1. In a blender, combine cottage cheese, honey, peppermint extract and spirulina until smooth.
2. Transfer to a glass container.

2. Mango Salsa and Fire-Roasted Blackened Salmon! 🐟🔥
Mango Salsa Recipe
Ingredients:
- 4 ripe mangos, peeled and diced
- 1/2 red bell pepper
- 1/4 cup red onion
- 1 small jalapeño
- 1/4 cup fresh cilantro
- Juice of 1 lime
- Salt, to taste
-3-4 Campari tomatoes (optional)
Instructions:
1. Prepare the Ingredients Use your fruit and vegetable chopper to dice the mangos and chop the red bell pepper, red onion, jalapeño, and cilantro.
2. Mix the Salsa In a mixing bowl, combine the diced mangos, chopped red bell pepper, onion, jalapeño, and cilantro. Gently toss to combine the ingredients.
3. Season and Serve. Squeeze the lime juice over the mixed ingredients and add salt to taste. Mix everything gently to distribute the flavors evenly.
4. Allow the salsa to sit for about 10 minutes to let the flavors meld together, or refrigerate it for an hour for an even better taste.

3. Burrata Tomato Salad - snack alert☺️🍅
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬
- 2 burrata, drained
- 350 g cherry tomatoes
- 1 pot fresh basil, leaves only
- 8 cloves garlic, peeled and crushed
- 3 tbsp olive oil
- 1/2 tsp dried basil
- 1 handful pine nuts
- Salt and pepper
- 1/2-1 baguette
𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬
1. Place the pine nuts in a dish that fits in your Airfryer and toast them for 4-5 minutes at 160 degrees. Or toast them on a fry pan.
2. Slice the baguette thinly, brush/spray them with a bit of oil, sprinkle with salt, and place them directly on the rack at the bottom of your Airfryer, possibly in two batches. Bake them for about 8 minutes at 180 degrees. Set the bread slices aside on a rack. You can also toast them on a pan.
3. Place the tomatoes in a dish that fits in your Airfryer (or oven)
4. Drizzle the oil and dried basil over the tomatoes, season with salt and pepper, and add the crushed garlic. You can crush the garlic with the blade of your knife, a cup, or similar.
5. Bake the tomatoes for about 8-10 minutes at 190 degrees, then let them rest for a couple of minutes outside the Airfryer.
In oven at 200 degrees for about 14 minutes.
6. Meanwhile, place the two burrata cheeses on a plate, open them up well, and sprinkle the fresh basil leaves over the entire plate.
7. Add the baked tomatoes and garlic, and pour the oil/juice from the baked tomatoes over the burrata cheeses.
8. Season with freshly ground pepper, sprinkle with pine nuts, and serve with the crispy bread slices.

4. Chicken Club Sandwiches🥪
Chicken marinade:
500 g Chicken breast fillets
Salt to taste
1 tsp each = Pepper, Chilli flakes, Dried Italian herbs, Garlic Powder, Paprika
Juice of 1 lemon
2 tsp mustard paste
2tsp Hot sauce
Sauce:
3-4 tbsp mayonnaise
3 tbsp ketchup
2 tbsp siracha
1 tbsp mustard sauce
1 tbsp sweet chilli sauce
1/2 tsp dried Italian herbs
1/2 tsp chilli flakes
Layering the sandwiches:
-On a slice of bread, spread sauce. Add a layer of boiled eggs and red onion slices. Place another bread slice.
-Spread sauce on 2nd layer of bread. Add chicken strips. Add lettuce and a slice of cheddar cheese. Add more sauce and layer with another slice of bread.
-Spread butter on the top layer. Toast the sandwich in a grill pan until it has nice grill marks.

Flavorful, healthy, one pan dinner that’s ready in under 30 minutes 🙌🏻 This skillet is packed with protein and is also perfect for meal prep!
Ingredients:
2 lbs ground beef
2 tbsp avocado oil
salt and pepper to season
1/2 medium-sized red onion, diced (or 2 tsp onion powder)
3 cloves of garlic, minced (or 1/3 tsp garlic powder)
3 tbsp taco seasoning
1 tsp salt
1/2 tsp pepper
3 tbsp tomato paste
15-20 oz of red salsa
15 oz can of black beans, drained and rinsed
1 1/2 cups corn (fresh or frozen)
1/2 cup fresh cilantro, chopped
juice of 1 lime
For topping: shaved iceberg lettuce, tortilla chips, chopped fresh cilantro, sliced avocado, your favorite taco sauce
Directions:
In a large skillet or dutch oven, heat avocado oil over medium heat. Add the ground beef and cook for about 5 minutes, breaking it up as you go into small pieces
Add the onion, garlic, taco seasoning, and salt and pepper to the skillet and cook for 5 to 7 minutes
Add the tomato paste, salsa, black beans, and corn, stirring to combine, and cook for 5 to 7 more minutes
Remove from heat and stir in 1/2 cup of chopped cilantro and the juice of 1 lime
Serve with shaved iceberg lettuce, crushed tortilla chips, more cilantro, avocado slices, and your favorite taco sauce

