To make the same strawberry clusters mix together:
160g Coconut Yogurt + Protein in strawberry flavour
80g Coconut Yogurt in vanilla
200g fresh strawberries cut into small pieces
2 tablespoons maple syrup
On a baking paper add 2 tablespoons of the mixture to form clusters.
Place in the freezer for 2 hours
Dip each frozen cluster in melted white chocolate mixed with 1 tablespoons of green matcha powder and sprinkle strawberry powder on top and return to the freezer for 30 minutes.
Store in the freezer.

🍝 Ingredients

1 lb pasta of choice

5–6 cups chicken broth

1/3 cup sun-dried tomatoes with oil

1 lb chicken breast or thighs

1 tbsp butter
-
1/2 yellow onion, diced
-
1 head garlic, minced
-
Seasonings: salt, pepper, paprika, oregano, Tony’s seasoning — to taste

2 cups heavy cream
-
1–2 cups cooked broccoli
-
2 handfuls spinach
-
2 cups shredded mozzarella cheese
-
2 cups freshly shredded parmesan cheese
-
1/2 cup pesto (optional, to taste)
-
Fresh parsley (for garnish)
🍳 Instructions – One-Pot Version
1. Preheat Oven
-
Set your oven to 350°F (175°C).
2. Cook the Chicken
-
In a large oven-safe skillet or Dutch oven, heat 1 tbsp of oil from the sun-dried tomatoes over medium-high heat.

Add chicken and cook until no longer pink. Remove from the pan, rest for a few minutes, then chop into bite-sized pieces.
3. Sauté Aromatics
-
In the same pan, melt 1 tbsp butter.

Add in seasonings and stir for 30 seconds to toast.

Add diced onion and sauté for about 4 minutes.

Stir in garlic and cook for another 30 seconds.
4. Add Pasta & Broth

Pour in 5 cups of chicken broth and a pinch of salt.

Bring to a simmer.

Add uncooked pasta, stir well, cover, and let simmer until pasta is al dente — about 15–25 minutes, stirring occasionally.

Add extra broth if needed.
5. Make it Creamy

Once pasta is cooked, pour in 2 cups heavy cream and stir gently.

Let it simmer for a few minutes to thicken.
6. Add Cheeses & Veggies

Lower heat to medium-low.

Stir in 1 cup parmesan and 1 cup mozzarella until melted.

Add back in the chicken, then stir in sun-dried tomatoes, broccoli, spinach, and pesto.
7. Bake to Perfection

Top the pasta with remaining 1 cup mozzarella and 1 cup parmesan.

Bake uncovered at 350°F for 15 minutes, then broil for 5 minutes until golden and bubbly.
8. Garnish & Serve

Top with fresh parsley and an extra sprinkle of parmesan if you like.

1 tbsp maple syrup (optional) handful of walnuts, chopped melted dark chocolate

- In a bowl, combine yogurt, diced banana, maple syrup and chopped walnuts.
- Spoon the mixture onto a parchment lined baking sheet.
- Freeze for at least one hour.

9. 10 Minutes Sweet Potato Toasts ✨
These have been in my breakfast rotation for many years now and they never disappoint! Cooking the sweet potatoes with the toaster method is so much easier and faster than baking! My favorite is the almond butter and banana, it’s so good with the sweetness of the sweet potato.
Here’s what you need:
1 sweet potato, washed
Toppings:
- fried egg with cottage cheese
- almond butter with banana, walnuts and cinnamon
- avocado with cottage cheese and lemon
- cottage cheese with honey and red pepper flakes
Wrap the sweet potato in a damp paper towel and microwave for 1-2 minutes to soften slightly. Remove the towel and cut lengthwise into 4-6 slices. Pop in the toaster until cooked through and slightly browned. Cook time depends on your toaster, be patient, mine usually takes at least 2 cooking cycles. Top with your favorite toppings, a sprinkle of sea salt and enjoy!

