2. STUFFED CHICKEN
🤌The crusty herbed exterior of this tender chicken is thanks to the initial pan-searing of the seasoned breast.
Ingredients:
-2 chicken breasts boneless
-1 tomato sliced thinly
-4 slices fresh mozzarella cheese or regular mozzarella slices
-10-15 fresh spinach leaves
-1 teaspoon dried oregano
-Salt and pepper to taste
Step 1: Preheat the oven and slice each chicken breast horizontally most of the way through the breast. Start with the thickest part first, being careful not to slice all the way through. You want to create a pocket. Season with salt and pepper.
Step 2: Place 2 slices of tomato, 2 slices of mozzarella cheese and of a few baby spinach leaves into each chicken breast pocket.
Step 3: Place 4 toothpicks into the open side of the chicken diagonally to keep the filling from falling out.
Step 4: Heat 2 teaspoons of olive oil over medium-high heat. Add the chicken and pan sear for 2 minutes on each side. (careful when flipping)
Step 5: After pan searing, each chicken breast in casserole dish. (if using cast iron pan, you can place it directly in the oven)
Step 6: Preheat oven to 400°F/204C
Step 7: Place the casserole dish in the preheated oven and cook for an additional 15 minutes, or until the chicken is cooked no longer pink in the middle.
☝️How do you keep chicken breast moist when cooked?
Make sure your chicken breast is well-seasoned before adding it to the pan. Cook each side evenly until brown. Once done, bake the chicken breast in a pre-heated oven until juices run clear. The crispy skin from the sear will help keep juices intact while baking cooks the insides through without drying them out.

You’ll need (for the salmon boats):
🐟 450g salmon
🥔 1 large potato
🧅 1 onion
🥄 2 tbsp mayonnaise
🥣 4 tbsp Greek yogurt or sour cream
🧄 Garlic, to taste

🧀 Hard cheese, grated
For the salad:
🌿 Arugula
🍊 Orange slices

How to make:
1️⃣ Form small parchment “boats.” Cut salmon into small cubes, slice the potato and onion thinly.
2️⃣ In a bowl, mix mayo, yogurt (or sour cream), garlic, salt, and pepper.
3️⃣ Layer salmon, onion, and potato into the boats, then spoon the sauce on top.
4️⃣ Bake at 180°C (350°F) for 30 minutes, sprinkle cheese, and bake for another 5 minutes until golden.

Ingredients:
5 oz fettuccine pasta (about 2 ½ cups cooked)
½ lb raw shrimp (peeled and deveined)
Season shrimp with: 1 tsp paprika, ½ tbsp garlic powder, ½ tbsp onion powder, salt & black pepper to taste
3 tbsp olive oil
3 tbsp butter
1 medium yellow onion, diced
4 garlic cloves, minced
½ tbsp paprika
1 tbsp Italian seasoning
½ tbsp red pepper flakes (adjust to taste)
Salt & black pepper, to taste
¾ cup heavy whipping cream (more if needed)
½ cup mozzarella cheese, shredded
¾ cup Parmesan cheese, freshly grated (plus more for topping)
½ cup reserved pasta water
Directions
- Cook the pasta: Boil fettuccine until al dente. Reserve ½ cup pasta water, then drain.
- In a skillet, heat olive oil over medium-high. Add seasoned shrimp and cook 2–3 minutes per side until pink. Remove and set aside.
- In the same pan, melt butter. Add onion and cook until translucent. Stir in garlic, paprika, Italian seasoning, red pepper flakes, salt, and pepper. Cook 1–2 minutes until fragrant.
- Pour in heavy cream and stir. Add mozzarella and Parmesan, mixing until melted and creamy. Stir in reserved pasta water and let the sauce thicken for 2–3 minutes.

