Ingredients:
• 4 tablespoons (60ml) extra-virgin olive oil, divided
• 1 teaspoon coarsely ground black pepper, to taste
• Kosher salt, to taste
• 1/2 pound (225g) spaghetti
• 2 tablespoons (30g) unsalted butter
• 2 ounces Pecorino Romano cheese (about 1 cup; 55g), very finely grated on a Microplane or the smallest holes of a box grater, plus more for serving
Steps:
• Heat 3 tablespoons olive oil and about a teaspoon of black pepper in a medium skillet over medium-low heat until ingredients are fragrant and pepper is barely starting to sizzle.
• Place spaghetti in a large skillet and cover with water. Season with salt and bring to a boil, prodding spaghetti occasionally to prevent it from clumping. Cook until spaghetti is al dente.
• Transfer 2 to 3 tablespoons of pasta cooking water to the skillet with the olive oil/pepper mixture. Stir in butter and then add in pasta.
• Add cheese and remaining olive oil to the skillet and stir with a fork until cheese is completely melted. Season to taste with salt and more black pepper. Serve immediately, passing extra grated cheese and black pepper at the table.

Relish a delectable fusion of savory beef, sweet sautéed onions, melted cheese, and a tantalizing sauce, all topped with crispy bacon. Prepare for a flavor explosion!
BEEF COMPONENTS:
🥩2-3 lbs Beef
🧀6-8 slices American Cheese
🧂1.5 tbsp Coarse Salt
🌶️1.5 tbsp Ground Black Pepper
🧄1.5 tbsp Garlic Seasoning
🥓Premium Bacon Strips
SAUCE COMPONENTS:
🍅2 tbsp Tomato Sauce
🌭2 tbsp Yellow Mustard
🥪2 tbsp Creamy Mayo
🔥1.5 tsp Sauce
ONION COMPONENTS:
🧅1 Large White Onion, finely sliced
🍚1.5 tbsp Caramelizing Sugar
🧈1.5 tbsp Pure Butter
🥃 2 oz Fine Bourbon
Start by molding the beef into manageable squares, around ⅓ to 1/4 lb per piece. Concurrently, whip up a tasty sauce by merging the listed ingredients in a different container. Keep the sauce cool until it’s needed.
On a hot skillet, liquefy some butter and toss in the finely cut white onions. Gently fry the onions on medium flame for close to 10 minutes or until they begin to adopt a golden hue. Introduce the caramelizing sugar and a dash of bourbon (apply carefully) into the mix. Allow the onions to simmer until they achieve a soft texture. Set the skillet aside for the onions to cool.
It’s burger time! Use the same skillet or get a new one and heat it. Sear the meat squares for roughly 2 minutes on one side till they get a caramel-like crust. Flip them over and fragment the meat slightly to expose more surface. After another 2 minutes, turn them once more. Layer each with the golden onions and then with a cheese slice.
Construct your mouth-watering patty melt: smear a generous amount of your chilled sauce on one slice of toasted bread. Stack 1-2 meat squares on it, and smear some more sauce on the other slice. Join the slices, present, and enjoy the culinary masterpiece you’ve crafted!

19. Fermented Passionfruit and Fresno Chili Hot Sauce is really really tasty
This is just about a year old and wanted to share since Passion Fruit is back in season! It was my first attempt at fermenting this fruit and it was super tasty. Pretty spicy but also very pleasantly, nothing that lingered an uncomfortable amount of time.
Ingredients:
• 6 passion fruit, pulp and juice only
• 12 - 14 fresno chilis, stemmed
• 1 garlic clove, peeled and smashed
• ½ cup distilled white vinegar
• ½ cup olive oil
• ½ tbsp coriander seeds
• salt, 3% by weight
• water (enough to cover everything)
Steps:
• Combine all of your ingredients in a fermentation vessel and ensure that all of the salt has been dissolved. Consider mixing the water and salt separately, before adding in the other ingredients.
• Cover and let sit at room temperature in a darker area without direct sunlight for 5-7 days.
• Check the mixture every day to release pressure build up, look for mold and check for the presence of bubbles (indicating fermentation is taking place).
• After fermentation is complete, add everything into a blender or food processor and blend thoroughly.
• Strain the mixture through a cheese cloth and add the strained contents back into the blender. Blend thoroughly and then slowly add in the vinegar and the olive oil. Check the mixture with a ph strip, looking for a number under 3.4. Add more vinegar to lower the number. Enjoy!
