp ground turmeric
• ½ cup red miso paste
• 1 tbsp soy sauce
• 1 tbsp gochucaru
• 1 qt vegetable stock
• 1 stick of cinnamon
• Juice from 1-2 limes
• 2 tbsp fish sauce
• 1 tbsp flour, for slurry
• 1 can full fat coconut milk
• 2 cardamom pods
• 3 tbsp ghee
Steps:
• Heat a pan over medium heat. Add coriander, cumin, cinnamon and ginger. Stir around until aromatic and toasty, adjusting heat to prevent scorching.
• Set the cinnamon stick aside and place the mixture into a mortar and pestle and pulverize until homogenized.
• Heat medium sized dutch over medium-high heat. Add ghee, cardamom pods, cinnamon, garlic and shallots, stirring frequently for 2-3 minutes. Add in coconut milk and stir. Bring the mixture to a simmer and stir in spice mixture along with turmeric and red miso paste. Stir in vegetable stock, soy sauce and gochugaru. Bring to a simmer and add in potatoes.
• Cook at a steady simmer until the potatoes are cooked, 30ish minutes. For more texture, cook for an extra 20-30 minutes, stirring frequently. Half way through remove the cinnamon stick.
• Make a slurry with your flour and a few tablespoons of water and stir into your pot along with lime juice and fish sauce. Plate and garnish with cilantro.

Brief recipe below:
Ingredients
• 1 shallot, roughly chopped
• 6 cloves garlic, peeled and ends trimmed
• 4-6 japanese or Italian eggplants
• 6 thai chilis, ends trimmed and roasted and roughly chopped
• 1 ½ inch knob of ginger, peeled and sliced into medallions
• 1 cup fresh mint, leaves separated and finely chopped
• 1 cup fresh scallions, sliced thin
• 2 tbsp whole cumin
• 2 tbsp whole coriander
• juice from 1 whole lemon
• 1 cup olive oil, add more as needed
• salt and pepper
• good bread for serving
Steps
1. Place eggplants on a sheet pan and poke all over with a fork. Set oven’s broiler to high and place the sheet pan inside, turning every bit until fully cooked. Set aside to cool.
2. Combine ginger, coriander and cumin in a pan over medium heat until fragrant and lightly smoking. Stir frequently to prevent scorching.
3. Transfer to a mortar and pestle and smash into a rough powder. Add garlic, half your lemon juice, shallot and salt. Continue smashing into a rough paste. Slowly mix in 2 tbsp of olive oil. Set aside for later.
4. Slice eggplants in half horizontally, from root to tip and scoop out as many of the seeds as you can. Pull the remaining eggplant from its skin and set aside.
5. In a large bowl, combine the eggplant flesh, chilis, chives, half your mint, the remaining lemon juice, and your herb and spice paste. Whisk the mixture together while gradually integrating olive oil. Season to taste with salt and pepper.
