- olive oil

Directions:
- start by chopping the veggies. Saute the onion in a drizzle of olive oil.

- keep cooking the tomatoes on medium low till dissolved.

5. Cauliflower steaks with pesto, mozzarella and tomatoes 🍅

Ingredients:
✔️ small cauliflower
✔️ basil pesto
✔️ 150 g mozzarella ball
✔️ a few cherry tomatoes
✔️ grana padano to sprinkle on top
✔️ salt
✔️ freshly ground pepper

Basil pesto:
Cut 3-4 pieces of slices about 3 cm thick from the middle part of the cauliflower.
Season each slice with salt and freshly ground pepper. Then place them on a baking tray lined with baking paper. Rub the top of each piece with 2-3 teaspoons of pesto. Bake in an oven preheated to 200°C, convection for 15 minutes
After this time, remove and spread sliced mozzarella on each piece (drain the cheese on a paper towel). Then arrange a few cherry tomatoes cut in half. Sprinkle with grana padano cheese and put in the oven preheated to 220°C, convection + top heat for 10-15 minutes. After taking it out, you can drizzle it with pesto.

🤌The crusty herbed exterior of this tender chicken is thanks to the initial pan-searing of the seasoned breast.

Ingredients:
-2 chicken breasts boneless
-1 tomato sliced thinly
-4 slices fresh mozzarella cheese or regular mozzarella slices
-10-15 fresh spinach leaves
-1 teaspoon dried oregano
-Salt and pepper to taste

Step 1: Preheat the oven and slice each chicken breast horizontally most of the way through the breast. Start with the thickest part first, being careful not to slice all the way through. You want to create a pocket. Season with salt and pepper.

Step 2: Place 2 slices of tomato, 2 slices of mozzarella cheese and of a few baby spinach leaves into each chicken breast pocket.

Step 3: Place 4 toothpicks into the open side of the chicken diagonally to keep the filling from falling out.

Step 4: Heat 2 teaspoons of olive oil over medium-high heat. Add the chicken and pan sear for 2 minutes on each side. (careful when flipping)

Step 5: After pan searing, each chicken breast in casserole dish. (if using cast iron pan, you can place it directly in the oven)

Step 6: Preheat oven to 400°F/204C

Step 7: Place the casserole dish in the preheated oven and cook for an additional 15 minutes, or until the chicken is cooked no longer pink in the middle.

☝️How do you keep chicken breast moist when cooked?

Make sure your chicken breast is well-seasoned before adding it to the pan. Cook each side evenly until brown. Once done, bake the chicken breast in a pre-heated oven until juices run clear. The crispy skin from the sear will help keep juices intact while baking cooks the insides through without drying them out.

4. Sprinkle baking soda on towels before putting in wash to absorb odours and bacteria.
5. Boiling water eliminates weeds.
6. Mix 1 cup baking soda, 2 tablespoons liquid soap and 1/3 cup of warm water in an airtight squeeze bottle for a powerful cleaning paste.
7. Capture fruit flies with a mixture of vinegar and liquid soap in a shallow dish next to your fruit bowl.

10. Mediterranean Chicken & Rice Bowl 🍚

This makes 4 servings at 480 calories + 42gprotein a serving!

I’ve lost 100lbs and what’s helped me most is making super flavorful versions of my favorite foods with more protein. I use lots of spices, fresh herbs, & lemons to make things taste GOOD.

Heres how to make it:
1. Place 4 bone-in skin-on chicken thighs in a bowl. You can also use skinless. I like to keep the skin on during the cooking process to keep things juicy, then remove it before eating.
2. Drizzle 2 TSP olive oil, season with a couple generous pinches of salt, fresh cracked pepper.
3. Process together 1 large handful basil, 4-5 garlic cloves, the juice of 1 large juicy lemon, 2 tbsp tomato paste, 1 tbsp dijon mustard, salt, & pepper. Process really well in a food processor.
4. Add the processed mixture to the chicken, toss the chicken really well, then for best results let this sit for 2-6 hrs to marinate. Or you can proceed to next step if you want to eat right away.
5. When you’re ready to eat, preheat oven at 425F. Bring the chicken out of the fridge and let sit for 30 mins to come up to room temp. Grab a cast iron pan, spray with avocado oil, place the chicken at the base along with diced red onion.
6. Pop into the oven for 35-39 mins. Time varies by oven and thickness of your chicken.
7. Make a simple salad by mixing 1/2 finely diced red onion, 2-3 diced Persian cucumbers, 1 diced green pepper, 3-4 tablespoons freshly chopped parsley, 1 ounce of crumbled feta, 1 tablespoons olive oil, the juice of 1/2 lemon, 1.5 tsp sumac, a generous pinch of salt and pepper. Give it a good mix, taste, and adjust.
8. Make your favorite rice according to instructions. To keep this lowcarb and high protein.
9. Remove pan out of the oven, top with cooked rice & salad, top with 4-5 tbsp thick yogurt, and dust with sumac.