* Frozen sea buckthorn – 300 g
* Peeled orange – 2 pcs

1 tsp salt, pepper, Italian seasoning, oregano, parsley, garlic & onion powder, crushed red pepper.
1. Add olive oil to medium heat pan, cook 1 diced onion until translucent.
2 add minced garlic
3. Add 1 lb mild Italian sausage.
4. Once cooked add seasonings & tomato paste.
5. Add chicken broth.
6. Once boiling, add gnocchi. Cook for 2-3 minutes.
7. Then turn down heat and add cream and grated Parmesan cheese
8. Add diced spinach to pot.
9. Let it simmer for 10 additional minutes and serve.

✨ Macros per portion: 514 kcals | 47g protein | 42g carbs | 19g fat
Ingredients
600g sweet potato
500g 5% lean beef mince
120g avocado
40g grated Red Leicester cheese
40g reduced fat mature cheddar
40ml sour cream
1 tsp paprika
Salsa (ingredients: tomatoes, coriander, red onion & lime juice)
Seasonings: smoked paprika, garlic powder, cumin, chili powder (to taste) OR use one packet of tacos seasoning for ease
Optional: fresh coriander, jalapeños, squeeze of lime
Method
1. Preheat oven to 200°C (fan). Slice sweet potatoes into thin slices, drizzle lightly with oil, season with salt + paprika, then bake for 20–25 mins until golden and crisp.
2. In a pan, fry the beef mince. Season with the taco seasoning. Cook until browned.
3. Once the potato’s are cooked, add the beef mince, then sprinkle over both cheeses. Place back in the oven for 5 mins until the cheese is melted.
4. Meanwhile make the salsa by mixing together tomatoes, red onion, coriander & lime juice.
5. Top the nachos with avocado, salsa and sour cream
6. Serve straight from the tray!

Ingredients:
🍆 2 large eggplants
🥩 300 g ground beef
🧅 1 onion, 1 green pepper, 1 red pepper
🧄 2 garlic cloves
🍅 1 tsp tomato paste, 1 tsp red pepper paste
🍅 1 tea glass grated tomato
🌿 A handful of parsley
🧂 Spices: paprika, cumin, salt, black pepper

For the sauce:
1 cup water, 2–3 tbsp olive oil, 1 tsp tomato paste, salt, pepper
How to make it:
1️⃣ Slice the eggplants into ½ cm rounds, soak in salted water 15 min, dry, and roast at 200°C (390°F) for 20 min.
2️⃣ Cook ground beef with onion, peppers, and garlic. Add tomato paste, red pepper paste, grated tomato, spices, and parsley.
3️⃣ Layer roasted eggplant + meat mixture (and cheese if you like) three times to form small towers.
4️⃣ Top with meat, cheese, and tomato slices.
5️⃣ Pour over the sauce and bake at 200°C (390°F) for 20–25 min.

Ingredients:
For the chicken
3-4 chicken thighs
1tbsp Gochujang paste
1tbsp Oyster sauce
1tsp dark soy sauce
For the broth:
1tbsp Shaoxing rice wine
Chopped corriander
1/2 onion
2 spring onions
1 bok Choi
1tsp ginger puree
2 cloves garlic
1 chilli (optional)
500ml chicken broth
2tsp fish sauce
2tsp soy sauce
150g jasmine rice
Recipe:
- Start by coating your chicken in the Gochujang, dark soy and oyster sauce. Then add to a lightly oiled pan and cook for 5-6 mins on each side then remove from the pan.
- Add your rice to a pan of salted water and cook as per instructions (usually 15 mins)
- In the same pan you cooked the chicken, deglaze with a splash of shaoxing rice wine, then add onion, spring onion, garlic, chilli and ginger. Cook for a few minutes. Add your chicken stock, soy sauce and fish sauce and cook to season the flavour. Add the bok Choi for the last few minutes. Taste and adjust seasoning if required. If it needs more salt, add more soy sauce and fish sauce, but be careful not to over do it!
- Once the rice is done, add to a bowl and ladle over the broth. Top with the chicken, Pak Choi, corriander and sliced spring onions. Enjoy!♥️