12. Mom's Healthy Rice Paper Dumplings✨
Dumpling Filling:
▪️1 lb. Ground Chicken (96% lean, not fat free)
▪️8 oz. Peeled and Deveined Shrimp, diced small
▪️1/2 Cup Red Cabbage, finely chopped
▪️1/2 Cup Carrot, finely chopped
▪️3 Scallions, sliced
▪️2 Tbsp Finely Chopped Fresh Ginger
▪️2 Garlic Cloves, finely chopped
▪️3 Tbsp Finely Chopped Cilantro
▪️2 Tbsp Soy Sauce
▪️2 Tbsp Sesame Oil
▪️1+1/2 tsp Kosher Salt
▪️1/2 tsp Pepper
▪️1 Egg
Sauce:
▪️1/4 Cup Warm Water
▪️1 Tbsp Fish Sauce
▪️1 Tbsp Sugar
▪️1 Tbsp Fresh Lime Juice
▪️1 Tbsp Finely Chopped Carrot
▪️1 Tbsp Finely Chopped Cilantro
Dumplings:
▪️20 Sheets Rice Paper
▪️3 Tbsp Avocado Oil, plus more if needed
1️⃣ In a large bowl, add all the ingredients for the dumpling filling and mix.
2️⃣ In a small glass measuring cup (or bowl), add all the ingredients for the sauce. Mix until the sugar dissolves and set aside.
3️⃣ Fill up a pie dish (or large bowl) with warm water and place two damp paper towels on a cutting board. Working one sheet at a time, soak the rice paper in water for 10-15 seconds (don't leave it in too long bc it will continue to soften as you work) and place it textured side down on the paper towel lined cutting board. Cut the rice paper in half down the middle and put 1 slightly heaping Tbsp of filling in the middle of each piece. Fold the sides over the filling to form a triangle shape, fold the top tip of the triangle over, then flip the dumpling and fold the excess rice paper over the filling on the other side. Place the folded dumplings on a paper towel lined sheet pan.
4️⃣ In a large nonstick skillet, heat 1 Tbsp avocado oil over medium heat. Working in batches, add the dumplings to the skillet, rubbing the bottoms in oil, leaving space in between each. Cook on the first side until golden brown on the bottoms (4-6 mins). Flip and cook until golden brown and and internal temp is 165F (2-4 mins). Repeat, adding 1 Tbsp of oil between each batch, until all the dumplings are cooked. The dumplings may cook faster as the skillet heats up, so check the bottoms frequently to monitor their progress.
5️⃣ Serve with sauce spooned on top and enjoy!

2 bananas
2 eggs
Splash of vanilla
1/3 cup of peanut butter
1/2 cup of oats
1 tsp of baking powder
Top off with chocolate chips (If you don’t mind the amount of chocolate , you can add them to the mix. I like to push some into the muffins so that my kids don’t eat much chocolate since they keep asking for these muffins all day)

1 Pound Ground Turkey
1/3 Cup Red Onion
1/4 Cup Breadcrumbs
1/3 Cup Cottage Cheese

1 Egg Seasonings:
Garlic Powder, Onion Powder,
Whole Foods 365 Peruvian Seasoning,
Cayenne, Salt, Pepper & Parsley
COOKING MEATBALLS:
1) Preheat Oven to 350
2) Sear Meatballs on all sides with avocado oil
3) Place meatballs into sheet pan into oven and cook until it’s reached internal temperature of 165 degrees (Turkey meatballs typically bake at 375°F–425°F for 15–20 minutes)
TZATIKI:
1/2 Cup Greek Yogurt
3 Cloves Garlic
Lemon Zest
1/2 Lemon Juice
1 Tbsp Olive Oil Seasonings:
Fresh Dill, Salt, Pepper
PICKLED RED ONIONS:
1/2 Red Onion
1/2 Cup White Wine Vinegar
1/4 Cup Red Wine Vinegar
1 Tbsp Sugar
PITA
1 Cup Bread Flour (if dough too sticky add more) + As needed for surface 1 Cup Plain Non-Fat Greek Yogurt
3 tsp baking powder
Seasonings: Garlic Powder & Salt (Parsley for topping)
COOKING PITA
1) Mix all ingredients together in a bowl
2) Flour surface and kneed until smooth (add flour when necessary)
3) Split into 4 equal balls and roll out dough
4) Cook on medium heat until golden brown and flip when it starts to bubble

* 1 pound of cheese-filled tortellini
* 3 tablespoons unsalted butter
* 2 tablespoons olive oil
* 1 small onion, finely chopped

* 2 tablespoons sun dried tomatoes
* 1 tablespoon tomato paste

- 5-6 Nori sheets

Comfort food at its finest: a crispy jacket potato loaded with creamy chicken Alfredo, tender broccoli, and Parmesan perfection. Dinner goals, achieved! 🥔🧄🥦
1. Cook the Chicken:
• Season a skin-on chicken breast with adobo seasoning and salt.
• Pan-sear in olive oil until the skin is crispy.
• Add butter and garlic, baste the chicken, then bake in the oven for 4 minutes at 180°C. Rest before slicing.
2. Make Alfredo Sauce:
• Remove most of the oil from the pan, leaving the garlic.
• Add double cream, adobo seasoning, parsley, black pepper, grated Parmesan, and garlic & herb mixed cheese. Stir until creamy, then set aside.
3. Bake the Jacket Potato:
• Pierce the potato, brush with olive oil, sprinkle with salt, and wrap in foil.
• Air-fry for 45 minutes at 180°C. Remove the foil and cook for another 10 minutes to crisp up.
4. Prepare Broccoli:
• Blanch the broccoli in boiling water, then drain.
5. Assemble:
• Cut the potato open in a cross, add garlic butter, and mash the inside.
• Sprinkle mixed cheese (optional), add sliced chicken breast, broccoli, and Alfredo sauce.
• Top with grated Parmesan and parsley. Serve hot!
