Let me be honest — I had zero motivation this Monday morning. I tried to drag myself to the gym but ended up back under the covers instead 😴
So, I gave myself some grace, caught a few extra zzz's, and made something that felt like a little morning hug: these cozy Chocolate Strawberry Baked Oats.
They’re warm, fudgy, protein-packed, and bursting with the sweetness of strawberries. Basically, dessert for breakfast... but balanced enough to fuel your day 💪
When to Enjoy
Perfect for breakfast, especially on slow mornings or when you need a gentle start. Also great as a sweet post-lunch treat!
Ingredients
For the baked oats:
- 50g instant oats (or blended oats)
- 30g vanilla soy protein powder
- ½ tsp baking powder
- 150ml water (or milk of choice – almond, oat, soy, etc.)
- ½ banana, mashed
Filling & Topping:
- Chocolate protein spread (or melted chocolate)
- A handful of fresh or frozen strawberries
Method
- Preheat your oven to 180°C (350°F).
- In a bowl, mix together oats, protein powder, and baking powder. Add in your liquid and mashed banana. Stir until smooth.
- Lightly grease a small baking dish or ramekin, pour in about ¾ of the mixture.
- Add a spoonful of chocolate spread in the center and cover with the remaining batter.
- Top with chopped strawberries for a juicy, slightly caramelized finish.
- Bake for 25 minutes or until the top is golden and firm.
- Let cool slightly & dig in with a big smile

Tips & Customizations
No protein powder? Add 1 tbsp cocoa powder + sweetener instead.
Vegan-friendly? Make sure to use plant-based protein, dairy-free milk, and spread.
Want it gooey? Bake for slightly less time and dig in while warm!
Extra indulgent? Add a drizzle of peanut butter or chocolate sauce on top ✨