12. Kisir - Turkish Bulgur Salad 🍋🫒🪴

Ingredients:
250g bulgur
200ml hot water
Olive oil
Salt, Pepper
1-2 tbsp tomato paste
1 red onion, finely chopped
3-4 mini cucumbers, diced
3-4 tomatoes, diced
2 tbsp pomegranate syrup
Pomegranate seeds
Juice of 1 lemon
1 tsp chili flakes
1 tsp paprika powder
1/2 tsp cumin
Chopped dill
Chopped mint
Salad leaves

Instructions:
Place the bulgur in a bowl and pour hot water over it. Cover and let it sit for 10-15 minutes to swell.
Sauté the chopped onions in a pan, add paprika powder, then remove from heat and add the tomato paste, being careful not to burn it.
Mix the tomato-onion paste with the bulgur and add olive oil and pomegranate syrup.
Add the diced tomatoes, cucumbers, chopped mint, dill, and pomegranate seeds to the mixture. Squeeze the juice of half a lemon over it.
Season with salt, pepper, chili flakes, and cumin. Stir well to combine.
Let it sit for another 20 minutes to allow the flavors to meld.
Serve the bulgur salad in lettuce leaves and garnish with fresh herbs and pomegranate seeds.

𝘿𝙚𝙩𝙖𝙞𝙡𝙨: (I made 3 servings)
- 2 cups frozen watermelon
- 1/2 cup frozen raspberries
- 1/2 cup frozen strawberries
- 2 tbsp cup milk (of choice)
- 1 tbsp lemon juice

𝘿𝙞𝙧𝙚𝙘𝙩𝙞𝙤𝙣𝙨:
1. Chop watermelon, place in a container, and leave in the freezer overnight (or at least 6 hours)
2. Add watermelon, raspberries, strawberries, lemon juice, and most of the milk to a blender. Reserve a small amount of the milk.
3. Begin blending the ingredients. Gradually add the reserved milk to get your desired consistency, being careful not to make the mixture too liquidy.

16. NEED EASY FLAVORFUL PROTEIN? TRY THIS OVEN ROASTED CHICKEN 🍗

This is how you can make an incredibly flavorful, juicy chicken right in your home oven. All this needs is 5 minutes of prep, some time to soak in the flavors, and you just pop it all in the oven for easy meals all week long.

Here is how to make it:
1. Start with 2.5 lbs boneless chicken thighs. Trim off any excess fat to the extent you’d like, completely optional. Add it to a large bowl.
2. Let’s infuse the chicken with a ton of flavor - start by processing 1 medium yellow onion in a food processor. Add it to the chicken.
3. Add the juice of 1 lemon, 2 heaping tbsp tomato paste, and 2 heaping tbsp greek yogurt. This will really help tenderize the chicken further and add great flavor.
4. Lastly, the dry spices to bring everything together. Season with 3-4 pinches of salt, fresh cracked pepper, 1 tbsp thyme, 1 tbsp garlic powder, 1 tbsp urfa pepper (or Aleppo pepper or any other chili flakes).
5. Mix it super well, and ideally let this marinate for 2-6 hours, but even better overnight, but if you want to make it right away, you can.
6.When you’re ready to make it, preheat your oven to 425F. Remove chicken from the fridge and let it come up to room temp (about 30 mins) before popping in the oven. then pack the marinated chicken tightly into a bread loaf pan (about 8.5x4.5x2.5). Pop it into the oven for 50 mins at 425F.
7. Remove the chicken from the oven, carefully tilt the pan onto a glass bowl or container to remove the excess juices. Pour the juices over the chicken, then tilt the pan again onto the glass bowl or container to remove the excess juices and set the juices aside.
8. Flip the chicken onto a cutting board and cut into thin slices or strips.
9. Serve it up however way you want - as is, on top of a salad, on a power bowl, whatever! This stays well in the fridge in an airtight lid for 4-5 days.

I made a delicious lowcarb high protein chicken bowl with lowcarb rice and it was SO Good.

17. CARNITAS TACOS ✨🌮

Ingredients:
4 pounds boneless or bone-in pork butt/shoulder
1 large onion, thinly sliced
Braising Liquid:
2 cups chicken bone broth
1/2 cup fresh orange juice
1/4 cup fresh lime juice (about 2 limes)
1 teaspoon dried oregano
1 teaspoon cumin
2 bay leaves
5-6 cloves of garlic, minced
For serving: corn tortillas, guacamole, fresh lime, fresh chopped cilantro

Directions:
Preheat your oven to 325.
Whisk together the braising liquid ingredients, except for the bay leaves, in a small bowl and set aside.
Cut your pork into large (4”) chunks and season generously with salt and pepper on all sides
Place pork in large dutch oven or casserole dish and scatter the chopped onions on top.
Pour the braising liquid over the pork and onions and nestle the bay leaves into the liquid.
Cover and braise in the oven for (1) hour per pound of pork
Remove the pork from oven after cooking and raise the oven temp to 425.
While oven is coming to temperature, shred the pork. (You will notice that most of the braising liquid was absorbed into the pork. If there is still quite a bit of liquid then you can remove some of it so that the pork can crisp up in the next step)
Leaving the cover off, return the pork to oven for 25 minutes. Start checking the crispiness around 18-20 minutes to ensure the pork gets crispy without totally drying it out.
Serve on corn tortillas with fresh guacamole, cilantro, and a squeeze of lime.

