This Fig & caramelized hot honey grilled cheese passes all the grilled cheese tests for me! Made with 2 different types of cheeses- Gruyere & Havarti & coated in a cinnamon sugar butter mixture.
It is a total treat for your tastebuds

For the caramelized onions:
Avocado oil
1 small red or white onion sliced
1 tbsp balsamic vinegar
pinch of salt

For the grilled cheese:
2 slices of sourdough bread or bread of choice
2 tbsp softened butter mixed with cinnamon & sugar
Fig jam
Sliced figs
Shredded Gruyere cheese about 1/2 cup
Sliced havarti cheese
Fresh thyme leaves
Flaky sea salt
Hot honey
Balsamic glaze

In a skillet on medium heat pour in the avocado oil about 2-3 tbsp. Put the onions in with a pinch of salt & turn to medium-low. You want the onions to cook low & slow here so they release their natural sugars.
Add a splash of water if the pan seems too try & stir every few minutes. Once the onions are soft about 10 minutes pour in 1 tbsp balsamic vinegar. Mix for a couple of min then turn off heat.

Preheat oven to 350 degrees. Butter opposite sides of bread then flip over to spread on the fig jam. Add the shredded cheese, caramelized onions, figs, thyme, sliced havarti, sea salt, hot honey & balsamic glaze. Carefully close the sandwich & transfer to a skillet on medium heat. Press bread down with the back of the pan & cook until golden then flip & cook the other side making sure the outer bread doesn’t burn. Transfer to the oven for 5 min to make sure it’s all cheesy. Slice in half & enjoy by itself or with your fave fall soup!

1/2 orange slices
2 stick cinnamon
2 star anise
1 inch ginger sliced
3 rosemary sticks
A little dash of Cayenne pepper (optional)
2 litter of hot water
Honey or maple to sweeten when your tea cools down (optional)

Let it steep for 5 min, then remove the lime and orange and the rest you can leave to steep longer. If you leave it for too long, the citrus in the tea will become really bitter. Add sweetner of your choice. Another option is to add the lime and oranges after the tea cools down instead of before.