9. Parmigiana a ventaglio 🪭
Ingredients:
2 aubergines
550g tomato passata, rustic
2 cloves of garlic
Green onion stalks
Basil leaves
Olive oil
Salt, Pepper
60 g nduja
Chili flakes,optional
2 balls of mozzarella, 125 g each)
Parmesan, grated
6 tbsp semolina
Instructions:
Preheat your oven to 190°C (375°F) with fan on. Slice the aubergines lengthwise from the stem to the bottom at approximately 1 cm intervals. Gently press them down to spread a little then salt generously. For better dehydration, Let them drain for about 15 minutes, then pat dry, or you can place them directly into the oven if preferred.
Bake the aubergines for about 35 minutes or until done to preference.
Prepare the tomato sauce by heating some olive oil in a suitable pot and briefly sauté the garlic cloves and green onion stalks over medium heat.
Add the tomatoes and simmer until the aubergines are done, allowing the sauce to thicken.
Remove the aubergines from the oven and let them cool slightly, drizzle with olive oil, and coat both sides with semolina.
Sear them in a hot pan on both sides for about 2-3 minutes until golden brown, being careful not to burn them.
Insert mozzarella between the aubergine slices and return to the oven for an additional 10 minutes or until the cheese has slightly browned.
Once the tomato sauce has reduced, remove the garlic and green onion pieces, then add the nduja and basil. Season with salt and pepper, and if necessary, a teaspoon of sugar to balance the acidity.
To serve, plate the sauce, place the baked aubergine on top, and sprinkle with grated Parmesan. Garnish with additional basil leaves and optional chili flakes.

Ingredients
4 heaped tbsps greek yogurt
Half cucumber, grated
Juice 1/2 lemon
1 tbsp of chopped mint and dill
1 crushed garlic
Salt and black pepper
Roughly 2 tbsps olive oil
Make sure to squeeze out the water from the grated cucumber otherwise it’ll be watery. Mix all the ingredients together, taste and adjust to your liking.

1. 1.5- 2 pounds chicken thighs
2. Juice of 1 1/2 lime
3. 2 tablespoon honey

1. Cook some rice.
2. Mix the chicken marinade ingredients and set aside 1/4 cup if the marinade for basting the chicken .
3. Marinade the chicken thighs in listed ingredients.

6. Cook and sear the chicken in 1-2 tablespoons oh olive oil for 8-10 minutes . Cook undisturbed for first 2-3 minutes and then flip. Get a nice sear on the chicken.
7. Put chicken on a cutting board to rest. Brush on the marinade and chop into slices.
8. Serve chicken over the rice with a salad.

13. Mom’s Creamy Broccoli Pasta ✨
Ingredients:
▪️2 Tbsp Butter
▪️1/2 a Yellow Onion, diced small
▪️16 oz. Fresh Broccoli (crowns + stems), roughly chopped small
▪️3 Cloves Garlic, minced
▪️1+1/2 tsp Kosher Salt
▪️1/2 tsp Pepper
▪️2 Tbsp Flour
▪️2 Cups Milk (we use 2% but any will work)
▪️4 oz. Cream Cheese
▪️16 oz. Ditalini Pasta (or sub pasta of choice)
▪️1/4 Cup Grated Parmesan
▪️1/2 Cup Pasta Water
🌱Vegan Modification: Sub in olive oil for butter, unsweetened oat milk for milk, plant based cream cheese for cream cheese, and nutritional yeast for parmesan.
1️⃣ Bring a pot of generously salted water to a boil for the pasta.
2️⃣ Preheat a separate pot (or large pan) over medium heat and add the butter. Once the butter is melted add the onions and sauté for 2-3 mins until they are starting to become tender and translucent.
3️⃣ Add the broccoli, garlic, salt, and pepper and sauté for 3-4 more mins until broccoli is almost tender.
4️⃣ Add the flour and mix it in with the veggies. Cook for 1 min, then stir in the milk 1/2 cup at a time, mixing to fully incorporate it before adding more. Add the cream cheese and stir until it melts into the sauce, then turn off the heat until the pasta is ready.
5️⃣ Boil the pasta 2 mins less than package directions (reserve 1/2 cup pasta water) and transfer it into the sauce pan with a mesh skimmer (or drain in a colander and transfer it into the sauce pan).
6️⃣ Turn the heat on the sauce + pasta back to medium and add 1/4 cup pasta water. Mix the pasta with the sauce and stir in the grated parmesan. Cook for 2-3 more mins, stirring constantly, until the sauce thickens slightly and coats the pasta (and the pasta is your desired tenderness). Add more pasta water if needed to loosen up the sauce. Enjoy!