Ingredients:
• 500–600 g chicken
• 2–3 tbsp olive oil
• Paprika powder
• Pepper
• Salt
• Garlic powder
• 1 tbsp flour
▫️▫️▫️
• 150–200 g spinach
• 1 onion
• 3 cloves of garlic
• 15 mini tomatoes
• 250 ml light cream (Cremefine)
• 200 ml cream
• 4 tbsp Parmesan
• ½ tsp pepper
• ¼ chili
• 1 tsp sweet paprika powder
• 1 pinch nutmeg
• Salt (season to taste at the end)
Preparation:
Mix the chicken with olive oil and the spices, sprinkle with flour, mix well, and sear in a little olive oil for about 2 minutes on each side. Then remove from the pan. In the same pan, sauté the finely diced onions and garlic, then add the halved tomatoes and coarsely chopped spinach. Cook until the spinach reduces in volume. Stir in the cream, spices, and Parmesan, and let simmer over medium heat for about 3 minutes. Finally, return the chicken to the pan, cover with a lid, and let simmer over low heat for 5–6 minutes.
This goes perfectly with pasta or rice.

This dish is inspired by both Middle Eastern and Indian cuisine. I love the flavors of both, so I thought why not bring them together in one pot? It’s so flavorful, yet surprisingly easy!
Ingredients
1 lb beef chunks (stew meat or cubed beef)
2 cups basmati or long-grain rice (washed & drained)
1 large onion, chopped
2 small potatoes, diced
1 green bell pepper (or jalapeño), chopped
4 cloves garlic, minced
10 small Campari tomatoes (halved)
2 tbsp olive oil
2 ½ cups beef broth
½ cup water
Seasonings
Salt & black pepper, to taste
½ tbsp ground cumin
½ tbsp allspice
1 tsp paprika
1 tsp curry powder
1 tsp garlic powder
½ tbsp 7-spice blend
½ tbsp mixed spices (or extra allspice/cinnamon)
½ tbsp red pepper flakes (optional)
1 tbsp pomegranate molasses
1 bay leaf
Instructions
Heat oil, season beef, and brown (don’t fully cook). Remove.
Add tomatoes cut-side down, then onion, pepper, and garlic. Peel skins, mash into sauce.
Stir in all spices and cook 1 min.
Add potatoes, water, cover, and cook 5–7 min until slightly tender
Stir in rice and beef. Add broth, pomegranate molasses, and bay leaf.
Bring to boil, cover, and simmer 12–15 min until rice is done.
Rest 5–10 min, fluff, and serve.

27. LASAGNA SOUP
ingredients:
1 lb ground beef
1/2 yellow onion, diced
4 garlic cloves, minced
2 tbsp butter
1/2 box of lasagna noodles, broken
2 spoonfuls of tomato paste
1 jar of marinara sauce, 28 oz
1 box of beef broth, 32 oz
1/2 C heavy cream
1/4 c fresh parsley
Parmesan cheese, small handful
Mozzarella cheese, small handful
Fresh Basil
Salt
Pepper
Tony’s creole seasoning
Red pepper flakes
Paprika
Italian seasoning
Oregano
Black pepper
Adobo seasoning
Cream mixture:
Ricotta
Parmesan
Mozzarella
Parsley
Directions:
1. In a big pot, on medium- low heat, add in your butter. Sauté your onion until translucent & toss in your garlic. Once garlic is fragrant, add in your ground beef.
2. Season your ground beef & cook until browned. Add in your 2 tbsp of tomato paste. Mix with your beef with tomato paste & cook for 3-4 mins before adding in your marinara sauce.
3. Once marinara comes to a simmer, add in your beef broth. Bring heat to med-high. Once your meat sauce comes to boil add in your lasagna pieces. Cover & let it cook for 6-7 mins
4. Toss in your heavy cream, with Parmesan & mozzarella cheese. Follow that with a second round of the same seasonings (a little less than before). Mix before adding in your fresh parsley & fresh basil. Cover for another 5 mins, let it simmer on low.
5. For ricotta mixture: in a small bowl add 2 parts ricotta, 1 part mozzarella & Parmesan. Add in fresh basil. Mix.
6. Serve your lasagna soup with ricotta mixture, garnish with parsley & Parmesan
7. Enjoy :)
