combine until the mixture is well combined and turns into a dough. Cover the dough with a warm towel and let it sit for 30 minutes.
once rested, shape the dough into small balls, put back into the bowl, & (re) cover with a new warm towel for 15 minutes. during all of this, make sure to flour your surfaces.
set out a pan over medium-ish heat. roll out your balls on a floured surface and let each one cook for 30 seconds to a minute on each side. but you do need to keep an eye on them.

3 tablespoons Butter
1 large Carrot - diced
1 large Onion - diced

2 tablespoons Dry Jerk spice or Cajun
3 litres Chicken stock or broth
2 sprigs Thyme
2 Bay leaf
1 tablespoon chopped Parsley Scotch bonnet
Salt and pepper to taste
2 tablespoons Parsley - chopped
2 tablespoons Parmesan - grated
Method:
Season your chicken breast on both sides. In a large stainless steel pan sear off your chicken 2 minutes per side and add them to a large pot.
Fill pot with chicken stock and place on medium heat. Once liquid begins to boil turn heat off and allow to cool.
Put a large thick bottomed pot on medium heat and add your butter. Next sweat off all your vegetables in the butter for 3-4 minutes.
Then add your garlic and continue to sweat for another 2-3 minutes. Add thyme, bay leaves, and scotch bonnet pepper.
Remove chicken breasts from stock and set aside. Pour in your stock to the vegetables and bring this to a simmer. In a separate pot cook your pasta noodles.
Once chicken has cooled slightly but still warm shred by hand into a large bowl. Add chicken and pasta into your pot and stir to incorporate. Taste for seasoning and adjust accordingly. Finish with parsley and Parmesan cheese.

Ingredients:
* 3 lbs chicken thighs, boneless and skinless
* 1 can of chipotle peppers in adobo sauce
* 3 tbsp avocado oil
* 1 tbsp onion powder
* 1 tbsp garlic powder
* 1 tbsp ground cumin
* 1 tbsp smoked paprika
* 1 tbsp dried oregano
* 2 tsp salt
* 2 tsp pepper
Instructions:
1️⃣ Add chicken to a bowl with oil, seasonings, and chipotle peppers. Mix well.
2️⃣ Marinate for at least 2 hours.
3️⃣ Grill until internal temp reaches 165°F.
4️⃣ Let rest for 10 minutes before cutting.
Cilantro Lime Rice 🍚🌿🍋
Ingredients:
* 3 cups uncooked white rice
* 5 cups chicken bone broth
* 1 dried bay leaf
* 3 limes
* ½ cup chopped cilantro
* Salt to taste
* 3 tbsp avocado oil
Instructions:
1️⃣ Wash rice and add to rice cooker with broth and bay leaf. Cook until done.
2️⃣ Fluff rice and transfer to a bowl.
3️⃣ Add oil, half the cilantro, lime juice, and 1 tsp salt. Mix well. Adjust flavors as needed.
Seasoned Black Beans 🫘🍃
Ingredients:
* 2 cups dried black beans
* 4 cups water
* 1 tbsp tomato paste
* 2 tsp onion powder
* 2 tsp garlic powder
* 2 tsp paprika
* 2 tsp ground cumin
* 2 tsp dried oregano
* 1 tsp salt
* 1 tsp black pepper
* 1 dried bay leaf
Instructions:
1️⃣ Wash beans and add to an Instant Pot.
2️⃣ Add seasonings and mix well.
3️⃣ Pressure cook for 50 minutes.
Pico de Gallo 🍅🌿
Ingredients:
* 3 roma tomatoes, diced
* ½ red onion, diced
* 1 jalapeño, diced
* Salt, cilantro, and lime juice to taste
Instructions: Combine all ingredients and adjust flavors to taste.
Corn Salsa 🌽
Ingredients:
* 2 cups frozen white corn
* ½ red onion, diced
* 1 jalapeño, diced
* Salt, cilantro, and lime juice to taste
Instructions: Mix all ingredients in a bowl and adjust seasoning as needed.
Fresh Guacamole 🥑
Ingredients:
* 3 ripe avocados
* ½ red onion, diced
* 1 roma tomato, diced
* 1 jalapeño, diced
* Salt, cilantro, and lime juice to taste

23. Tomato Ricotta Pasta with Basil Parmesan Oil 🍝✨
A fresh, creamy pasta dish inspired by the viral roasted tomato feta pasta—perfectly balanced with the fragrant addition of basil parmesan oil. Quick to make and absolutely delicious!
Ingredients
Pasta:
* 4 cups cherry tomatoes (20 oz)
* 1/4 cup olive oil
* 1 tsp kosher salt
* 1/4 tsp black pepper
* 1 cup ricotta (8 oz)
* 2 garlic cloves, finely chopped
* 8 oz rotini or pasta of choice (1/2 a package)
Basil Parmesan Oil:
* 1/2 cup fresh basil leaves (.6 oz), finely chopped
* 1/4 cup olive oil
* 2 tbsp grated parmesan
* Small pinch kosher salt
🌱 Vegan Option: Omit ricotta and replace parmesan with nutritional yeast.
Instructions
[Step 1: Prep the Oven]
Preheat your oven to 400°F.
[Step 2: Roast the Tomatoes]
In a 9x13” baking dish, combine the cherry tomatoes, olive oil, salt, and pepper. Toss to coat evenly. Add dollops of ricotta over the tomatoes. Bake uncovered for about 35 minutes until the tomatoes are blistered and tender.
[Step 3: Cook the Pasta]
Bring a medium pot of generously salted water to a boil. Add the rotini and cook according to package directions until al dente. Drain and set aside.
[Step 4: Make Basil Parmesan Oil]
While the tomatoes roast, combine chopped basil, olive oil, parmesan, and a pinch of salt in a small bowl. Mix well and set aside.
[Step 5: Combine Ingredients]
Once the tomatoes are done, immediately add the finely chopped garlic and cooked pasta to the baking dish. Stir until the sauce evenly coats the pasta.
[Step 6: Plate and Serve]
Transfer to plates and drizzle generously with the basil parmesan oil. Serve warm and enjoy!