Ingredients:
- 1 large onion
- 2 large ripe tomatoes
- 4 to 5 spicy chilies (optional)
- 3 eggs
- olive oil

•Beef shanks 800 g
•Olive oil 30 g
•Butter 40 g
•Garlic 3 cloves
•Shallots 4-5 pcs
•Leek 1 root
•Carrot 150 g
•Parsnip(chirivia) 80 g
•Turnip 100 g
•Thyme sprigs 3-4 pieces
•Bay leaf 3 pcs
•Salt and pepper to taste
•Cognac 30 g
•Red dry wine 1 bottle
1. Brown the wagyu beef shanks in oil. Set them aside.
2. Make the braising liquid sautéing celery, carrots, onions, parsnip (chirivía) and turnip.
3. Return the meat back to the pan.
4. Add bay leaf, thyme and cognac. Set it on fire.
5. Add wine. Cook for about 2 hours. Test for doneness by poking the meat with a fork. The meat should be falling apart and tender. (You can add beef broth if desired)
6. Serve shanks over creamy polenta, mashed potatoes or egg noodles topped with the sauce from the pan and fresh parsley. Enjoy!

Raw Cake Ingredients:
2 cups almond flour
3/4 cup oat flour
zest of 2 lemons
juice from 2 lemons
1/2 cup raw honey (or pure maple syrup)
1 tsp vanilla
Glaze Ingredients:
1 cup unsweetened applesauce
3 tbsp pure maple syrup (or raw honey)
1/2 cup coconut oil, melted and cooled
1 tsp vanilla
juice from 1 lemon (optional)
1. Combine the raw cake ingredients in a food processor until the mixture sticks together.
2. Roll into balls and place on a parchment lined baking sheet. Refrigerate while you make the glaze.
3. Place all the glaze ingredients into a blender and combine until the mixture is smooth.
4. Coat the truffles with the glaze and place them back on the baking sheet.
5. Garnish with lemon zest.

27. CRISPY SMASHED POTATOES WITH LEMONY CHIVE SAUCE✨
These ultra crispy smashed potatoes with lemony chive sauce make the most epic side dish - there’s nothing quite like a warm potato with a crispy salty exterior and a pillowy inside. They taste like sour cream and onion chips 👀
Ingredients:
1 1/2 lbs small gold potatoes (size of a golf ball)
3-4 cloves garlic, smashed
1 lemon, halved
salt & pepper
olive oil for drizzling
Lemony Chive Yogurt Sauce:
1 cup unsweetened plain plant-based yogurt (or Greek if not dairy-free)
1 large lemon, zest and juice
1/2 cup chopped fresh chives
1 tablespoon olive oil
1 tablespoon maple syrup
1/2 teaspoon garlic powder
1/4 tsp salt
1/8 tsp pepper
Directions:
Place potatoes in a large saucepan and cover with about 1 inch of water
Squeeze the juice of your lemon into the water and place the lemon halves in pot as well
Add smashed garlic cloves to pot along with about 2 teaspoons of salt
Bring to a boil and cook for 20 minutes
While the potatoes are boiling, preheat the oven to 425
Drain the potatoes and then set the pot of potatoes back on the stove with the lid off (this will allow the potatoes to “dry” out a bit)
Line a large sheet pan with parchment paper and drizzle with olive oil
Add the potatoes to sheet pan and move around to coat in the olive oil
Take a glass or measure cup and “smash” the potatoes to about 1/2 inch thickness and season generously with salt and pepper

Taste and season with more salt and pepper