-2 cups strawberries, chopped
-1 cup greek yogurt or coconut yogurt
-1 tsp vanilla extract
-3 to 4 tbsp honey or agave
-1 cup chocolate chips

in a bowl, whisk together the yogurt, honey, and vanilla, then fold in the chopped strawberries. scoop the strawberry yogurt mixture into clusters and place them onto a parchment paper lined baking sheet. freeze for 1-2 hours or until frozen. in a small bowl, melt the chocolate chips with the coconut oil. once they are frozen, coat the clusters in the melted chocolate. place back onto baking sheet and into the freezer for another 10 min.

For the Sauce:
▪️1 Tbsp Soy Sauce
▪️1 Tbsp Dark Soy Sauce (or sub regular soy sauce)
▪️3 Tbsp Oyster Sauce
▪️1 Tbsp Fish Sauce
▪️2 tsp Sugar
▪️1/4 Cup Water

For the Stir Fry:
▪️2 Tbsp Avocado Oil (or other neutral oil)
▪️2 Large Shallots, sliced thin
▪️4 Cloves Garlic, minced
▪️1 Fresno Chili (not very spicy), sliced in thin strips
▪️1 Thai Chili (spicy), sliced in thin rounds
▪️1 lb. 96/4 Ground Chicken
▪️2 Scallions, sliced
▪️2 Cups Fresh Basil or Thai Basil Leaves
▪️4 Cups Cooked White Rice, for serving

For the Eggs:
▪️1 Tbsp Avocado Oil (or other oil)
▪️4 Eggs

🌱Vegan Modification: Sub in firm tofu for chicken (crumble it up with your fingers), vegan oyster sauce for oyster sauce, and leave out the fish sauce and eggs

Directions:
1️⃣ Mix together the ingredients for the sauce and set aside.
2️⃣ In a large wok or pan preheated over medium-high heat, add the avocado oil and shallots. Stir fry for 2-3 mins until tender, then add the garlic, fresno chili, and Thai chili. Stir fry for 1 more min.
3️⃣ Add the ground chicken and stir fry for 3-4 mins until cooked through, breaking it up into small irregularly sized pieces.
4️⃣ Pour on the sauce and add the scallions. Stir fry 2-3 mins until the sauce coats the chicken and gets heated through, then turn off the heat and stir in the basil. Cover to keep warm while you fry the eggs.
5️⃣ In a separate pan preheated over medium heat, add oil to coat the pan then add the eggs. Fry eggs sunny side up with a sprinkle of salt until the white is set but the yolk is still runny. Tilt the pan, scoop up the hot oil with a spoon, and baste the top of the egg white to help it cook through.
6️⃣ Serve the basil chicken over warm rice with fried eggs on top and enjoy!

23. The Tastiest Breakky Egg Muffins 🤤🥚

These are so delicious and make for the perfect little snack! You could definitely mix it up and add different ingredients, I sort of just used what I had 🙌🏼

Ingredients (to make 6 individual serves):
6 x tsp olive oil
6 x eggs
30g x mozzerella cheese
1 x tomato (diced)
1 x cup diced spinach or kale
Salt, pepper and mixed herbs

Method:
Preheat your oven to 190 degrees celsius.
Add 1 tsp of olive oil to each of the pockets in your muffin pan. Crack an egg into each and add your seasonings and herbs.
Add in your tomato and kale. Top with cheese.
Mix everything together.
Bake in the oven for 15-20 minutes or until cooked.
Let cool and store these in an air tight container in the fridge for 3-4 days!
Enjoy as is or top with your favourite sauce.

Ingredients:
🥬Beets: 1-2 pcs.
🥬Mixed salad greens with arugula
🥬Red onion
🥬Cream cheese
🥬Strawberries

For the dressing:
🍯Vegetable oil: 2 tbsp.
🍯Dijon mustard: 1 tsp.
🍯Whole grain mustard: 1 tsp.
🍯Garlic: 1 clove
🍯Honey: 1 tsp.
🍯Red wine vinegar: 1 tsp.
🍯Salt, pepper

Preparation:
🥬Drizzle the beets with oil, sprinkle with salt and wrap in foil. Roast for 50-60 minutes at 190 degrees (380F). Then cool completely without unwrapping the foil. Cut into desired shapes.
🥬Add the mixed salad greens, red onion, and honey-mustard dressing.

25. Pasta with Mozzarella and Cherry! 🍝

I put cherry and mozzarella inside the pasta, poured tomato sauce with basil, cream and chicken broth (you can just water) so that the pasta was completely covered. I added cottage cheese and mozzarella on top - it doesn’t happen much 😁

Bake for 40 minutes at 180 degrees.

It turned out very tasty. You can add separately cooked seafood or meat to the pasta!
