3. Pecan Caramel Candy Bars Recipe
They’re like a hybrid between a caramel shortbread chocolate bar and pecan pie, literally one of the most delicious things EVER! With their sweet buttery flavor, pecans are so perfect paired with maple, caramel and chocolate. The recipe makes a big batch and they freeze well too, perfect for food prepping so you can make sure you always have a stash of these delicious snacks to hand! Here’s how to make them
Ingredients:
SHORTBREAD BASE
• 250g (2 cups) flour
• 150g (⅔ cup) vegan butter, cubed
• 50g (¼ cup) light brown sugar
• ¼ tsp sea salt
CARAMEL PECAN FILLING
• 150g (⅔ cup) vegan butter, cubed
• 320g (1 cup) vegan condensed milk
• 4 tablespoons pure maple syrup
• 30g (2 ½ tablespoons) light brown sugar
• ½ tsp sea salt
• 200g (2 cups) fresh pecan halves
CHOCOLATE COATING
• 400g (2 ¼ cups) dairy-free chocolate
• 1 tablespoon coconut oil
• Sea salt, for garnish
Instructions
1. Preheat your oven to 175°C (350°F). Lightly grease a square or rectangular 9” pan with some oil, then line it with parchment paper.
2. In your food processor, combine all of the crust ingredients until they stick together to form a dough. Evenly press the dough into the base of the pan, smooth it with the back of a spoon and use a fork to prick the dough several times.
3. Bake for 15-20 minutes until slightly browned, then cool to room temperature.
4. Add the condensed milk, maple syrup, brown sugar, butter, and salt to a saucepan and melt over medium heat. Continue to heat whilst stirring. Place your candy thermometer in the caramel and heat until it reaches 120°C (248°F) or until the caramel is thick and pulls away from the edges (about 10-12 minutes).
5. Remove from the heat and stir in the fresh pecan halves. Pour the caramel pecan mixture over the shortbread base and allow it to reach room temperature before refrigerating for at least 3 hours (or overnight).
6. Cut into 16-20 bars and dip each bar into the chocolate. Place on a lined tray, sprinkle with sea salt and put them back into the fridge for 15 minutes to eat.
